They're all here. And they're not as hard as you think! 4 out of 5 stars.
25 of 28 people found this review helpful.

I'm not very familiar with "real" French cookies, so I didn't know how hard or easy they'd be. It turns out that they'd probably have been a lot more work without this book. The author gives very clear line drawings exactly when they're most needed, tells you exactly what equipment you need up front, explains how to use the equipment you're probably not all that familiar with, and gives beautifully clear directions.

The only troubles with the book is that some of the recipes are much longer to make than is clear from the first reading (the dough softens quicker than I expected, needs to chill 10 times, etc.), and it's basically impossible to plan in advance how long one of these batches will take to put together. An indicator of this would really have helped a lot.

But they're SO good; it's amazing how much better cookies taste with just a little more time put into them and with a brilliant French chef's advice.

Bon appetit!

Burgundy & its Wines 4 out of 5 stars.
4 of 4 people found this review helpful.

The book has wonderful photography, with a nice history of the region. A few major vineyards are listed, but don't expect it to be a list of key Burgundian hot spots! More the asthetic and artistic history of the area and how wine got started and grew.

Editorial Review:

Burgundy is a unique mix of historic towns and vineyards, great wines, and thousands of stubbornly individualistic wine makers, brokers, and merchants. The spirit of the region comes alive here, through text by award-winning wine writer Nicholas Faith and Andy Katz’s incomparable photographs. Through this perfect marriage of words and images, oenophiles can travel to the Côte d’Or, which produces outstanding Chardonnay and Pinot Noir; the Domaine de la Romanée-Conti, home of the world’s most expensive red wine; the three outlying regions of Chablis; as well as the Mâconnais, Beaujolais, and many other lovely sites. A selective guide to the best merchants and producers, as well as a directory of appellations and Grands Crus, help wine-lovers in their purchases and on visits to the area.

Simple Elegance 5 out of 5 stars.
8 of 9 people found this review helpful.

I love this book! I was drawn in by Kate's story - living on a barge floating up the French countryside and wanted to read more about that. Kate not only took me on a beautiful journey but also shared some of her favorite recipes with me.

I thought French cooking was fancy and difficult but these recipes are not. They're simple, fresh, and just great. I can picture her walking through a farmers market creating these meals based on the produce available.

The book is beautiful and Kate is a wonderful guide. Thank you for sharing your travels with me. When I cook from this book I turn on the radio, pour a glass of wine, and travel back to France.

Editorial Review:

The Atelier-we watch from the wings, able to observe the genesis of creation in Robuchon's own kitchens. Words and images reveal the mysteries of his gastronomic workshop. A privileged view of the gestures and glances of this contemplative world is offered, as we observe one of today's most inspired culinary teachers pass on his techniques and secrets. We are invited to participate in the excitement of a master at work with five of his most inspired pupils: Dominque Bouchet, Cristophe Cussac, Philippe Groult, Benoît Guichard, and Maurice Guillouet. The Products-we are offered an understanding of eight keystone ingredients from the palette sensibilities of the master himself. Joël Robuchon explains why potatoes, caviar, scallops, cèpe mushrooms, sweetbreads, truffles, chestnuts, and almonds are his favorite products. He talks about his research and introduces us to his suppliers, whose attention to quality is second only to Robuchon's own quest for raw perfection. The Recipes-we participate in the unique synthesis of flavors, colors, and textures conceived by the master and his five protégés. Their compositions tease exploration of the eight chosen products and lead us every time toward harmonious composition.

Editorial Review:

French cakes are among the most luscious and spectacular in the pantheon of cake baking. In The Art of the Cake, authors Healy and Bugat simplify the art form and bring together more than 100 classic cakes, from the Marquis (kirsch-soaked chocolate genoise cake rounds stuffed with ripe peaches and whipped cream) to the Moka, made from vanilla genoise brushed with espresso, filled with coffee buttercream, and topped with chopped roasted almonds.

There are recipes for poundcake-, spongecake-, and meringue-based gbteaux,in addition to bavarians, charlottes, mousse cakes, and loaf and log cakes (like the classic Chocolate Yule Log). There are also over 40 recipes for frostings, glazes, sauces, and fillings. In addition, there are detailed ingredient and equipment sections, and comprehensive instructions on general baking techniques--everything from separating and whipping eggs to working with a pastry tube to the correct way to temper chocolate. The more than 400 step-by-step illustrations (penned by Paul Bugat) that accompany the recipes and the 32 pages of color photographs of these magnificent cakes will be enough to tempt any baker, amateur or pro, into the kitchen.

Exquisite Recipes and Fun to read, too! 5 out of 5 stars.
25 of 26 people found this review helpful.

Ive been cooking with _Joy of Cooking_ for a long time now. _Joy_ makes reference to a chapter in this book, "Murder in the Kitchen," as a sort of primer on how to 'murder' a carp in the kitchen before cooking. I decided, on a whim, to buy the book.

I had no idea that having this new cookbook would be so rewarding!

Alice Toklas has some INCREDIBLE recipes in here (Scheherezade Melon being a favorite!), all of which should be tried and enjoyed.

Furthermore, this book contains recipes you simply wont find in other, newer, cookbooks. My girlfriend really summed this book up by suggesting that the recipes in this book are the recipes you know exist -- but are being passed from grandmother to granddaughter; you simply dont get these unless youre in that circle of people.

This cookbook is your way in to exquisite dishes that were prepared for the likes of Gertrude Stein, Hemmingway, Picasso, and Matisse.

That, and where else are you going to find a recipe for Hashish Fudge?

This book has my whole-hearted, overwhelming approval.

Editorial Review:

Toklas's rich mixture of menus and memories of meals shared with such famous friends as Wilder, Picasso, and Hemingway, originally published in 1954.

Editorial Review:

From Here,You Can't See Paris is a sweet, leisurely exploration of the life of Les Arques (population 159), a hilltop village in a remote corner of France untouched by the modern era. It is a story of a dying village's struggle to survive, of a dead artist whose legacy began its rebirth, and of chef Jacques Ratier and his wife, Noëlle, whose bustling restaurant -- the village's sole business -- has helped ensure Les Arques's future.

Sanders set out to explore the inner workings of a French restaurant kitchen but ended up stumbling into a much richer world. Through the eyes of the Sanders family, one discovers the vibrant traditions of food, cooking, and rural living, and comes to know the village's history. Whether uncovering the darker secrets of making foie gras, hearing a chef confess his doubts about the Michelin star system, or absorbing the lore of the land around a farmhouse kitchen table after a boar hunt, life in Les Arques turns out to be anything but sleepy.

Clever Recipes In A Lovely Package 4 out of 5 stars.
25 of 27 people found this review helpful.

I just bought this cookbook last week, and was astounded at the simplicity and beauty of each recipe. The directions are clear and concise, and unlike a lot of French cooking, you don't use every pot and bowl in the house. I liked especially the way the book was formatted - appetizers, soups, main dishes, desserts - you can form a complete menu for a special meal and never need to leave the book! The glossary in the back spells out some of the obscure or unknown techniques employed in the recipes, such as the easy way to roast and skin peppers. The tone of the writing helps to inspire confidence. There's no assumption that you should know all about the intricacies of cooking; just have fun! One caveat: This is not a cookbook for those on a low-fat diet. But, in moderation, each recipe can be enjoyed.

Editorial Review:

Noted French chef Gerald Hirigoyen presents some of France's favorite bistro dishes. Here are classics such as a Creamy Chicken Liver Terrine and Creme Brulee, as well as contemporary favorites such as an onion pie filled with Roquefort and walnuts. In addition, you'll find suggestions for serving French wines and for recreating the bistro experience at home. 56 recipes. Full-color photos.
