Sahni's microwave magic creates real Indian food 5 out of 5 stars.
13 of 13 people found this review helpful.

Don't disdain this marvelous book. Julie Sahni teaches you how to cook Indian food in the microwave, with flair and flavor. In the process, you learn things about microwave cooking you never knew. The microwave really can make "real" food, and Julie Sahni shows you how. The recipes need the quantity of spices increased in some cases, but this book is an endless delight and resource. Wonderful for summer months when you crave the flavor of that luscious curry but want to beat the heat in the kitchen, or just for any time when speed and ease seem the way to go! I love this book. I own over 30 Indian cookbooks, but I return to this often.

"Moghul Microwave" is a wonderful book... 5 out of 5 stars.

This is the first time I've ever read a cook-book that actually gives you real step-by-step recipies that work really well. The directions are obvious, even for a initiate like myself, and at least 95% of the ingredients are the off-the-shelf variety. I also love the way Julie Sahni "narrates" her recipies, giving me just enough outside information to add some depth to the dish, and yet not so much as to detract from the recipies themselves. What else can I say except that my copy is used almost every weekend, and it's already dog-eared and well worn. I just hope she comes out with a follow-on at some point...

Editorial Review:

Does East Indian cuisine prepared in a microwave oven offer authentic taste? Julie Sahni, the foremost creator and teacher of Indian cooking outside India, shows how the microwave can be used to create Indian food easily--without compromising quality or taste. Features more than 200 recipes. 2-color illustrations throughout.

Editorial Review:

"I was nine years old when I first went to Kerala, my father's boyhood home, where the lush tip of India meets the Arabian Sea. I'd heard stories about this place, seen photographs, and even tasted the lively South Indian curries my father cooked in our suburban Boston home. Still, nothing prepared me for how extraordinarily exotic it would seem when I stepped off that Indian Airlines plane ...."

A colorful land of spices and coconut palms, the southern state of Kerala is home to some of the most vibrant and flavorful cooking in all of India. Virtually undiscovered by Americans, its distinctive cuisine is influenced as much by its abundance of fresh ingredients (including fish, lamb, coconut, ginger, green chilies, black pepper, tamarind, and curry leaves) as by its different religious groups (Hindu, Christian, and Muslim) and cultures that make up its population. Now acclaimed cookbook author Maya Kaimal offers a unique culinary journey to Kerala, sharing the authentic recipes passed down by her family and other Keralan cooks.

Vastly different from the familiar North Indian staples of tandoori chicken, fried breads, and thick sauces, the food of Kerala has a lively tropical spirit, revealed in dishes like Tamarind Shrimp, Vegetables in Fragrant Coconut Milk, Batter-Fried Bananas, and the ubiquitous Sourdough Pancakes known as dhosa. Kaimal offers more than one hundred of these flavorful recipes, each carefully adapted for the home kitchen. Chapters on getting started, stocking your pantry, and planning a complete South Indian meal

provide thoughtful explanations of ingredients, seasonings, and techniques, making it easy for home cooks to create the complex layers of flavor that characterize Keralan cuisine.

Enlivened by Kaimal's passion for her father's homeland, and by outstanding four-color photographs, Savoring the Spice Coast of India is more than simply a cookbook. It is a captivating taste of a culture and cuisine to which you will want to return again and again.

The most awesome curry book you will find 5 out of 5 stars.
13 of 14 people found this review helpful.

I've always been a fan of curries, but have never been able to cook a really good curry. I've had this book for two years now and can say that since using it I've never had a failure.

The recipes are very clearly laid out and easy to follow. The instructions and ingredients are sufficient without being over done. The book is extremely well illustrated with many bright and attractive photos of ingredients, cooking steps and finished meals.

As for the acid test. The food tastes and looks great. I am now asked to cook curries by friends and family, and have had several requests for recipes. This book is now my favorite cooking book, and I believe should be on the shelves of any would be curry cook.

I recommend it highly

Excellent dishes, easy to prepare -outstanding amateur chef 5 out of 5 stars.

The curry recipes in this book are simply exquisite. My favorite is the Tikka masala, which is a rich and creamy suace with a little bite. My fiance was absolutely blown away by it and asked me to cook it twice in the same week. If you have a food processor and a store near you, these recipes will all be easy to prepare. This is one of my two cooking bibles along with Thai Home Cooking by Robert Carmack. If you have any inclination of making Indian curries, and want to do so as good or better than a gourmet chef, this is the perfect book for you.

A Great Read, even for an Indian reader ! 4 out of 5 stars.
8 of 8 people found this review helpful.

You think you know India, but after reading Eating India, you realize how wonderfully rich, tasty, and complex is the "Khichdi" called India. The real melting pot through millenia that has absorbed the waves of Aryans, Huns, Mongols, Greeks, Mughals, Europeans, and many others into its ever changing but unique identity is explored here in this book through the medium of food. The book is more than just a food book. It offers a prismatic look at the people, history, geography, and culture of the various regions of India. I grew up in Gujarat, but after reading the book, my salivary glands are working overtime, and I cannot wait to visit Ahmedabad and check out Agashiye restaurant. For the gastronomically adventurous traveller, especially if she has the digestive immune system that can handle a few choice microbes, the pleasures of eating at a roadside "dhaba" is not to be missed.
A wonderful book for anyone who loves food, travel, and history. Desis and non-desis alike will find it stimulating and appetizing.

Editorial Review:

Though it’s primarily Punjabi food that’s become known as Indian food in the United States, India is as much an immigrant nation as America, and it has the vast range of cuisines to prove it. In Eating India, award-winning food writer and Bengali food expert Chitrita Banerji takes readers on a marvelous odyssey through a national cuisine formed by generations of arrivals, assimilations, and conquests. With each wave of newcomers—ancient Aryan tribes, Persians, Middle Eastern Jews, Mongols, Arabs, Europeans—have come new innovations in cooking, and new ways to apply India’s rich native spices, poppy seeds, saffron, and mustard to the vegetables, milks, grains, legumes, and fishes that are staples of the Indian kitchen. In this book, Calcutta native and longtime U.S. resident Banerji describes, in lush and mouthwatering prose, her travels through a land blessed with marvelous culinary variety and particularity.

very helpful travel guide 5 out of 5 stars.
5 of 5 people found this review helpful.

before going to india, i was only familiar with a few indian dishes. i purchased this book because i wanted to learn more about indian food so that i could fully enjoy the cusine on my trip. i found this book helpful in describing different foods, and helped me be less aprehensive in trying something i knew nothing about. this is a great guide for anyone traveling to india who would like to know more about what they are going to be eating. it's also a great guide for any non-traveler looking to expand their culinary experiences in their own city.

Great Guide to a great cuisine 5 out of 5 stars.

Yummy! A very detailed book with tips and insight into the colorful cuisine of India. A must if travelling to India. We are not aware of the vastness of the cuisine in India. There is so much to taste and smell besides Curries. If you're a food junkie, it is a must.

Editorial Review:

An essential addition to this successful series, this book is a culinary compass to the myriad taste sensations of India; it contains a comprehensive Hind dictionary of culinary terms which is complemented by glossaries in each regional section; close encounters with family life and festivities.

another sahni success 4 out of 5 stars.
23 of 23 people found this review helpful.

i have and use all of sahni's cookbooks. this one is particularly good in that it includes many recipes that are not quite as labor- and time-intensive as many indian recipes can be--there are dishes that can be made for dinner on a weekday, after work. there are also recipes that do not resemble those in other indian cookbooks i have.

since its a much smaller book than her others, it does not contain as much background information--it would be a good idea to have a 'basic' indian cookbook to refer to for information about spices, paneer, etc. but, if you already have a good, basic indian cookbook, you will enjoy this one for the added facets of indian cooking.

Editorial Review:

Indian Regional Classics dernystifies the tantalizing world of Indian cuisine, with clearly explained recipes suitable for cooks of all levels. Indian cooking need not be heavy and overly complex. Indeed, in Indian Regional Classics, you'll find light, but robustly flavored fare such as Curry-Scented Mushrooms and quick dishes such as Malabar Coconut Shrimp. And throughout the book you'll savor the classic recipes from each of India's diverse regions, from the tandoori chicken of the north to the curried stews of the south.

Yum! 4 out of 5 stars.
4 of 4 people found this review helpful.

I actually bought this book in Nepal after serving for 2 yrs there as a Peace Corps Volunteer. I knew I'd get a hankering for some home cooked Nepali specialties once I got home. I haven't made the majority of the recipes in it, but it was certainly worth the cost of the book for the ones I have made, especially the spicy fried pork cubes which I make quite often. Kasto meetho lagyo!

Pictures are not needed to improve this cookbook! 5 out of 5 stars.

I'm really writing this review in response to the previous. Nepali cooking is not about PRESENTATION---it is about TASTE! Nepali cooking, unlike so much American cuisine, sometimes looks unappealing until one takes their first bite, then wow!! If you really need you food to look attractive and 'just like the pictures' then this is not for you, stick with box mixes and Betty Crocker. If you are looking to make something different and special, then this edition is a dream! I cannot say enough good things about this book.

Try something new 4 out of 5 stars.

This is an excellent cookbook for people who want to use new techniques and recipes in their kitchen. Nepali food offers an interesting array of spice combinations and food preparation, including sun-drying and curing. The Pan-Fried Asparagus and Potatoes is an excellent vegetarian dish, as is the Sun-Dried Lentil and Vegetable Balls with Potatoes. The Marinated Lamb Kebobs are great for grilling; try the Gundruk soup if your culinary spirit is bold and borderless. This book is well worth its modest price tag, and I recommend it to my friends who like Indian and Asian cuisine.

Editorial Review:

First and only book on Nepali cuisine.
