I have been living in Japan for 3 years and we are about to move back to the U.S. One of my Japanese friends pulled out her copy of this book to give me some recipes. She actually bought it when she lived in the U.S. so she would have English language versions of recipes to give her American friends. She found this book to be very close to her mother's and grandmothers' way of cooking. The recipes are easy to follow and the illustrations of preparation techniques are very helpful even for someone without any prior knowledge of Japanese food preparation.

I bought this book from a Japanese bookstore in "Japan Town" in San Francisco on vacation. I am online now buying more for my friends. I compared this book with every other english language Japanese cookbooks in the store (and there were MANY). I found this one to be superior to the rest as it contained everything I would need to prepare meals. I should mention I have lived in Japan for 5 years and have a good feel for what is authentic. This book has allowed me to create some very nice meals at home approaching resturant quality of those found in Japan. I expecially like the pictures that show all the steps of the preparation including pictures of the ingredients. Also included is a section that shows how food is served (presentation on table).

Honestly, I don't see how you can go wrong buying this book. Its inexpensive and contains EVERY aspect you need to be sucessful: tools and utensils, knife skills, ingredients, recipies, and presentation.

Now I just wish I could find similar books for Greek, Italian, Thai, and so on...

Excruciatingly chic to the highest degree, the Nobu restaurants are among the hardest to get into on three continents. They are the personal inspiration of a Japanese sushi-trained chef, Nobuyuki Matsuhisa, who, with unusual experiences in Peru, Argentina, and Alaska behind him, was fortunate enough to open an establishment in Los Angeles into which part-time restaurant entrepreneur and actor Robert De Niro happened to wander. During those years on the Pacific coast, Nobu began to experiment, combining the pure, fresh, uncomplicated flavors of sushi with the Western flavors of garlic, chili, and coriander. As he attracted a more upscale clientele, he complemented those flavors with luxury ingredients such as truffles and caviar. Nobu: The Cookbook represents the current state of play. Exquisite, expensive, and breathtakingly stylish, this food is designed to impress with its artful simplicity. Perhaps the two most representative dishes are the most celebrated: the New-Style Sushi, in which raw fish is given a sizzling dressing of hot oil; and the beautiful Black Cod with Miso, marinated in sake, mirin, and miso for three days then grilled and baked and served with a single ikebana-like spear of pickled juvenile ginger. Altogether a beautiful production.

There are aspects of this cooking, however, that for all its glamour may require the turning of a blind eye. How many home cooks will be prepared to disembowel a live octopus? And eyebrows may be raised among environmentalists at Nobu's championing of Arctic sea bass, a fish known before its cosmetic rechristening a few years ago as Patagonian tooth fish and that is likely to become extinct within three years through illegal overfishing in the southern oceans. Excellent book for beginners who want to know more about making Sushi. Nicely laid out with step-by-step instructions and lots of beautiful photos to complement the text. Easy to read and follow - I read it in a couple hours. May be too "simple" for those who've already made sushi.

If you need recipes and cooking guides this is NOT your book. There are many other books with recipes (Bento Boxes: Japanese Meals on the Go, and Manga University Culinary Institute's: Manga Cookbook both come to mind), and many groups (like eat_my_bento on livejournal) just waiting to help you figure out how to make bento. What this book offers is inspiration; Stunning, unbelievable, "how did they DO that" inspiration.

Focusing on "character bento" this book is full of pictures of theme bento boxes. From the simple and "easy to picture myself doing" box depicting three little pigs (the pigs are rice balls with ham ears and noses)to the Disney Cinderella who is depicted with enough realism (in ham and cheese and spices) to look like a licensed image!

there are NO instructions given on how to duplicate these bento Boxes. the only "instructions" are for the two line drawings in the back by the author suggesting a "Pac Man" and starry sky scene bento box. The ingredient listing given for each box is helpful, but doesn't tell you what is being used in which area of the design. This book is mostly useful for inspiring you to try something a bit beyond the "hot dog octopus" of the typical bento box.

Harumi has been compared to Martha Stewart. That's wrong. Harumi is way cooler and way nicer.

This is her first book in English--she's BIG in Japan....superb advice on Japanese cooking techniques---recipes are easy to follow--excellent photos.

Nobu Now, by food master and restaurateur Nobuyuki Matsuhisa, is a challenging book for the cook in this sense: Can you even begin to find these ingredients? And, having found the ingredients, can you decipher the code-written recipes well enough to come anywhere near the picture-perfect results tantalizing you on page after page? You just might be better off booking a reservation into one of the dozen Nobu restaurants scattered about the world and let seasoned professionals ease you in to a world of food that descends from the heart of Japanese fairy tales.

If this isn't a cookbook but a food book come to us mere mortals from the absolute heights of food porn, well, what a delicious book it is. Why take home a copy of the menu from Nobu when you can take home the book and page through so many glorious and exotic food possibilities, Hamo and Foie Gras with Japanese Truffle Sauce, say. "I am proud," Nobu Matsuhisa writes, "that Nobu cuisine remains, beyond any doubt, quintessentially Japanese... as I have explored ingredients in those other countrues, and as I have learnt from their cuisine... this style has acquired a greater simplicity, and has come to display a kind of serenity." Wagamama is a Japanese-like restaurant I frequented while living in London. After going through withdrawals when I returned to California, I came across this cookbook. It is so good that you would not believe my review if I really, honestly wrote of how much I enjoy their food. The noodle dishes are best! For those of you who have not tried the food at Wagamama, think of simple and fresh ingredients tossed together in non-traditional ways. The recipes in this book are pretty easy and my limited skills in the kitchen are enough to make great meals.

I've never done Japanese cooking before, but with this book I can. I have made four recipies from this book, and they have all turned out spectacularly well -- the sort of thing I thought was only available in a Japanese restaurant. Some of them have needed special ingredients, which is easy for me because I live in NY where there are Japanese groceries, but some need nothing more exotic than soy sauce. Terrific book: I hope they write more.

I tend to be highly skeptical about this kind of book, mainly because they usually present some sort of idealized fantasy of a health-conscious and simple Japan where everyone is deeply in tune with the rhythms of nature, whilst I know from many years of experience living in Japan that your average Japanese person is much more likely to sit down to a steaming pile of fried chicken, reconstituted ramen and a few cans of beer rather than ocean-harvested kombu and mountain vegetables gently simmered followed by a sweet cup of amazake. However I was pleasantly surprised when the authors stated up front that "Japanese people don't eat this way", and acknowledged that many of these foods will be more readily available in an American health food store than in a Japanese supermarket.

With that fresh start, I was able to enjoy "Japanese Foods that Heal" for what it is, a brilliant guide to eighteen traditional Japanese ingredients that are powerhouses of health, with medicinal properties that strengthen the human body and provide resources and defenses against all manner of illnesses. Each ingredient is considered in-depth, talking about the traditional harvesting/creation methods, the known medicinal properties of that ingredient, and the traditional healing powers associated with it. The authors are careful to state what is a proven effect of the food and what is only a "potential" effect. Some of the foods, such as miso and green tea, are quite familiar and well-known for their health value. Others, such as soy sauce and the sweetener mirin, were more of a surprise, as I had not thought of them as having any particular value other than as a flavoring agent. Some of the ingredients I had never heard of, such as seitan and mizu ame, which the author admits you would need to either make yourself or find at a specialized store.

While there are recipes for each ingredient included, "Japaneses Foods that Heal" cannot really be considered a cookbook. About five or six simple recipes with no photographs are all you get for each item, and the bulk of the text is educating you about the food itself. While the recipes are easy to make and delicious, I was more intrigued by the concept put forward of using these foods in regular recipes replacing items of little nutritional value, such as refined salt or white sugar, with more nutritious substitutes like mirin or the salty picked-plum umeboshi. Definitely something to give a try.

The only drawback to this book is that the authors reinforce the stereotype that eating healthy means eating expensive. When they talk about soy sauce, they are quick to distinguish between the mass-produced condiment available anywhere, and the healthy, hand-processed variety only made in few places and only available at specialty stores for quite a bit more than you would expect to pay. The cheap stuff, they say, isn't worth your time. The same story is told for almost every food, with a lengthy description of its traditional, healthy processing method followed by a disclaimer saying how the majority is now chemically produced in factories, and you will have to search out and be prepared to pay for the good stuff.

This book also features a pronunciation guide, which is great for ordering from restaurants or shops, and a guide to composing meals.

For those people who love Japanese cuisine but don't know much about the Japanese language, this pocket size dictionary is a wonderful tool. It focuses on most terms and words used in Japanese cuisine including drinks, entrees, ingredients, food terms, even some cooking and food container names. The dictionary allows readers easy to look up information. It is arranged in three sections: Japanese-English, English-Japanese, and Appendices with some interesting topics in Japanese cuisine. Each entry in the Japanese-English section provides the Japanese term in Roman script, Japanese character, as well as Kanji, along with the English definition details and possibly some additional culture notes. Truly, this dictionary is a MUST!

At last, what every Westerner in a Japanese restaurant or market needs: the first truly comprehensive dictionary of Japanese food and ingredients. Standard dictionaries can often mislead us--with akebia for akebi, sea cucumber for namako, plum for ume. Hosking's dictionary includes not only dishes and ingredients, everything from the delicate mitsuba leaf to the dreadful okoze fish: colorful appendices disclose such aspects of Japanese culture as the making of miso to the tea ceremony and the influence of vegetarianism.
