Best Italian Cookbook EVER !! 5 out of 5 stars.

I visited Santa Ynez Valley very often but wasn't able to do it the last 10 years. So, I mist the oppurtunity to visit the Trattoria. But I promised to myself to do in the future. For now I enjoy the Cookbook. Is the best of ALL my Italian Cookbooks. I love the Photos. A lot of it (I don't like Cookbooks with few or no Photos because I have to SEE how it looks). Photos are from done Dishes or People, the Restraunt, Wines etc.. I love to cook but sometimes I have times I don't like to do it. But after I read the Book I had to make a List for Ingridients and can't wait to start. You got it all: Appetizer, Pasta, Fish, Poultry, Meat and Desserts. When you see the Photos the Food looks like you need to be a Chef to cook it but when you read the "how to do it", it's easy to understand and to do it. No exotic Ingridients. If you cook Italian Food you will have the stuff in your Pantry. The Book is a great Gift for People who like to cook or for yourself.

Beautiful book, great recipes...except for one: the pizza dough recipe is nothing like what they use at the Chez Panisse Cafe. After several frustrating attempts to try and duplicate the pizzas that I have eaten so many times, I called the restaurant, and they admitted that the recipe in the book was not the real McCoy. Without it, what's the point? Side note: there is a pizza dough recipe in Rogers and Gray's The Cafe Cookbook that is much closer to the original...

This book, originally published in 1984 was a major influence on the way I cook. It not only gave me the knowledge to try new and fresher ingredients, but it's writing enabled me to visualize that I could really improvise in the kitchen. Every recipie I have made from this book has been fabulous, and the roasted new potatoes with pesto are the absolute bomb. For the recipies, and the creativeness that Alice Waters encourages, no serious cook should be without this book.

Not only are the soups tasty and inventive; but they are sensible and nutritious. They require little time and ingredients that are neither exotic, nor hard to find. Most recipe books are loaded with expensive ingredients that necessitate driving 20 miles from your home, and that you use only for one particular recipe. I want recipes that use inexpensive stuff I have on hand, or will have no trouble finding. This book meets those requirements. I read cookbooks like other people read novels, and this is the best cookbook I've ever had. Now that he's conquered the soup pot, Joe needs to move on to pastas and more.

Hearty and simple Italian fare 5 out of 5 stars.

With simple dishes like Fish in a Wine and Lemon Sauce, Lamb Braised in Aged Wine Vinegar (studded with garlic and pancetta), Tiny Meatballs in Chicken Stock, Pugliese Baked Rice with Potatoes and Mussels, and Oven Baked Penne with Eggplant, Jenkins ("Flavors of Tuscany," "The Essential Mediterranean") shares the traditions of Southern Italy.

She gives us foods from Sicily, Campania, Calabria, Basilicata, and Puglia, from breads and antipasti through dessert, and places each dish in context with a bit of local color, technique and history.

This is hearty, simple fare, but that doesn't mean quick. There's a certain amount of patient fiddling with Crispy Fried Rice Balls with Ragu and various fried croquettes. Pasta with Sardines and Wild Fennel requires cleaning the sardines, and store-bought crust is not even a rumor for any of the mouthwatering savory pies like Swordfish and Zucchini, Tuna and Tomato or Cheesy Sausage and Ricotta Calzone.

Traditionally meat is not the center of a Southern meal (unlike Italian-American, which Jenkins suggests could be classed as another region of Italian cooking), so Jenkins includes a lot of special occasion or Sunday dinner recipes in her meat and poultry section. This does not mean fancy: Spiced Braised Beef, Pot Roast of Veal with Anchovy Caper Sauce, Rabbit Braised in White Wine.

Boxed comments on techniques, traditions and ingredients are found throughout. The book concludes with a chapter of advice for the traveler and a list of recommended regional restaurants.

This is a book for those who love the heady aromas and leisurely approach to timeless Italian cooking.

These are great authentic Italian recipies. Some are straight from Italy, some are recipies made after people immigrated here using what was available. I'm Sicilian, and I grew up with homestyle Italian cooking, and this is it.

I don't know how the person who was disappointed with it could claim it wasn't "authentic". Maybe they were comparing it to restaurant food. Well, Italian restaurants are like Chinese restaurants in what they cook for the customers is usually much different than what they would cook at home. So, maybe the misconception stems from there.

Trust me. It's authentic. The only better book I've seen is The Sicilian Gentleman's Cookbook (of course, being Sicilian I'm biased) which I believe is out of print. My Scottish-German wife now cooks like my grandma used to :-)

This book reminds me of an Italian version of The Joy of Cooking. Straightforward recipies from Nona's kitchen. No frills, just good eats.

This book brings back wonderful memories for me! I was fortunate enough to grow up two doors away from an Italian lady, Julia, who made wonderful homemade pasta dishes. She made huge family meals and would share the leftovers with my family! I have been a lover of Italian food ever since. I don't live near Julia anymore, so she suggested that I buy this book and make my own Italian meals. I am happy to report that the recipes are simple, delicious and reminiscent of the Italian cooking I grew up with. I would recommend this book to anyone who loves authentic Italian food.
