Straightforward approach to Thai cuisine 4 out of 5 stars.

This is one of the first Thai cookbooks I purchased. Since then I have purchased several others, but I keep coming back to this one as my starting point for creating an Asian menu. As most other reviewers have stated, the directions are clear and the ingredient list is manageable. Young offers some helpful tips along the way to make it easier.

Some of the humor sprinkled throughout the book is an unexpected surprise. I love the spicy chile sauce recipe where the last step is "call the fire department". There could be more photos in my opinion, but that is not a major issue.

All in all a good investment is you want to learn how to cook Thai food. And if you are like me, living in an area that is devoid of closeby Thai restaurants, it is a necessity for those of us who need our Thai "fix" on a regular basis.

Fantastic and do-able Thai 5 out of 5 stars.

First off, let me say that I am a "foodie". I search out prime ingredients. I fuss over my equipment like a mother hen. I read cookbooks in the bathtub.... You get the idea.

"Complete Thai Cooking" is a great cookbook with the following key attributes:
- dishes which are seriously tasty and "feel" Thai (see below)
- clear instuctions
- non-complicated prep work
- findable ingredients, with helpful substitutions
- excellent Thai spice/herb overview

I have the specific need of cooking Thai food in a location where I have limited ingredients and time. At the same time, I am unwilling to spend time cooking anything where the tastes are watered down, and the dishes uninspiring.

I have not been disappointed by anything I have made from the book.

I must admit that I am not qualified to speak about the authenticity/thru-Thai of the recipes. I do know that they taste wonderful, and I'd be happy to pay for them at a Thai resturant.

Purchased this book with high hopes based on other reviews. I was very disappointed in the fact that there are NO PICTURES at all. I am a visual person, and enjoy seeing pictures of dishes; especially ones that can be a bit complex. The substitutions of Thai ingredients completely change the dish. Ginger is not the same flavor as Galangal....I could go on and on. The authentic ingredients are not too difficult to find these days. You can order online or just go to a specialty Market. It IS worth the trip to get the right stuff to cook these dishes with. If you like more authentic books with pictures, pass on this one. Try templeofthai.com for a great website and supplier.

I bought this for my husband, an inspired cook, after returning from a year of living in Bangkok where we ate wonderful street food every day. We have one of Vatch's older cookbooks and turn to it again and again when we want to make Thai food that tastes like real Thai food and not the overly saucey, overly sweet stuff that is sold in most Thai restaurants in the U.S. This cookbook has been great! We've already made a number of the dishes, including kao mon gai (chicken and rice) and guawaydiow (street noodles). The flavors are authentic and Vatch gives a wonderful sense of what it is like to be there. This book is particularly good for those that miss the regular, everyday, and oh so delicious food that rarely appears in standard Thai cookbooks, but that is regular lunch or on the go fare in Thailand. Highly recommended.

I am Balinese, have a restaurant and love food. I especially love Thai food.

The recipes in this book are excellent and have obviously all been tested by the author. Follow them and you will not be disappointed.

The presentation is clear at all times and the photographs are superb.

Partcularly helpful are a couple of pages on which wines best accompany Thai food - and they are not those that you would immediately think of. The explanations are interesting and illuminating.

I would recommend this book to restaurant owners, as well as people cooking at home for a few friends.

Not only is this book beautiful to look at, the recipes produce the most delicious (and authentic tasting) food. The simple recipes are easy enough even for people who aren't that confident in the kitchen (like my spouse); the fancier ones are perfect for dinner parties. Highly recommended!

Ms. Hutton offers reliable, clear recipes in a beautiful book, with clear advice as to ingredients, combinations, and cooking techniques. Lush photographs make everything look scrumptious. Good design keeps one recipe together on one page. I have had very good results with the three recipes I have tried. I bought the hardback because I expect to be using this book often, and appreciate the author's identification of recipes that require extra time and effort--a whole chapter. Another approach I appreciate is a good use of English that is not too British, not too American--but comprehensible to both, I hope. I am an American cook but sometimes use metric measures and having both is helpful.

Great Recipes - Little Background 4 out of 5 stars.

This book would be an excellent addition to the library of an intermediate to advanced Thai chef. Keo's Thai Cuisine is an wonderful resource and contains many excellent recipes. However, it's main draw back is that it provides little cultural context for these recipes. Thus, the book is more or less a "recipe catalog" which would make it difficult for a beginner to get this book and "run with it." I know from experience. This was the first book I bought dealing with Thai cooking. I selected Keo's Thai Cuisine because it was physically very attractive (lots of beautiful color photographs are included) and because it contained many of the recipes I was interested in making. Previously, I had extensive background in cooking Japanese and Chinese cuisine, and I expected that it would be very easy for me to learn Thai. However, although I was successfully able to copy some of the easier recipes, I found myself hard pressed to make some of the more advanced recipes. The problem was that I was unfamiliar with many of the ingredients. Although a short (5 page) glossary is included that lists most Thai ingredients, many of the ingredients go by multiple names (which were not included) which made it difficult for me to find the supplies I needed. After I had read additional books and had about 3 months experience cooking basic Thai foods, I had the background necessary to make the most of the recipes in Keo's. Now Keo's is one of my favorite cookbooks.

Overall, the book contains 96 total recipes, 51 of which are entree-like, all of which are delicious. Color photographs are included for most dishes, although some are somewhat stylized. Although all of the recipes I have tried have been excellent, I have had a very hard time making my dishes look like the photographs. This is a minor point (because they taste great), but I usually don't have this trouble with other cookbooks, and it has always left me wondering if I'm doing things "right," or if the photographs were made using a different recipe.

Ketchup in Pad Thai??? 3 out of 5 stars.

I've had this book for years and although there's a lot that's good about it (and the recipes are tasty) this book has a pretty typical problem: it was written in 1981. Most experienced cooks know that cookbooks from this time period suffered from at least one of two problems: 1 (and this is not this book's problem) the confusion that oleo or veggie oil is butter or 2 (and this is this book's problem) a general lack of availability of authentic ingredients which leads to ridiculous substitutions which just don't quite work. No matter how many great stories JB tells, she still substitutes ketchup for tamarind paste and as much as I love my Pittsburgher Heinz 57 Lovin' soul, ketchup ain't tamarind.

Otherwise, not a bad cookbook, which I do reference often, if just to read JB's stories.

Interesting information and recipes, but format needs work. 3 out of 5 stars.

Recipes would be more user-friendly if formatted to make it possible to, at a glance, peruse the steps to follow, rather than have to read through the paragraphs and try to separate out the "to do" information. We like recipes to appear on one page, if possible, or at least to lay out so that ingredients and at least most of the preparation steps appear together.

Recipes could be simplified by using--or at least pointing out-- possible shortcuts making use of products available through Thai grocers. This cookbook would make Thai cooking more accessible if it informed users/cooks that these products are an option that in many cases, could simplify the recipes.
