Refinred Thai Cuisine 5 out of 5 stars.
15 of 17 people found this review helpful.

A Magnificent Book from a Refined Establishment The Brussels based Blue Elephant which now includes 7 international branches and is still growing did a magnificent job with this cookbook as always under the guiding eye of its original founder Mr. Karl Steppe.

Exotic recipes include Green, Red and Yellow curry dishes for beef, chicken, lamb, and vegetarian courses. This in addition to delightful and sophisticated trademarks such as the Chicken Souffle, the Tom Yum khung prawn soup, Seafood Cassoulet, the Tod Man Pla fish cakes, crab claws, pad thai noodles, several varieities of stir fry rice, the restaurants star Jasmine Cake dessert, coconut sorbet, and bananna cake.

If you are ever in Beirut, Brussels, Dubai, Copenhagen, Paris, London, Lyon or New Delhi don't pass up the chance to visit the incredible experience of dining at this top notch sophisticated establishment. From the moment you enter a Blue Elephant you will be dazzled by the exotic decor.

Editorial Review:

With branches in Paris, Brussels, Copenhagen, and London, The Blue Elephant group are among the most successful Thai restaurants in the world. Serving Royal Thai Cuisine—a lighter, more refined version of traditional Thai cooking—the restaurants pride themselves on the authenticity of their menus. Their dedication and expertise is evident in such superb dishes as "Mud-Cha Chom Tarn" (steamed rainbow trout with lemon grass, tomatoes, and basil) and vegetarian specialties like "Thod Man Kao Phod" (sweet corn cakes). For all their sophistication, the recipes produce dishes of exquisite lightness that are surprisingly easy to prepare. This splendid cookbook is complete with 150 recipes, information on ingredients, and abundant color photos that capture the unique freshness and delicacy of Royal Thai Cuisine.

A beautifully inspiring book! 5 out of 5 stars.
8 of 8 people found this review helpful.

As a Thai Massage Practioner I have found "A Thai Herbal" to be an excellent addition to my library & my practice. This book is perfect for people with any level of knowledge in herbology, from basic to advanced. It looks at Traditional Thai Healing systems from the holistic standpoint, discussing not only the Materia Medica of Thai Herbs but also the Thai traditions of use for them. Pierce guides the reader on a journey of using Thai herbs thru diet, massage, herbal compresses and bodycare/household products that ends with the reader feeling they have really been taught from a traditional viewpoint. It also contains a very helpful resource section for those wanting to learn more about these healing plants.

Ancient Traditions Brought Alive 5 out of 5 stars.

I spend my weekends in the Thai countryside at a place called Kung Wiman and am amazed at the local knowledge about Thai herbs which they use in their everyday lives. My husband, who is Thai, taught me quite a lot, but it's been difficult because he only knew the Thai names for plants and herbs. So C. Pierce Salguero's book has been a huge help, as it gave names in Thai as well as common and Latin names along with explanations and context. It has helped me to identify plants and their uses. I am trying them out for myself and have had a good experience so far. By the way many of these herbs are now available in other countries and there are also parallels with traditions such as Ayurveda and Chinese. My only small criticism is that I would like to see the names written in the Thai script as well. I recently bought another of his books on spiritual healing which is also very good. These ancient healing techniques are unique and very much alive today and it is fantastic that C. Pierce Salguero is introducing them to a wider audience.

Editorial Review:

This practical guide to the traditional herbalism of Thailand contains an overview of the history, theory, and spirituality of traditional Thai medicine, with a focus on the application to modern Western life.

Fantastic book! 5 out of 5 stars.
9 of 11 people found this review helpful.

Not only is this book beautiful to look at, the recipes produce the most delicious (and authentic tasting) food. The simple recipes are easy enough even for people who aren't that confident in the kitchen (like my spouse); the fancier ones are perfect for dinner parties. Highly recommended!

Reliable and handsome 5 out of 5 stars.

Ms. Hutton offers reliable, clear recipes in a beautiful book, with clear advice as to ingredients, combinations, and cooking techniques. Lush photographs make everything look scrumptious. Good design keeps one recipe together on one page. I have had very good results with the three recipes I have tried. I bought the hardback because I expect to be using this book often, and appreciate the author's identification of recipes that require extra time and effort--a whole chapter. Another approach I appreciate is a good use of English that is not too British, not too American--but comprehensible to both, I hope. I am an American cook but sometimes use metric measures and having both is helpful.

Editorial Review:

From roadside to restaurant, Green Mangoes and Lemon Grass presents a mouthwatering culinary tour of Southeast Asia's most scrumptious food. Enjoy an abundance of different dishes from Southeast Asia's rich and varied cuisine, such as Singapore's fascinating cosmopolitan offerings, Thailand's sinfully spicy dishes or Vietnam's refreshingly healthy recipes.

Featuring expertly-written text recipes from Wendy Hutton, one of the stars of Asian cuisine, Green Mangoes and Lemon Grass will help you whip up an Asian festival of food in your very own kitchen!

Editorial Review:

Americans love Thai food. Among the best cookbooks exploring this rich, tantalizing cuisine is chef-restaurateur Su-Mei Yu's Cracking the Coconut. Insisting that there can be no true Thai cooking without homemade "core" preparations (such as various chili pastes), Yu includes precise, accessible recipes for these and other essential ingredients while outlining fundamental techniques in vivid detail. Readers learn the proper hand motions for cracking a coconut, how to wrap ingredients in banana leaves, and how to work a mortar and pestle, the central Thai-kitchen implement. The book's 175 recipes are divided between chapters devoted to essential ingredients or dishes. The chapter on Thai curry ("the signature dish") explores the basics of preparing this exciting fare and includes such delicious recipes as Red Curry with Roasted Pork and Green Banana and Sweet Green Curry with Meatballs. A chapter called "The Secret of Thai Salads" offers recipes for a small repertoire of essential dressings and such tempting recipes as Apricot, Shrimp, and Pork Salad and a salad-feast called, simply, Lamb and Roast Duck. Yu provides cultural notes and cooking lore throughout the book, often drawing from her recipe-hunting travels abroad. It's hard to imagine a better start for anyone wishing to "cook Thai" than this fully illustrated book, which perfectly balances recipes and instruction to make it an innovative standout. --Arthur Boehm

Beautiful produced Thai cookbook 5 out of 5 stars.
4 of 4 people found this review helpful.

This lovely book is artfully produced, with 2-3 attractive photographs per recipe, both of the food prep and the finished product.

This isn't just a cookbook. It is a primer on Thai history, cooking techniques, ingredients, equipment, and more, with over 60 non-recipe pages.

The recipes are given both in metric and US measurements. For example: 900 ml / 1 1/2 pints / 3 3/4 cups vegetable stock.

The recipes are explained with clarity, so that even if one is unfamiliar with the dish, it's easy to follow the instructions.

This book will help you produce beautiful, interesting, simple, delicious Thai meals.

This book is published in paperback as Thai: The Essence of Asian Cooking

simple and great tasting 5 out of 5 stars.

Editorial Review:

Creating the tastes of Thailand is an irresistible challenge for cooks who love the pungent combinations and subtle balance of ingredients. True to Thai traditions, Lemongrass and Sweet Basil features recipes based on Royal Thai Cuisine, but the author has moved from the highly decorative and intricately carved presentation to a more easy-to-follow, modern approach.

The key to successful Thai cooking is using the best and freshest produce that you can find, so the book starts by detailing the main ingredients that are essential to the Thai cook. This is followed by clear instructions on the cooking methods and techniques that are used to achieve the unique Thai flavors.

Based on the traditional recipes of each Thai region, every cook has his or her own version of a dish including the addition of a secret ingredient or two. Kham shares with us over 50 of his recipes from Isan and Central, Southern, and Northern Thailand. Also included is a chapter of Thai "tapas," Khap Klaem with mouthwatering dishes such as Fresh Oysters with Spicy Thai Sauce and Drunken Noodles.

The stunning photographs accompanying the recipes give a strong sense of the Thai way of life. The beautiful location photography shows the seamless integration of food and the Thai Buddhist religion and the vibrant and informative food photographs reflect the Thai's liking for strong color and the importance of garnishes.

Thai people have a passion for the best ingredients, a passion for eating, a passion for the experience of sharing good food. Be inspired by this and create a delicious meal for your family and friends.
