I bought this cookbook this summer, more to add to my collection than to actually learn Thai cooking. But then I tried a few recipes, and I've been hooked on the cookbook ever since...

Having grown up in an Asian household, I'm already familiar with a lot of the ingredients and techniques used in Asian cooking, but I love the fact that this cookbook explains ingredients and technique without being condescending to those who aren't familiar with Asian cookery much less with the kitchen.

I usually use post-it notes to mark the recipes in a new cookbook that I want to try. When I started marking pages in this cookbook, I realized that I wanted to try everything. While I haven't had a chance to sample it all just yet, I can tell you that everything I've tried has been perfect. Even my boyfriend, who is definitely a "meat and potatoes" man loves when I prepare something from this book. I've also found that, despite the simplicity of the recipes, my dinner guests always assume that I went to elaborate lengths to prepare these wonderful foods. My favorite is an exquisite cilantro coconut chicken dish that just knocks the socks off of anyone who tries it.

This is a great Thai cookbook. Simple to understand, a variety of dishes so the non-beginner won't get bored, and things uniformly taste wonderful. Apparently the authors run a great Thai restaurant in the East Bay area of San Francisco, California. It's the Thai cookbook I refer to the most of the several I own; and apparently the authors have produced a Thai cooking video as well, which it doesn't look like Amazon.com carries as yet. You can find the Siam Cuisine website, though, for further info, I suppose.

I bought this book when I was 18 and working my way through college as a cook. I loved Asian food, but did't have much experience cooking Thai food. The fact that this cookbook makes you (lets you) make all the curries from scratch is wonderful. It took some searching to get all the ingredients exactly right, but the first few meals I made with this book were just amazing. I continued to cook, and became a professional chef with a giant bookshelf full of cookbooks, well over 200. Now, 14 years later, I rarely use cookbooks, but whenever I do, or if a friend wants to borrow a book for something new, this is the one I give them. I love all of the Charlie Trotter books for the pics and ideas, but this book is the best for recipes. (I know I'm crossing cultural barriers, but I hope you get the point.) After I made my first meal from this book, for a girlfriend, I vowed that I'd go to this restaurant if I ever "made it to San Francisco." Well, now every time I'm there, I make sure I hit Berkeley to go there. The restaurant lives up to all of the recipes, and, this might surprise some, the dishes in the restaurant taste JUST LIKE the ones made from the book. It's one of my favorite restaurants, definitely the best Thai restaurant I've ever been to, and without a doubt, if we're judging cookbooks by the number of times they've been opened, this is the best among my collection. If you're in a smaller city, you might have some trouble getting some ingredients, but if you can't improvise you can always get something from the net. Even if you DO have do substitute some ingredients, I would recommend this cookbook above any other Thai cookbook I've seen, and above any other Asian cookbook as well.

Thai cooking made easier, but not easy 4 out of 5 stars.

I love cooking, and I love Thai food, but attempts to make my favorite dishes at home always seem to come up short. The flavors aren't quite right, it doesn't look the way it is supposed to, and all the recipes I try don't quite cut it.

Good, authentic Thai cooking is never really that easy, as evidenced by this book. "Thai Cooking Made Easy" does an admirable job making Thai cooking accessible. The directions are easy to follow, the spiral bound format is perfect for the kitchen,, and all of the recipes have great pictures to help you pick your challenge. But...

While it says "delectable Thai meals in minutes," almost every recipe has substantial prep time, with an hour being standard, and several being much longer. Possibly the biggest barricade is the ingredients required by the recipes. You will either need a specialty store, or else a truly excellent supermarket before you attempt these dishes. How many of you have roasted rice powder, galanga root, kaffir lime leaves, tamarind juice and roasted grated coconut in your pantries?

Attempts at shortcutting on ingredients or preparation account for the second-rate dishes that I have been eating. If you want that magical taste, you have to be prepared to work for it! "Thai Cooking Made Easy" is a great guide and a solid cookbook, but don't expect to be whipping up authentic Yum Pla Muk or Tom Som Pla in the same way you would dash off a grilled cheese sandwich.

Reading this cookbook one has to wonder, is this about food, or is this about Tommy? I've eaten for several years at his restaurant (far better 10 years ago than now) and honestly, the recipes in the book are less than reproducible. There is a recipe for Tiger Roll-about as Thai as Pizza. The pictures are good, but the Tommy's tenor of 'Ain't I great and witty?' makes me gag. Sorry...give me a good recipe for a good Lemon Grass soup and you've got a devotee. I pour over Pad Thai recipes, this one just doesn't cut it. I'll eat at the restaurant (especially on Drag Night) but I won't cook from the book.

As a person who never cooks,after eating at Tommy Tangs restaurants in Pasadena and Hollywood,I had to rush out and buy the cookbook.WOW!!!!!!What a book!!!!!!I found the recipes to be well written and easy to follow,and the pictures were absolutely mouthwatering,like the dishes at the restaurant.Since then, I have eaten at many Thai restaurants and purchased Thai cookbooks and have yet to find one that is remotely close in quality to Tommy Tangs.The cookbook is absolutely the bible of Thai cooking and a must for any kitchen.

Fire and spice has a great variety of things to make and try and most all of them are very very good. Of course you have to like Thai, Chinese, and other rather spice (and/or hot) foods.

Most recipes are easy to put together and are in general highly modifiable according to taste.

Try the Twice Cooked Pork, Beef w/ Orange Rind and Szechuan Peppercorns, and Chengtu Chicken. Try them all!

Well worth the price, which was a bargain anyway.

Whether or not you are new to Thai cooking, this book is sure to impress and inspire. The recipes are simple to follow. Some are traditional, some are Thai fusion style. The ingredients are readily available in most American cities. The presentation is modern and very refined. Casual and classy Thai food is what you are presented with here in this book. And if you are fortunate enough to visit Bangkok, a Jim Thompson restaurant experience will make you dream of Thailand for years to come. I highly recommend one at Mr. Thompson's Thai House Museum which is an absolute oasis of calmness and beauty.
