If you are chef this is the book for you.recipes like a sunchoke and the roasted almond soup,chessnut soup,eel tortelloni with watercress cream and bitter leaves,and pumpkin gnocchi with crisp pork belly seared squid and peanut milk.only down side not every recipe has a picture,but the photos yhat are in this book are beautiful.A must have and my favorite book

"Cook the sauce another minute, then add just a touch of olive oil," urges Daniel Boulud in his kitchen at Café Boulud in New York City. "Not too much. That's it," he exclaims. His voice carries his passion as he swirls the copper pan holding the finished dish. Over the tops of his glasses he assesses the color and takes in the aroma of the sauce. Then he brings a few drops of it to his lips. After thirty years of cooking in France and America, the chef knows what he wants. "I'm looking for balance," he explains. "A hint of herb, a little acidity -- sweet seafood needs a bit of sharpness -- and all the brininess and flavor of the scallops." It is a simple but perfect recipe and it has been given all his attention, commitment, and talent -- as have each of the recipes in this simple but perfect cookbook.

This is one of Alice Waters' early books, and it shows, as compared to the later ones. Many of the recipes are complicated, and involve ingredients that are not easy to come by, even in NYC. I read it more for amusement. The later books (Vegetables, Fruit, Cafe), are much more user friendly and result in great dishes. I wouldn't recommend this to someone new to her philosophy of cooking, or who doesn't have serious kitchen experience.

There's a special reason we go to the books of the great chefs. It's not to throw a meal together in 2 minutes, or to make sure we will find a dish we can cook with no trouble in two pans in our kitchens at home. It's to look inside an imagination and see what someone can achieve with ingredients and passion when it's what they do all day, every day, with devotion.

As Nigella Lawson said about another writer, "I often cook, if not directly from it, then inspired by it (which is more telling)". This is a truly inspiring work, one you will go back to again and again. From the buckwheat crepes with glaced fruit and eau de vie, to the amazing amazing fish soup, simple dishes with corn and over the top reworking of french classics, the judgement of flavours and textures is perfect. Ignore Water's fetish about perfect lettuce, read it, and just go to the kitchen. 10 stars out of five, the best of all the Waters books.

WOW-The Very Best Cookbook of any cuisine 5 out of 5 stars.

I became interested in cooking when I moved out of the dorm in 1970. The quest for good food led to a life-long passion for honest good food. The French approach eating with a sincereity Americans lack. Julia has been able to present classic French Cuisine to generations of Americans. This set of two volumes contains the essence of French cooking that will serve as a foundation to wherever one travels on the food road. Mine is almost disentegrating from years of loving use, and I am replacing one for the library, but plan to continue to use my dog-eared friend!

To me this book is irreplaceable, so I'm ordering a new one. 5 out of 5 stars.

With the help of this book, I taught myself to cook using the basic French cooking instructions in the book. Thirty some years later, after two-year's work/study in a small (then non-accredited) cooking school, I still refer to it. I refer to it for many reasons, least of which is to jog my memory. My ancient copy (circa 1960?) is coming apart at the binding, so I need to replace it. This book is inspiration!

I discovered this cookbook several years ago and, at least gastronomically, it changed my life forever. The recipes are broken down into the absolute simplest steps possible. The sauces are phenomenal. One can finally appreciate the notoriety that French cooking has (deservedly) earned by preparing and tasting any of these recipes. Julia has confirmed me as a French cooking fan!

One of the most influential painters of modern times, Claude Monet lived for half his life in the famous house at Giverny. It was after moving here in 1883 with his future second wife, Alice Hoschedé, and their eight children that Monet's work finally achieved recognition. His growing success meant that he was able to indulge his passion for comfort and good living. Family meals, special celebrations, luncheons with friends, picnics: all reflected the Monets' love of good food. Just as the inspiration for many of Monet's paintings was drawn from his beloved gardens and the surrounding Normandy landscape, so the meals served at Giverny were based upon superb ingredients from the kitchen-garden (a work of art in itself), the farmyard, and the French countryside. A moody, reserved, and very private man whose daily routine revolved totally around his painting, Monet nevertheless enjoyed entertaining his friends, many of whom were leading figures of the time. As well as his fellow Impressionists -- in particular Renoir, Pissarro, Sisley, Degas and Cezanne -- other regular guests included Rodin, Whistler, Maupassant, Valery, and one of Monet's closest friends, the statesman Clemenceau. They came to dine in almost ritual form, first visiting Monet's studio and the greenhouses, then having lunch at 11:30 (the time the family always dined, to enable Monet to make the most of the afternoon light). Tea would later be served under the lime trees or near the pond. Guests were never invited to dinner; because Monet went to bed very early in order to rise at dawn. All the guests were familiar with Monet's rigid timetable. The recipes collected in his cooking journals includedishes Monet had encountered in his travels or had come across in restaurants he frequented in Paris as well as recipes from friends, such as Cezanne's "bouillabaisse" and Millet's "petits pains." I suggest that if you live in the typical USA city or town you do not read 'French Cheese'. It will turn you into a cheese snob and ruin any appreciation you currently have for cheese sold in most USA environments. Since reading this very informational 'French Cheese' book, I have yet to find a good 'live' cheese within an one hour drive plus an hour ferry ride of my home. This commute has driven my cheese costs through the roof. My wine costs are now at new heights too, as the suggestions for compatible wines are so interesting. Now my typical day is to get up very early, catch the morning bus (or drive) to the ferry terminal; take the ferry to the city; then walk a distance to a farmer's market area where I can find cheese and wine within a respectable distance from each other. I find a cheese that is still 'alive', look it up in the book, see what wine the 'French Cheese' book recommends, then go to one of the wine shops in the area and try to find that wine. If I cannot find the wine, back to the cheese shop to see what else they have that matches up with one of the cheese / wine recommendations in the 'French Cheese' book. By the time I get all this done it is time for lunch. I go to the one of the local bakeries nearby and get some 'appropriate bread' to go with some of the cheese and wine I purchased, sit down somewhere and have lunch. Then it is time to head for home. It will take me another couple of hours to get home, so it is just in time to start a dinner of some kind, (which is usually based upon one of 'French Cheese' book's cooking with cheese recommendations). I am also afraid that my travel expenses to Europe (France in particular) are going to increase dramatically since most of the cheeses in the 'French Cheese' book are not exported, (and there are so many cheeses to try). I would write more, but I am running late for the ferry. I wish I had never read this damn book.
