A Exciting Change of Cuisine 4 out of 5 stars.

I bought this cookbook on impulse (okay, because of the cover) and have used its recipes quite frequently since. First of all, since I mention its cover, I have to say that the photography is rich and beautiful and pays great homage to this cuisine. Each recipe has its corresponding photo plus step-by-step photographs of its preparation, which I felt might be overkill, but actually helpful when dealing with ingredients and techniques that I've never met before.

I found unusual ingredients in this book such as ackee, cassava, chayote, taro, green bananas, and salt cod. I took this as an opportunity to try foods that I have never tried before. Such an opportunity is something that I expect from a cookbook and this one certainly delivers the goods! I also appreciate the unexpected combination of ingredients in each recipe. For example one of my favorites is the Caribbean Vegetable Soup with onion, garlic, thyme, carrots, celery, green bananas, taro, red lentils, chayote, macaroni, etc. I promise you will not be disappointed!

Some other favorites are the Coconut Jumbo Shrimp, the Mango, Tomato & Red Onion Salad, the Creole Fish Stew, the Pork Roasted with Herbs, Spices & Rum (very rich!), BBQ Jerk Chicken, and last but not least, the Peanut Chicken.

One more thing to add, if you are trying to incorporate more fish into your diet, this book is for you. Though the fish section is heavy on the shellfish, you will find 4 delicious recipes included for snapper, trout, and salmon.

I love this book and it is such a pity I can't find it anymore except for overpriced used copies. I am the envy of my family for having this book in my possession. My Dominican mother never had the patience to teach me how to cook and after moving out I missed eating Dominican food. Buying this book was a godsend. I can reproduce all the meals I grew up with and they taste just like Mom's and some are even better! - Sorry Mami ;-)

Great book but the price in the US is too high. Buy in DR. 5 out of 5 stars.

I aplaud the author of this book for writing such a comprehensive book with the favorite Dominican recipes. I'm a Dominican myself, one who can cook, and I can assure you that the recipes in this book are really what the Dominican people
cook in Dom. Rep.
However, I must question the price of this book in the US.
I've been wanting to buy the book for a while, but decided not to buy it until I went to DR and compared to the price there. I finally went to DR on vacation and bought the collector's edition of the book for RD$600.00 which is now (as of Sept 2004) equivalent to US$15.00. Now, why is the book selling in the US for approximately US$200.00? And who is paying this kind of $$ for the book? If you want this book, I suggest that you take a great vacation to DR, enjoy yourself, and buy the book there for US$15.00. Or ask a friend to bring it for you.

I gave my 5 stars on the review because I'm rating the book's content, not the price.

I read this like a textbook, learned the techniques and ingredients in the restaurant food I enjoy when visiting the islands. Unfortunately, where I live, I cannot get many of the ingredients which are plentiful in the Caribbean. Namely - guava, mango, goat meat, papaya, breadfruit, etc. You can substitute many of the ingredients and make wonderful new items, otherwise you will just tease your tastebuds. However - this is one of the very very few Caribbean cookbooks printed in American measures so if you sail to the islands on your own boat, or rent a house there and do your own cooking, this book is an absolute must !!!!!!

This book clearly explains why Caribe is paradise. With so many pictures, one feels like is on a vacation. There are maps, excellent descriptions and the recipes! Lots of information that I thought was lost. Typical dishes and how they came to be. Plants and their uses. Cultures within the Caribean. Enough history to spike our curiosity. A must read before you visit and a must have if you live here. What a cookbook! Warning: Do not read this book if you are a local living overseas. This book will cause you to forget why you left and make you return home.

spanish book, about Caribbean food, going country per country. Not fool on recipies, but very well explained.
