The recipes have been written especially for people cooking in a Western kitchen, but using Thai ingredients widely available in supermarkets and Oriental stores. If you haven't cooked Thai before, start with easy nibbles to serve with drinks. Appetizers and party bites include Shrimp wrapped in Crisp Noodles and Vegetable Fritters with Sesame Seeds. Thailand is known for wonderful soups and salads, such as Hot and Sour Soup with Shrimp, Chicken Salad with Mint and Roasted Sesame Seeds, and Vegetable Salad with Peanut Dressing. Try one-dish meals such as favorite Pad Thai (stir-fried noodles), Spicy Duck with Sticky Rice, and Mee Krop (crisp deep-fried noodles). The best Thai cookbook, with an education thrown in. 5 out of 5 stars.

This was my 8th Thai cookbook, when I thought it unlikely there was much else for me to learn.

Little did I know! The book is laid out beautifully, with (mostly) one recipe to a page. There are no photographs, but the gorgeous illustrations by Helen Semmler more than make up for them. Each recipe is preceded with a short, instructive commentary.

The recipes themselves ... if you are the type of person who, when in a new restaurant, will look for a dish you are not familiar with and smile broadly when told: "Oh, you wouldn't like that," then you MUST track down a copy of this book. There are more unusual and unique dishes, and new tastes, in this slim volume than in all the rest of my Thai cookbooks together.

This is my textbook when I teach Thai cuisine. I used to feel like an impostor when Thai natives would sometimes take my class - not any more! I just lead off with "Nam Prik Kai Kem" (relish of salty duck eggs with fresh vegetables - it might take you several years to acquire a taste for it) to establish my credentials.

Especially interesting are the primitive dishes, like Gaeng Som Pla Tua Fak Yaew (sour orange curry with snake beans), that date from before chilies were introduced to Thailand by the Portuguese. It is fascinating to make some of the historical dishes completely authentically -- without chilies and using only pepper for heat.

One particular Royal Thai appetizer, Saeng Wa Gung Pao, aptly described by Mr. Thompson as: "the quintessence of good Thai food," is the single finest dish I have ever made - well worth the trouble of tracking down the ingredients. Royal Thai cuisine is not yet well known in America, which is a crying shame. One Royal Thai recipe that I haven't yet tried, Kao Chae (perfumed rice with garnishes) lists 61 ingredients!

Mr. Thompson's more familiar dishes, like the Red, Green, and Mussaman curries, are also several cuts above the norm. No canned curry pastes here! However, that brings up another thought: this is not an everyday cookbook for production-line family meals. For all the accolades I'm heaping on it, I find I use the book infrequently. When I NEED to make a meal, I usually turn to canned pastes and something like Charmaine Solomon's book. When I choose to take an entire day to play in my kitchen, I reach for my mortar and pestle, and this book.

A final note: Amazon has this David Thompson mixed up with the prolific writer of Westerns, so the link on this page to "an interview with David Thompson," if followed, will not teach you anything about Thai cuisine.

A feast for the eyes, the mind, and the palate 5 out of 5 stars.

First and foremost the book presents a series of recipes, easy to follow and in every instance a delight to prepare and to serve. The preparation of the ingredients, their traditional uses, and helpful information about potential combinations provide the reader with a banquet of information about the preparation of food in the traditional Thai style. Moreover, the book contains helpful suggestions on preparation techniques, for locating and purchasing ingredients, and for ultimate presentation of the dish. Loha-Unchit clearly strives to prepare the reader for the Thai cooking experience: providing basic instruction for those just beginning and important details to more experienced Thai cooks.

The book also is visually beautiful. Numerous line drawings and beautiful images (apparently watercolors) provide the reader with beautiful images ranging from market scenes in Bangkok to illustrations of people working in the countryside. I found myself going back to the pictures and imagining myself observing the scenes they depicted.

Finally, this book is a feast for the mind. Loha-unchit provides the reader with a history of the foods, their origins, and their place within the Thai cuisine. Loha-unchit guides us through a process that enables us to obtain and employ ingredients to produce authentic and traditional Thai cuisine with a minimum of fuss and a maximum of results. For example, although the book contains recipes for making your own curries from scratch it also provides suggestions for commercially available curries that provide the flavors closest to Thai home-made.

This is not a cookbook for those who think you can label a dish Thai by adding a few peanuts and a bit of lemon grass. It is a book that provides the reader with a taste of the sensibility of Thai cuisine and Thai culture, a journey for both the mind and the palate.

Experienced cooks will benefit from the insights Loha-unchit offers; inexperienced cooks will find their skills grow through use of the book. All will delight in the flavors, both visual and gustatory, that "It rains fishes" provides.

I started with the Food of Asia, which I think is excellent. I decided to check into some specific cuisines, such as Thailand, of the seven cuisines that are presented in the Food of Asia. I am a little torn about many of the other cuisines, but not for Thailand.

The individual books in the "Food of" series by Periplus have extensive introductions. There are not as many recipes as I had hoped for. The ingredients list, along with the accompanying commentaries, are about the same, with an equivalent number of photos, as the Food of Asia. The Food of Asia contains many of the recipes, however, some do not have a photo.

The variety of main ingredients here is quite good, including chicken, duck, fish, beef, pork, all the shellfish, a couple of specific vegetables such as kale and green beans that go with a meat, and a general vegatable stir-fry that can be used with any vegetable.

The ingredients list is thourough, and there is little need for substitutions or omissions. Also, many of the spice pastes can easily be purchased pre-mixed. Some of the ingredients are obtainable primarily online, but unlike many of the other cuisines in the "Food of" series, Thai and Indian online stores are plenty.

In the case of "Food of Thailand", I think it is definitely worth the purchase if you really like Thai food, rather than my general suggestion that "Food of Asia" is the place to start. "Food of Asia" contains many of the recipes that are in "Food of Thailand", but the extra ones in "Food of Thailand" are worth purchasing this cuisine separately.

I thought I was an expert on Thai food as I have been living in Thailand for 6 years. However, Joe's easy to read book taught me many a new thing. This is not your average cook book. It is really a cross between a travel guide and a recipe book with a sprinkling of cultural information. I would say that it is the definitive book on eating Thai food - whether that be in Thailand or abroad. Highly recommended for anyone who has visited Thailand and has fallen in love with the food or the armchair traveler who is eating Thai food at home.

The Lonely Planet Guides are justly regarded as bibles by backpackers the world over. They are exhaustively researched and very reliable. I backpacked through Thailand last year and relied heavily on Joe Cummings brilliant LP guide for advice, inspiration and tips on what to eat. When I heard that Joe Cummings had written the LP World Food Guide to Thailand I knew it would be as meticulously researched and filled with the same infectious enthusiasm as his guide to the country itself. I was not disappointed. Though this is not the only Thai cookbook you will ever need - there are only twenty or so recipes - the book rightly sets Thai cuisine in its rich context, building the case that Thai food - real Thai food - is one of the world's most exciting cuisines. The story of Thai food - it's distinctive ingredients, the way it is eaten by Thais, the many regional variations, how to shop for Thai ingredients, street food, etc - is studded with relevant recipes made all the more appealing by what you have just learned. Buy it - you won't be disappointed.

This cookbook offers recipes from all over Thailand and is so gorgeously illustrated you want to eat the pages. The photographs which accompany the recipe steps complete the "perfect cookbook package." I loved this cookbook enough to buy two!

In Simple Thai Cookery, Ken Hom teaches simple but mouth-watering thai dishes that are easy to prepare at home. From Shrimp Soup to Thai Fried Rice and Green and Red Curries, each recipe is illustrated with step-by-step photographs. This makes it easy to follow directions and you'll know what the end product is supposed to look like. I also liked his descriptions of Thai ingredients and once you have a few key items, rest of the recipe is easy to follow.

Highly recommended!

Natacha Du Pont De Bie is no ordinary tourist. She'll trek for hours or even days in search of a good lunch.
