An outstanding compilation of Bahamian & Caribbean Cuisine! 5 out of 5 stars.
3 of 3 people found this review helpful.

As an American descendant of Bahamian immigrants, I've always been fascinated by my family's tales of delicious island dishes. Many of those dishes were duplicated here in South Florida when my great-grandparents immigrated to the States, but many others remained a mystery to me. Imagine, then, my delight at finding Lady Igrid Darling's wonderful compilation of Bahamian and Caribbean cuisine. It's a great mix of the sophisticated and the every-day. As I read the recipes to them, my mom, aunts and cousins sat around reminiscing and sharing stories about the various mouth-watering dishes, fresh fruits and vegetables contained therein. This delightful cookbook brought back memories for my family, and will now build memories for me. At their insistence, I've now purchased three additional copies for my mom, sister and others to share. I'm thrilled with my purchase and will use this cookbook for many years to come, both learning about and sharing my culinary heritage with today's generation of Allen descendants.

Haitian cooking 5 out of 5 stars.
8 of 8 people found this review helpful.

Whether you are a gourmet chef or a beginner,I think you will enjoy cooking with the Mountain Maid Best Made cookbook. The recipes are easy to follow and there are many helpful charts in the back of the book that answer any question you might have. There is also a dictionary that gives you the english, french, and creole word for the foods used in the book. I also found the cooking hints helpful and often refer to it when I am cooking out of a different cookbook. Although some of the recipes call for exotic ingredients that might be hard to locate in your part of the world, you can substitute more available ingredients and still get good results. You will be surprized what grocery stores are stocking these days, avacadoes and plaintains, both common in Haitian cooking, are now readily available. This cookbook makes cooking Haitian food easy and fun! I especially like the Banan Pese and rice and bean recipes. The Banana bread is another favorite! I've given this cookbook to my mother and a few friends and they have also liked it. I would recommend it to anyone who enjoys island cooking!

Editorial Review:

A broad assortment of Haitian Creole and French recipes. Best Made covers everything from standard peasant fare to selections from famous Haitian restaurants. There are many traditional, modern as well as fun recipes using the great selection of vegetables, meats, and tropical fruits of Haiti and the Caribbean.

Best Made was compiled by the Mountain Maid Self Help Project, a landmark institution in the rural mountains south of the capital city of Port-au-Prince. The authors have provided practical tips on Haitian cuisine prepared abroad and cooking in Haiti, along with charts that tell the reader what foods are called in French and Creole, and their uses. Watch for the Haitian Proverbs scattered throughout the book. They show great wisdom in simplicity.

Not Too Traditional 2 out of 5 stars.
17 of 17 people found this review helpful.

I was expecting this book to have more traditional recipies such as mofongo, arroz con gandules & pasteles. Instead the recipies featured were more of the hotel touristy-type food that I know an average puertorican would not prepare in their home. I purchased this book in Old San Juan & the salesperson recommended another book, I should have taken her advice. I have since purchased the other book and that has exactly what I was looking for. Besides I heard a rumor the author was a vegetarian, how can you write a cookbook containig meat recipies and not eat them?

Editorial Review:

Angela Spenceley shares 15 years of experience and creativity collecting recipes from family and long-time local residents. After two years of historical research, experimenting with recipes in the kitchen and lots of tasting, her uncomplicated methods will appeal to the experienced gourmet and the beginning cook. A must for any good and varied kitchen library. Features traditional recipes from Pastelillos, Rum-stewed Shrimp and many photographs of food and local views.
