I received this book as a gift, and I was quite excited to open it since I love Japanese food. However it was very disappointing. There is nothing particularly healthy about it. Many recipes unnecessarily use ingredients like mayonnaise, butter, and the like. And I don't find it that authentic either. There are other Japanese cookbooks and sites out there with much more authentic recipes that are just as easy to make. I get the feeling the author got the book deal just because she is married to the Benihana founder. (And really, how authentically Japanese is Benihana anyway? Not very.)

This is the only good vegetarian Japanese cookbook I have found. The author is a British woman who lived and worked in Japan for several years, and developed vegetarian recipes with the Japanese women she lived with. She is creative and successful in the way she modifies traditional Japanese recipes to fit into a vegetarian lifestyle. She incorporates personal stories and Japanese history into her recipes, making this book fascinating as well as useful!

Before I tried to make Sushi for the first time, I had imagined that it would be incredibly difficult. Guess what? It's not. This book is a good guide not only to help you make sushi but to learn to identify the various types of the Japanese treat that has been uniformly named sushi.

The author explains the basic method for preparing the rice, the equipment needed as well as the various types including Nigiri, Maki-Mono, Chirashi and more. I personally had bought a used copy of this book and couldn't have been happier after paying 3 bucks for this gem!

I am an American Father living in Japan with a Japanese wife and a 3 year old daughter who is starting pre-school. I love this book as it helps me prepare great healthy food for my daughter mirei's lunch (bento) box.

She writes among the best cookbooks for American Audiences. I like this book because it feature many of the more, "comfort food" type of dishes that one would have in Japan, like Curry Udon. Its also a very visually interesting book.

I have been looking for a book like this ever since my interest in sushi became deeper. Even though I've been eating sushi for many years now, my knowledge was vastly expanded by this book. I personally enjoyed seeing the nutrient content of the fish per piece and when the best season was to consume certain fish. Carl was also able to share little extras he learned in his search of sushi. For example, I didn't know that the wasabi we get is most likely not true wasabi or the proper etiquette one should have at the bar. I believe that as the name implies this is a truly gastronomic guide to the world of sushi.

I really like this book. The cooking instructions are simple, and most of these are family style cooking recipes, so they are not difficult to reproduce. However, I live near Asian markets, so I can buy precut blocks of fish for sushi. As a Chinese American, this book is in Chinese and English. Perfect to pass on to my daughter when her Chinese has improved. I highly recommend this book. People who are looking for more sophisticated cooking such as Kaiseki-ryori will NOT find it here.

Although I agree with the other reviewers in that this is indeed a beautifully photographed and organized book, (for which I give it the four stars), I wasn't aware until I purchased it that this is not a Japanese recipe book-its Western cuisine presented in an aesthetically Asian manner. However, it does give a good history of bento boxes and the recipes are simple and delicious. If you are looking for authentic Japanese bento recipes, I recommend _Japanese Meals on the Go: Bento Boxes_ by Naomi Kijima.
