I LOVE the cookbook "Chilis to Chutneys"! 5 out of 5 stars.
10 of 10 people found this review helpful.

So far I have made the Chicken Curry with Biryani Rice -- excellent, and the cardamom biscotti -- out of this world fantastic. Probably the most tasty and exciting biscotti I have ever tasted. It is true that this cookbook likes to mix Indian flavors with other cuisines in some of the recipes, but the results are no accident. I have tried other Indian cookbooks, but only this one seems to turn out first rate results. The Chicken Curry with Biryani Rice seems Indian enough to me. I brought it to work and an Indian co-worker said it seemed authentically Indian to her. So I feel I can vouch that some of the recipes must be true to Indian cooking, while others (biscotti) are creative adventures with Indian flavors!

Editorial Review:

A ginger-scented hamburger on the grill. Steaming pasta redolent of eggplant and fenugreek. Stir-fried garlic with the pungent aroma of chopped cilantro. In Chilis to Chutneys author Neelam Batra takes familiar American fare and reinterprets it using her Indian spice cupboard and cooking know-how. Try French Fries with Chaat Masala, Pizza Naan with Green cilantro Chutney and Grilled Seekh Kebab Rolls, or Basmati "Risotto" with Wild Mushrooms for new taste-tingling twists on old favorites.

She also shows how traditional Indian preparations can make the transition to the American table. Think of curry as nothing more than a kind of stew. Use piquant chutneys as you would salsas to serve on the side with fish or chicken. And introduce the taste of the tandooe oven to your next barbecue with Grilled Ginger and Lemon Chicken Drumsticks and Flame Roasted Corn on the Cob.

Two hundred recipes in all, Chilis to Chutneys will add a welcoming zing to your everyday cooking.

Fantastic Food 5 out of 5 stars.
27 of 27 people found this review helpful.

These recipes are simply excellent. There is some effort involved in the preparation of most dishes (lots and lots of dried spices), but the reward is worth it. There are many lovely pictures (oddly some of the dishes photographed cannot be found in the cookbook) and nice preambles. Food for vegetarians (chick peas and eggplant) and meat eaters (creamy chicken curries and spicy Goan pork). Lots of yogurt, coconut milk and fresh green chilis. I have yet to come across a bad dish (one exception, the chapati, although I made it too thick...my fault).

Great book 5 out of 5 stars.

This is a great Indian cookbook- the recipes are detailed and authentic, there is also a a good introduction about the history and traditions of Indian cooking, and an overview of the cuisines typical of different regions in India, including the influence of the British and other colonial powers on Indian cuisine. Recipes include favourites like butter chicken- highly recommended!, and various indian breads, chutneys, fried snacks, soups, and an assortment of vegetable/lentil, meat and seafood dishes. One thing I especially liked was the glossary of spices and the recipes for different spice mixes like garam masala, chaat masala and more. The recipes were taken from many different parts of India, such as dosai from the south, and Tandoori from the Punjab. Well illustrated, and overall, a great book.

Editorial Review:

India, the "Spicy Subcontinent" is the world's most varied nation, a potpourri of peoples, landscapes, religions, languages, and of course, foods. This exquisite recipe collection in full color with information on ingredients and techniques make it a perfect introduction.

Her meat masala can be used in so many different ways, the best part is different dishes taste different even after using the same masala... Her recipes are easy to follow and most importantly - Good for the Heart!! Highly Recommended

Editorial Review:

Not many people realize that one of the world’s greatest cuisines — Indian — is actually a result of overlapping cultural influences. This best-selling cookbook deliciously brings to life the resulting contributions of these different cultures by offering over 100 easy-to-follow recipes from India, Pakistan, Goa, Bangladesh, Sri Lanka, and East Africa. The book will also appeal to cooks demanding taste adventures that are heart-healthy: recipes are low-fat and low-salt and each recipe comes with a complete nutritional background. My favorite Southwest Indian Cookbook 5 out of 5 stars.
9 of 9 people found this review helpful.

This my favorite cookbook covering Pueblo and Navaho foods. Not only are the recipies delicious and authentic, but the many photographs of the people and the landscape of the southwest, along with their words, has produced a small but beautiful book that displays the recipies within the context of the land and cultures.

A fitting culinary tribute to Native American cuisine 5 out of 5 stars.

Marcia Keegan's Southwest Indian Cookbook wonderfully showcases Pueblo and Navajo recipes enhanced with beautiful photographic images and thematically appropriate quotes. From Potato and Tomato Cream Soup; Skillet Squash; and Taos Rabbit; to Pueblo Venison Stew; Indian Fry Bread; and Navajo Cake, the Southwest Indian Cookbook is a fitting culinary tribute to Native American cuisine and would grace any multicultural kitchen cookbook collection.

One of my favorites! 5 out of 5 stars.

Long before I ever ventured into the Southwest (I did, eventually, to live & work), I brought this little cookbook home to add to my collection. Over the years I cooked it ragged, then loaned it to a friend. It has never come home, so I am absolutely delighted to find a replacement.

This book is full of gorgeous photos and easy, tasty recipes for authentic Southwestern foods. You'll find good food and enjoyment here for years to come.

Editorial Review:

When Raji Jallepalli was a child growing up in India, she loved to sneak into the kitchen to carefully observe the cook and ask questions about whatever happened to be on the stove. Her parents discouraged such behavior--since Indian ladies did not cook. With a career in the kitchen unthinkable, Raji immersed herself in a career in microbiology. Years later, she visited France and fell in love with French food and wine. On first tasting the food she thought, "This is nice, but it could use some of the assertive flavors of my homeland as well as some lightening up."

Three important influences--her Indian upbringing, scientific background, and love of French cuisine--inform Raji's cooking and account for her incredible success as a chef, and a self-taught one at that. Her eponymous restaurant, Restaurant Raji in Memphis, Tennessee, was nominated for a James Beard Award in 1996 and 1997 and helped establish Raji as one of this country's hottest culinary stars. She has been called "a major player" by the New York Times, and her restaurant was dubbed "one of the most exciting in America" by Food & Wine. Raji defines her brand of fusion as "a rather quiet combining of vastly different cultures, philosophies, and cooking techniques." In her kitchen she retains the basic principles and balance of French cuisine while introducing the profound bouquets of Indian cooking. As star chef and Raji fan Charlie Trotter writes in the foreword, "Hers becomes one cuisine--not a melding of two. It is completely natural, there is nothing contrived about it."

All the recipes in Raji Cuisine come from Raji's restaurant but are adapted for the home kitchen. A full glossary of Indian spices appears, along with a primer on techniques and notes on choosing wine to accompany Raji's uniquely flavored fare.

Outstanding, easy-to-follow recipes, gorgeous four-color photographs, and Raj'i's own reflections on her incredible journey to stardom in America's foremost culinary circles--all combine to make Raji Cuisine a welcome and remarkable debut from an extraordinary talent.

Original and wonderful 5 out of 5 stars.
17 of 17 people found this review helpful.

If you want a book on Indian cuisine that is unlike any other, do not hesitate to get this book. It is a treasure. It earned an IACP award in 1990. Fascinating to read from cover to cover for its stories on the British Raj and full of receipes that are intriguing and delightful. These are not the same receipes that you will find in Madhur Jaffrey's books since they are derived from British influences on the traditional indian dishes, such as tea-time and weddings and club dinners. A must have for anyone who is fascinated with India and Indian cuisine.

A great overview of south indian cuisine 5 out of 5 stars.
6 of 6 people found this review helpful.

As a person brought up on South Indian cuisine, but now living in the West, I found this cookbook invaluable in reprising the tastes of my home, and introducing me to some new dishes that I had never tried before. It was clearly written and all the recipes I attempted were very delicious. It has cemented my belief that South Indian cuisine is the 'best kept secret' for the modern food connoisseur.

Beware of this book, the worst so-called South Indian book ever! 1 out of 5 stars.
5 of 6 people found this review helpful.

I can't believe that this book even got published. This just shows that anybody who claims know how to cook can publish a book. The editors, the publishers, for that matter the Author herself doesn't have any clue what Authentic means. I am from Madras. I come a family of fabulous people who cook great food and I am Chef. I love to collect books and I was flabbergasted to go through this book. All her so-called Tamil names are not even Tamil. Names like 'Rungaswamy Meen Kolomba', its supposed to be 'Rangaswamy Meen Kuzhambhu', its 'Thayir sadam' and not 'Thayar satham',.I shows that she is totally confused. I really pity the students who learn from her. The pictures in this books reveals the result of the recipes, utter nonsense. The end product is not supposed to look what she has depicted and that not authentic crispy Dosa or chappthi. She must have compiled it thinking that nobody is going to even question what she has written. For those people who say that they have tried and liked the recipes, unfortunately, they are not authentic recipes and it is not in any way authentic. Claiming that its Madras food and not one recipe has a mention about 'Curry leaves'. You can make authentic tasting South Indian dishes without Curry leaves. I am so frustrated that I bought this book and I hope my fellow members don't do the same mistake I did. Its a book I'll have for a collection called 'how not to write so-called authentic cook books'. Its a disgrace to South Indian cooks and the cuisine.

Editorial Review:

Describes the cuisine of Southern India and provides recipes for side dishes, main dishes, and appetizers.

Yum 5 out of 5 stars.
8 of 8 people found this review helpful.

This book contains the best recipe for Mulligatawny Soup, plus the Yogurt Rice has become one of my favorite foods. All the pages are nicely illustrated by Robert Budwig.
And it covers the basics: Soups, Appetizers and Snacks, Vegetables and Pulses, Fish and Shellfish, Poultry, Meat, Eggs and Cheese, Rice, Bread, Pickles, Chutneys and Raitas, Desserts and it comes with an index (some books don't and it can be annoying)

Good introduction to Indian cooking. 4 out of 5 stars.
7 of 7 people found this review helpful.

I got this book a year ago and had limited experience cooking Indian food. (Okay, none.) The recipies are quite easy to follow and work out well. There isn't a terrific variety, but by the time you notice that you're probably ready to move on to a more advanced book. One tip: prepare all your ingredients ahead of time, especially spices.

How I learned to cook 5 out of 5 stars.
5 of 5 people found this review helpful.

My mother for the life of me couldn't teach me how to cook Indian food. She couldn't give me exact amounts. This cookbook is awesome! A lot of the recipes are not the same old thing and she's evidently tested them out. I really recommend it.

Indian Cooking Made Easy! 5 out of 5 stars.
8 of 8 people found this review helpful.

I took two of Tahera's cooking classes 3 years ago. I am pleased that she's finally published her book. I was quite surprised to see it mentioned in a 2003 Cosmopolitan article about enhancing your sensuality!

The chicken bhiryana is the best chicken dish I've put into my mouth. I like it better than butter chicken. The vegetarian samosas don't last long on any table. In general, all the dishes are tasty, and most can be easily prepared for a week-day supper. This is a great collection of recipes for a beginner in Indian cooking.

Editorial Review:

Samosas, rotis, tandoori chicken, and biryani are just a sampling of the vast cuisine that India has developed. And although many Indian dishes have unique and complex flavouring, they need not be complicated to create in your own kitchen. This book written by two experienced instructors of Indian cuisine simplifies ingredients and traditional techniques. They have developed recipes that are easy for beginners to make, without sacrificing the rich taste that is the signature of great Indian food. Try some chai for an elegant afternoon tea or make some masala chicken served with a biryani, raita, and naan bread for a royal feast! Simply Indian also features a wide variety of meatless dishes for a complete vegetarian meal.
