Editorial Review:

Patrick Williams trained in classical French food, but he has always looked at ways in which West Indian food could benefit from the techniques of classical French food - and vice versa. In this book he creates his own Caribbean style of cooking. The recipes are modern but bring together the "raw" essence of the Caribbean and Pat's creativity, resulting in mouth-watering dishes for the modern palate.

Beautiful book, but awful recipes 1 out of 5 stars.
0 of 0 people found this review helpful.

Pictures of almost every recipe but........the recipes are not authentic! The dal puri looks like bakes with a dal filling, the bakes recipe looks like crix! The pulori looks like accra, and the baiganee looks like...I don't even know! Thats how far it is from the real thing. No wonder this book is selling for so cheap on all those websites. It's really awful. The author isn't from the caribbean, it says she is from Mauritius; (the book claims our cuisines are similar). Maybe the recipes in her book reflect the cuisine from there but it's definitly not caribbean. Some recipes could pass, so to speak, such as beef patty, and buljol, but too many others are just plain wrong. So, in conclusion, the recipe names are the same; saheena, polouri, dal puri, calaloo but the ingredients and the methods and final product are to far from caribbean cuisine. This book may be good for a tourist or someone from Mauritius but not a West Indian.

Editorial Review:

The Caribbean is a corner of the world which never fails to stir the imagination. With its tropical richness, its music, its colourful history, and its famously relaxed lifestyle, the cluster of islands from the Bahamas in the north to Cuba, Jamaica, Haiti and Trinidad in the south have offered the world a centuries-long pageant of colour and excitement. The cooking of the Caribbean reflects that exotic tradition, bringing together the flavours of Africa, Spain, France, India and China in a style which is fresh, exhilarating and unique. The recipes in this book are a blend of traditional Caribbean cookery and modern recipes in a Caribbean style, designed to give you a wide selection of dishes from the islands in the sun. Each recipe includes a colour photograph, simple instructions, and has been triple-tested by The Australian Women's Weekly test Kitchen to ensure quality and taste.

Caribbean sunshine, tropical breezes, the turquoise sea, you can't take them home with you, but you can enjoy the flavours of the Caribbean forever. One of the highlights of your island holiday is the food, the amazing variety of island specialties. The world lives in the Caribbean. This is not real cuban cuisine 1 out of 5 stars.
7 of 8 people found this review helpful.

I was very dissapointed in this book. I purchased this book at the same time that I bought "Memories of a Cuban Kitchen" and WOW what a difference. Memories of a cuban Kitchen is all you really need to learn & cook real cuban food. Andy doesn't have a clue! The only good part of the book is the beautiful cover of the flag.

Editorial Review:

Cuban cuisine blends the culinary traditions of four continents and is the hottest new trend in gastronomy. African, Latin American, North American and European cuisines combine to produce mouth-watering and unique recipes. The first traditional Cuban cookbook available in English, Classic Cuban Cuisine evokes the faded grandeur of Havana to present over 120 authentic and delicious recipes. The book covers the history and usage of Cuban ingredients, profiles Havana's main restaurants and lists alternatives for any ingredients difficult to obtain. Gravette tells the story of Cuban rum and offers scintillating cocktails from mojitos to 4 kinds of daiquiri.
