determined american 4 out of 5 stars.

This cookbook has really helped me in being able to perfect my Puerto Rican cooking. My husband is from the island and I am very determined in trying to be able to cook his authentic food. When he tasted the food, he said that he was quite impressed with the way the way the food turned out. He is not an easy man to please when it comes to his cultural food. This cookbook made it very simple for someone who is not used to that type of cooking or food. I would recommend this to anyone who may also be in my situation or who is just looking to expand their horizons.

Not so Puerto Rican - don't waste your money on this book 1 out of 5 stars.

I have no idea where the authors got those recipes or their ideas about Puerto Rican food, but I am disappointed that I wasted my money on this book. My parents are Puerto Rican and although I was born in New York, I lived in Puerto Rico for 34 years before moving to Maryland in 1998. Believe me, no one in PR uses ginger in their daily meals.... only in teas if their stomach is upset and in desserts like coconut rice pudding. I didn't need this book to learn how to cook Puerto Rican food since I've eaten it all of my life and have been cooking it for 41 years. I bought it just to have a nice collection of our food. I don't even remember where I put because I was so upset about how misleading it is, but I DO know it's not on my bookshelf! The only place you'll find this "new" type of cooking is in a restaurant geared toward the tourist trade, not in a Puerto Rican home. If you want real PR cooking I suggest buying "Puerto Rican Cookery" by Carmen Aboy Valldejuli or "Puerto Rican Dishes" by Berta Cabanillas & Carmen Ginorio to get a more realistic idea of what PR food is all about. It's unfortunate that I couldn't give this book "0" stars.

Low fat recipes with lots of flavor! 5 out of 5 stars.

An excellent cook book with lots of color pictures. The food is interesting and full of great flavors. The author shows a great appreciation for people who love food, love to cook but are required to eat a low fat diet. People not on low fat diets will never know it's low fat and healthy if you don't tell them.

Awesome and very interesting book 5 out of 5 stars.

This book is not only about healthier recipes but it tells you so much about health issues that the Hispanic community should be aware of. In a scale of 1-10, i'll give it a 10.

Editorial Review:

This is a Jamaican cookbook with traditional and contemporary recipes. However, rather than just a cookbook filled with funny anecdotes and imperial measurements that would make most self-proclaimed chemists blush, it’s also a book with heart. It was written from an outsider’s perspective after an unexpected and long soul searching journey. My travels have allowed me to discover a love and passion for Jamaica, my second home. This love has brought me to a new and exciting chapter in my life. I’ve been married to a Jamaican man for five years, and now the journey has come full circle with a marriage of cultures and a need to tell a tale. It’s my story told through food, so you are seeing it through my eyes. Each of the recipes measures the depth and breadth of a cultural diversity, and is a reflection of its people, as they are family and friends inspired. So although at the end of the day the theme is cooking, the aroma is undoubtedly Jamaican. It’s the intoxicating aroma of a people, a story of a culture whose motto is "out of many, one people." This is the story that I set out to tell approximately a year and a half ago. My audience is anyone with an appreciation for really good food, a sense of adventure, but more importantly, an audience that is willing to embrace a wonderful culture. All of my recipes are easy to follow and are full proof; you can’t go wrong. It’s effortless cooking at its best, and if you like lots of flavor in your food, look no further. The best thing is, your friends and family will think you are a culinary genius. What sets Jamaican food apart from any other is the ability to combine many different cultures and fuse them to create one cuisine, Jamaican. Although Jamaica is very exotic, if you break down the ingredients to its root core, you will see that they are everyday ingredients such as thyme, soya sauce, garlic, ginger, and scallions, just to mention a few. Although as with anything new, expect a few exotic ingredients for you to discover. So don’t be afraid to explore Jamaica, even if it’s only with food. It's comfort food at it’s best, with a twist or two. It is food that brings family and friends together to enjoy great conversations and amazing food. Cooking is about choices, which is important, because after all, you are ! going to eat the food. I have given you many recipes from which to choose, from the very traditional to the more contemporary. I’ve even added a little bit of me to the classics.

Editorial Review:

Caribbean Recipes "Old & New" is a comprehensive Caribbean cookbook with over 400 recipes, some originals plus new recipes created in the Caribbean style of cooking. Many recipes come from the author’s restaurant, "The Cove" in Barbados. The book is written in the style of a family memoir as the author tells of gatherings and cooking experiences throughout her life. The book includes some of the author’s biography, hints and substitutes concerning food preparation, and a glossary of Caribbean foods. Each chapter is color-coded in bright Caribbean colors and contains a little story followed by the appropriate recipes and food photography. The pages are illustrated with original watercolor art sketches done by the author’s father, Gordon Parkinson, who is an artist well known throughout the Caribbean. The book is printed in large font for ease of reading, with recipes that are easy to follow. It also contains a page at the end entitled "My own recipes" for you to add any new or given Caribbean recipes.
