When Daniel Leader opened his Catskills bakery, Bread Alone, twenty years ago, he was determined to duplicate the whole-grain and sourdough breads he had learned to make in the bakeries of Paris. The bakery was an instant success, and his first book, Bread Alone, brought Leader's breads to home kitchens.

The delight in this book is not only in the recipes, which I have enjoyed immensely. Jane Garmey's wit in the presentation makes one sense a wink at the poor reputation British food generally holds, just as her recipes give it the lie. Generally, British food at its best is wonderful... trouble is that finding it 'at its best' often requires a journey.

The volume is not exhaustive, but presents many classic dishes, most easily prepared (and some which would appeal to, for example, one so avidly traditional as to spend the two months it takes for genuine plum pudding.) It is a pleasant sampler of varied main dish, savoury, pudding, and tea favourites.

I would highly recommend this book to those who enjoy cooking. There are many items here which do not require unusual effort or odd ingredients, and can have wonderful results.

My ONLY souce of the best Greek cooking was Hellenic Cuisine from the 1970's. This book is excellent and is just like having your "yiayia" cooking for you and telling you how to prepare these delicacies. The ingredients are authentic and the prep time is right on the money. As everyone knows Greek cooking takes time, patience and lots of butter, olive oil, filo, feta and olives not to mention basil, oregano and garlic. Get your ingredients and have a ball. This cook book is the BEST out there for authenticity.

This is an excellent cookbook! My Goddaughter has one and told me about it. She uses hers all the time and everything turns out great, so I decided to buy one, too!

This is a wonderful cookbook. In fact, this is my second copy. My husband and I have purchased a second home and I needed another copy of one of our favorite cookbooks. We have travelled to Portugal on several occasions and the recipes bring back fond memories of the excellent food we had in Portugal. The ingredients are easy to obtain. We often use the recipes when entertaining because our friends have never sampled Portuguese food.

I've had this cookbook for years and it's one of my favourites. I've not been to Portugal, but I've lived in Hong Kong for 20 years and frequently visit Macau for genuine Portuguese food (perhaps Ms Anderson could a Macanese dish or two in an update). The recipes are varied and they work. Nicely written book with tons of good info about the country and its fascinating cuisine.

I'll tell you what this great little book IS.....not what it isn't.

1.....This GUIDE BOOK rates each chili with a 1-10 temperature scale. Thank you, Mark Miller!!! Why didn't someone do this a long time ago? (In a neat, concise format, that is.) Did you know that bell peppers have a rating of zero? Poblanos rate a 3.....jalapenos a 5.5.....and those smokin' habaneros top the charts with a big fat 10!

2.....This PICTURE BOOK beautifully portrays every chili, both fresh and dried, with a bright, colorful, professional photo. I've taken this book grocery shopping to help identify the type of chile I'm buying because grocers don't always give us a name.

3.....This REFERENCE BOOK is an essential guide to identifying chilis...something every cook needs. At a glance the reader sees why Peruvian peppers aren't the best choice for filling with chorizo and rice. We must know what a habanero looks like (and why it doesn't belong in the tossed salad, or in the soup, or the casserole...or almost anything else). This book identifies all the choices that won't scald your tongue...and also those that might.

4.....This INFORMATIVE BOOK offers history, guidance, personal experience and opinion. Lay this on your coffee table to educate your friends and to inspire some "hot conversation." Everyone has a good pepper story to tell........"You think jalapenos are hot? Let me tell you about the time when..."

5.....As an ADDED BONUS...some great basic/authentic recipes are included. Mango-habanero sauce (So that's where those trouble-makers go!)..... guajillo salsa..... chipotles in adobe sauce..... mole amarillo..... spicy grilled shrimp and melon salad..... pipian rojo..... a total of seventeen wonderful recipes.

Mark Miller urges the cook to focus on the flavor and not the heat...ha ha ha. Well, he's probably not kidding, since he's worked with chiles for over 30 years. Maybe I can focus on the flavor of everything below a 7 on the heat scale, and there are many of those to choose from. Because of this book, I can now discuss the merits of poblanos versus those of anaheims, and I can identify any "capsicum" in the world if that need arises. I can definitely choose with confidence from the produce section. All in all, "The Great Chile Book" offers ACCESSIBLE and VALUABLE information that every cook needs to know.

Good, basic, authentic recipes. 5 out of 5 stars.

I own just about every German cookbook I can get my hands on, including a couple of them written in German. Spoonfuls of Germany has become among my favorites.

First of all, the 170 recipes really do reflect the cuisine from all over the country. (In the U.S., most of our knowledge of German food is Bavarian; my theory is that it's because most American servicemen were stationed in the southeast.) The author breaks down her regions into northern lights; eastern roots; western crossroads; and southern peaks. This sometimes is a little confusing (where would you look for recipes from the Rhine?), and it means you have to look in four places if you're in search of, say, salads, but it works out okay.

What makes it all worthwhile is that these recipes are _good_. They're simple enough for you to make for a weeknight dinner, too. Plus, they're decidedly German: her recipe for Rote Grütze (red berry pudding) tasted exactly the way I remembered from my travels. These are all very comfortable on an American table, however; her beet salad with horseradish vinaigrette got rave reviews on my Thanksgiving table. No leftovers whatsoever.

While you'll find recipes for all the traditional heavy German dishes, such as saurbraten or stuffed potato dumplings, you'll also learn that a lot of German food is delicate -- you won't always need a nap after lunch. From shrimp soup with white asparagus to sauteed sole with remoulade, you'll find something delicious to try for dinner.

Great book. Recommended.

Overall this book is just fine for someone interested in cooking with a DO. The mix of recipes is fine, but they just seemed to be missing something. They were all more or less of the "huck a good sized hen into the pot and cook for a while until done" variety. All of the recipes look tasty, though I would have liked to have seen a few more meat dishes, especially some more creative ones. Let's be honest, when you pay for a book you'd like to see more than "...put a 5 lb beef roast into a preheated Dutch oven, salt and pepper to taste, cook until done." Give me a little something to work with here! Inspire me! I can already cook a roast like this in the oven. Having said all of that, I would still reccommend this book. The vegetable dishes and desserts look fantastic and I can't wait to try some of them. As an aside, this is the only Dutch oven book I've seen with heart-healthy recipes as well as more traditional fare. Given that the average DO book requires the use of a metric ton of lard, this will probably appeal to a wider range of cooks.

The dutch oven has been used for centuries to cook for large groups and families at home and on horse trails or river banks. If used properly, the dutch over can be used to cook for individuals. Using a dutch oven takes finesse and fire - side savvy. It is more than just a pot. You can bake in it, cook in it and fry in it.
