This is a richly descriptive book organized mainly by geography. Cataloging a colorful cook's tour of very diverse regional cuisines. He proves that there is much more to being a traveler, than sightseeing. The differences in geography, history, and culture make up the foundation of a peoples cuisine. From less known wines and dishes to the well cherished ones. What to order and where is all here. The depth of his knowledge of Italian food isn't equal to that he showed in "The Food Of France." Ex: The chapter on Liguria was choppy, and the very chapter titles were not as precise as in the aforementioned title. With France he used names of what the regions main cooking fat was. Here he used the names of historical peoples "Saracens, etc that contributed to the areas cuisines." Still an excellent read.

Root, who made his living as a foreign correspondent and has written several volumes on his penchant for food, is an excellent guide whose descriptions will convince globetrotters that there's much more to travel than sightseeing. Along with The Food of France, this book won the 1990 James Beard Cookbook Award.

Italy, a country half the size of Texas, is composed of 20 regions, each with its own distinctly marvelous food. In Rustico, author Micol Negrin offers 10 recipes from each region--from the Alpine Val d'Aosta to the southernmost islands of Sicily and Sardinia. Other cookbooks serve up Italian regional dishes, but few American ones, if any, provide such a sweeping tour of authentic fare. Readers will be captivated instantly by dishes such as Lombardy's Butternut Squash Gnocchi in Rosemary Butter; Emilia-Romagna's Veal Roast Stuffed with Spinach, Pancetta, and Frittata; and Latium's Pike in Velvety Egg-Lemon Sauce, among many others--appetite-whetting food that cries out to be made. The key to Negrin's success is that she has chosen her recipes beautifully, and has presented them accessibly, illuminating relevant techniques and ingredients throughout (Negrin encourages cooks to find the real stuff, but also offers sage substitution advice). She also provides fascinating cultural illustration (for example, cheese production and meat curing throughout Italy are complementary activities, as the former means excess whey which, combined with bran and corn, becomes perfect porcine nourishment).

The rustic dishes range from antipasti to dolce, and include more familiar "specialties" such as Tuscany's Summer Bread and Tomato Salad and Milan's Saffron Risotto, and the excitingly unexplored, such as Molise's Hand-Cut Pasta Squares in Asparagus Cream and Apulia's Orecchiette with Wilted Arugula and Tomatoes. Baked goods are particularly irresistible and include Basilicata's Smoked Bread with Sweet Onion, Tomato and Basil, and herb-showered Griddle Bread from Romagna. Beautiful book, great recipes...except for one: the pizza dough recipe is nothing like what they use at the Chez Panisse Cafe. After several frustrating attempts to try and duplicate the pizzas that I have eaten so many times, I called the restaurant, and they admitted that the recipe in the book was not the real McCoy. Without it, what's the point? Side note: there is a pizza dough recipe in Rogers and Gray's The Cafe Cookbook that is much closer to the original...

This book was my permission to experiment 5 out of 5 stars.

This book, originally published in 1984 was a major influence on the way I cook. It not only gave me the knowledge to try new and fresher ingredients, but it's writing enabled me to visualize that I could really improvise in the kitchen. Every recipie I have made from this book has been fabulous, and the roasted new potatoes with pesto are the absolute bomb. For the recipies, and the creativeness that Alice Waters encourages, no serious cook should be without this book.

el libro es pequeño, de 120 paginas, pero viene con fotos grandes a todo color y con recetas ricas y diferentes, me gusto mucho, tiene una buena clasificacion de recetas: tramezzini, crostini, bruschetta y panini.

Naples gave the world pizza and spaghetti with tomato sauce. In Naples at Table, Arthur Schwartz reveals the unexpected breadth and depth of dishes to be enjoyed in Naples and throughout Campania, the rich region where this culinarily underappreciated city is located.

Campania is the home of mozzarella. In fact, by Italian law, only cheese made from the milk of the water buffalo of Campania should be bear this name; the cow's-milk cheese we call mozzarella is more rightly called fior di latte, "flower of the milk."

To most people, southern Italy is the land of red sauce, from the light salsa insalata, made with raw tomatoes marinated in olive oil and seasoned with salt and basil, to hefty, long-simmered, meat-flavored ragu. Not only are the soups tasty and inventive; but they are sensible and nutritious. They require little time and ingredients that are neither exotic, nor hard to find. Most recipe books are loaded with expensive ingredients that necessitate driving 20 miles from your home, and that you use only for one particular recipe. I want recipes that use inexpensive stuff I have on hand, or will have no trouble finding. This book meets those requirements. I read cookbooks like other people read novels, and this is the best cookbook I've ever had. Now that he's conquered the soup pot, Joe needs to move on to pastas and more.
