This large-size visual delight, with full-color photos of mouthwatering dishes, includes over 100 recipes that feature a range of flavors-many of which are delectably subtle, rather than searing hot. Or make Rogan Ghosht, a combination of cubed lamb, yogurt, mint, and almonds; a rich, hearty Calcutta Beef Curry; Aloo Sag, a potato and spinach dish; Vegetable Rolls with Quick Chutney; and many more delectable ideas to tempt your palate. 256 pages, 150 color illus., 9 1/2 x 11 1/4.

Generally excellent 4 out of 5 stars.
7 of 7 people found this review helpful.

I have tried a few recipes from this book (cauliflower, broccoli, yoghurt, rice & dal dishes) and so far they have been delicious, quick to make, and relatively original. (I have many indian cookbooks, they often repeat recipes from each other.) There is little information on timing, but it does not seem to matter. She is good at producing recipes which are easy, don't have too many ingredients & taste good.

Editorial Review:

Indian cuisine is one of the most popular forms of cooking in the world today but, as Monisha Bharadwaj shows, the myriad regional varieties of healthy and inspiring recipes of India have yet to be discovered by many Western kitchens. Encompassing the entire range of vegetarian Indian cooking, from the finest Gujarati thalis or choiciest tandoori-cooked foods in the north, to the steaming hot idlis and chutneys of the South, via everything from chapatis to sweets, this is an inexhaustible and indispensable guide. Whether you want a snack, a quick lunch or a lavish meal this book will bring a sense of adventure to your diet and your kitchen.

Editorial Review:

"What you've got to remember about us Bengalis," a good friend once told Simon Parkes, "is that we're only really interested in three things: educating our children, reading books, and food." Bengalis have a passion for good food--its authenticity, its freshness, its part in social occasions, and the pleasure of serving it at the table. The Calcutta Kitchen captures the essence of those pleasures through the evocative narrative of the BBC Food Programme's Simon Parkes, the recipes of renowned chef Udit Sarkhel, and the pictures of award-winning photographer Jason Lowe.

Calcuttans know and adore fish, vegetables, and desserts in particular. They have a curiosity about food that never fades, and so they have embraced influences from around the world--most notably the English, Armenians, Jews, Tibetans, Chinese, Burmese, and Portuguese. Calcutta, and this book, has a taste of each of these cuisines.

Until recently it was nigh-on impossible to taste Bengali cooking unless you were invited to a private home, yet this is some of the most sophisticated food in India. With its inexhaustible roll-call of fish and vegetables, its pungency derived from the widespread use of mustard (both seeds and oil) and its tempering with a blend of five spices known as panch phoron, it is an evolved yet accessible cuisine.

The Calcutta Kitchen brings you recipes from one of the best-known Bengali chefs, Udit Sarkhel, and snapshots of the fish ponds, markets, artisan food producers, restaurants, clubs, cooks, gourmet, and street foods that play a part in the city's rich culinary culture.

Why buy this book? 5 out of 5 stars.

1. It is a good cook book, with beautiful recipies that work. 2. The food is presented in context in which it is eaten in India. 3. This is like a travelogue of India through its food. So if you like India, travel, food, cooking or books about cooking food in different parts of India, then this is the book for you.

Recipes which are not same old ones 4 out of 5 stars.

This is a book that was given to me some years ago when I was in India. It is not just a cook book but it conveys a picture of India. The book is broken into sections based on India's main regions. Each chapter has magnificent photo's of those regions and a text which describes the cuisine.

Each region then has a series of recipes that are famous. Most Indian cookery books tend to show how to cook the sorts of things that you get in Indian restaurants. Chicken Tandoori, Rogan Josh and so forth. This book has recipes which I have never come across before and most of them are interesting and delightful. A lot of them use a limited range of spices and depend on the mixture of their ingredients to develop subtle and interesting flavors. One recipe that was a revelation was an eggplant (aubergine) dish which was cooked and served cold with a yogurt sauce.

I live with a vegetarian and one of the reasons I enjoy such cook books are the variety of vegetarian foods that they contain. This book is by no means devoted to vegetarian food but it contains many such recipes.

The recipes are in text form but they are easy to follow. If something unusual has to be done such as the preparation of tamarind, the author explains how to do it in a clear and simple way.

Some cook books are things that you have on the shelf simply to prepare food. This book is a little more and gives you a feel for the county which has provided the recipes.

excellent authentic recipes with nutritional information 5 out of 5 stars.
55 of 56 people found this review helpful.

As an indian I can tell you, these recipes are as close as you can get to authentic indian while staying low fat.

I must admit this cookbook sat on my shelf for a long time because I loved Mathu Jaffrey's time consuming and complexly spiced recipes if I was going to use a cookbook. The cooking we have always done at home used alot of specialty ingredients and took a lot of time, it seemed to me that simple low fat indian couldn't be any good.

BUT I WAS WRONG! The recipes in this book are EXCELLENT. Very close to authentic while using ingredients you can find almost anywhere and VERY HEALTHY. Imagine that!

The recipes in this book are low-fat, low cholesterol and low sodium while being very flavorful and fresh tasting. The nutritional lable at the end each recipe is very complete also. For example, for beef samosa's, she has 2 different ways of cooking them, fried or baked. Then she includes 2 nutrient analysis for each way of cooking it. VERY NICE!

Also each nutrient analysis has a breakdown for sodium with salt included and sodium content without AND a saturated fat versas total fat breakdown.

The last 40 pages have info on :

indian spices and their usages and flavor

American, British, Australian, and Metric conversion

oven temperture conversion : F versas Celcius

explaination of proteins, fats, carbs, and sodium Table of desirable weights for men and women

differences in cholesterol cooked and raw

balanced diet info

and a nutritional breakdown table of "common" foods although it includes items like lentils, bulgar and veal.

The only minus is that this book has diagrams (for somosa wrapping etc.) but no color pictures. :(

Overall I'd say this is a wonderful book for people interested in fitness or dieting and exotic foods! Not a single item in this book is swimming in fat, like most indian cookbooks are.

I would buy this book for cooking for myself daily and a Muthu Jaffrey's (high fat) cookbooks for cooking for special occassions and guests.

Defionately buy this book, it lives up to it name!

Another good cookbook low fat cookbook I would recomend is "Easy Exotic : A Model's Low-Fat Recipes from Around the World" mostly indian, some asian. Very good too!

Excellent for those who know Indian cooking techniques! 5 out of 5 stars.
11 of 11 people found this review helpful.

This cookbook is ideal for those who've watched their Indian mothers prepare meals but need some help in determining "exact measurements". The book does not describe technique very well, but after having seen my mother fix meals hundreds of times, I didn't need much instruction in technique. I needed help in ingredients and amounts. I modify the recipes in the book a little to more closely mimic my mother's cooking and have learned some new things along the way. I've found that many of the foods I grew up with in the cookbook turn out very well!

The index is a little difficult to sort through since various Indian foods have different names. Be patient!

Editorial Review:

In most people's minds, there's a lushness to the flavors of India: all that spiced curry sauces that smell like incense when they're cooking and thick, flavorful chutneys in an amazing variety of colors, tastes, and textures. Foulsham's series brings the many moods of Indian cuisine to European and American cooks. Recipes use ingredients you don't have to order from Bombay and utensils you already have in the kitchen.

Beautiful Cookbook 5 out of 5 stars.
6 of 6 people found this review helpful.

I'm a big fan of Bollywood films so when I found this cookbook at Costco [of all places!] I immediately picked it up and took a looksee through it. First off, this book is chock-full of beautiful full color, full page, mouthwatering photos of many recipes as well as photos and bios of the film stars who submitted them, which includes the likes of: Shah Rukh Khan, the Kapoors, the Roshans, the Bachchans, Suniel Shetty, Shilpa Shetty, Rahul Bose, Amitra Arora, Shabana Azmi, Preity Zinta, Saif Ali Khan, among many others.

The recipes are well laid-out and easy to follow and include alternate cooking methods [for instance if you don't own a tandoor]. There are recipes for vegetarians and non-vegetarians alike, from appies to desserts, from quite simple to complex but nothing I'd say out of the range of abilities for the average cook. So far I've tried Suniel Shetty's Kori Sukka and Kane Ghashi/Nogli, both of which are so spectacular [and easy to prepare!] that they've become two of my all-time favorite dishes! Many others sound equally mouthwatering like Shabana Azmi's Biryani, Preity Zinta's Butter Chicken, Shah Rukh Khan's Tandoor Chicken... my mouth waters at the thought...

Some recipes call for some rather exotic ingredients like kokum, curry leaves, asafoetida, but I live within 5 minutes of a couple of specialty food markets where I've fortunately been able to find everything I need. Even if you don't cook any of the recipes, this book is beautiful enough on its own to make a great coffee table book.

Editorial Review:

The chutzpah of Bollywood is a reflection of how we feel about food. There is a constant celebration, the mingling of colors and flavors, the near excess of emotive breathlessness. There is no better way to sample the high life of India than to see what the Bollywood royals eat and enjoy. Bulbul Mankani celebrates the sensuality and vibrancy of Bollywood by marrying it with the food of the stars.

Some new combinations and flavors 4 out of 5 stars.
8 of 8 people found this review helpful.

Positives: The recipes are very descriptively named, so one can
really get seduced into trying out a recipe! No extra-long list of ingredients.
She introduces common ingredients found in the american markets, that are not usually used in Indian cooking to create some interesting combinations.Ex: Brocolli and Red pepper raita,
Tuna burgers,Dill rice , Salmon in creamy sauce etc.

There is a section for microwave cooking.Lots of salads and veggie dishes that are totally new to indian food lovers are in here..

Drawback: Absolutely no pictures..so first time cooks and new Indian cooks, might not be happy.
It isn't fast cooking..but its cooking that's well worth the time. Preparing curry sauces beforehand is what makes her concept of cooking "fast" work.

However, I like to create a smaller version of her sauces and use it immediately. The madras curry sauce is great..makes your food look and taste like those served at the Indian restaurants..

Editorial Review:

Mridula Baljekar shows that creating delicious Indian dishes with fresh ingredients need not be time-consuming. All it takes to make her tasty and authentic meals is a little organization and a few simple steps. Enjoy both classic and contemporary dishes gathered from her many travels throughout India—recipes like Spinach and Potato Soup with Fresh Ginger, Chili Chicken with Coconut and Curry Leaves, Fish in Aromatic Yogurt Sauce, and Onion Raita with Roasted Peanuts. Ranging from soups to sweets, Real Fast Indian Food also includes a guide to ingredients and a menu planner. Mridula Baljekar is a leading authority on Indian cooking; among her many books are Curries: Fire and Spice, The Real Balti Cookbook, and The Complete Indian Cookbook.

Ahh...nothing like good south Indian food...machan! 5 out of 5 stars.
5 of 5 people found this review helpful.

Personally, I have never had the patience to look at a cook book and attempt to follow the recipes step-by-step. I review the first few pages and I'm totally intimated by the sheer lenght of each formula. However Vijji Varadarajan's book makes every recipe not only simple to follow but also very exciting to create. Each recipe is so quick and elegant that one is inspired to study and create more.
Worried about the quality of the food? Don't be. Follow the guidelines laid out by this maestro and you simply cannot go wrong. Bon Appetite!!!

Excellent, Unique, Authentic 5 out of 5 stars.

Festivals and food are core ingredients of culture. And this book is worth its weight in <> and is arguably one of a kind.

My wife recently got this book (with the other book by the same author.. do not buy the more expensive and outdated hardcover editions) and finds it to be very helpful. The cooking (and I am one of the prime beneficiaries) had improved perceptibly and has a lot of added variety. The author is very approachable by email, clarifies doubts (e.g., "cup" is equivalent to American teacup, types of onions, tomatoes to use) and offers suggestions for new recipes. It doesnt get better than that.

My wife also *highly* recommends the book on South Indian Veg Cuisine by the same author.

Editorial Review:

Festivals in India are an important aspect of the social religious and cultural life of its people. Samayal or cooking is rooted in family traditions. Food was always offered untasted to the Divine first. This energised the meal with sustenance and healing properties.
