Editorial Review:

Just when we thought we knew everything there was to know about Tuscany, along comes Beth Elon–cookbook writer and 30 year resident of a small village at the foot of the Appenines–who takes us along the back roads and through the ancient hill towns to remote restaurants that are for the most part overlooked by tourists and known only to the locals. At each restaurant the cooks share their highly personal recipes for regional dishes made with local ingredients.

With this guide in hand, you’ll not only know where to dine, but what to order when you get there. Each regional section begins with illuminating and absorbing explanations of what makes Tuscan cooking so unique: location, location, location. You’ll read about a bean so beloved by a village that it’s been elevated to cult status–but that is totally unheard of a few kilometers down the road; the specialty of the Zeri Valley, a milk-fed aboriginal baby lamb, that is almost unknown elsewhere in Italy; the endless array of vegetable tarts found only in Lunigiana and Garfagnana.

Elon has organized ten itineraries that also include stops at gourmet shops, food festivals, greenmarkets, and private kitchens. Along the way, she points out significant architecture, historic sites, churches, art, museums, and points of interest in the memorable landscape. The indispensable travel information in this guide is enriched by the author’s deep personal knowledge of the history and legend of the region–and her delightful voice and beautiful writing.

Editorial Review:

When two great chefs—buddies and business partners for twenty-odd years—decide to write a cookbook about the simple Italian food they love, you get decades of experience, sage advice, and wonderful recipes. And you also get a few great arguments thrown in along the way, as Pino and Mark debate the right way to make everything from meatballs to pot roast to eggplant parmigiana.

Of course, the issue is not whose recipes are better—Pino and Mark would be first to praise each other's food. And it's not about a right or wrong way. It's about preferences in ingredients, technique, and approach.

Pino, a native of Tuscany cooking in America, is a purist. His food is grounded in tradition. Mark, a New Yorker, loves the Italian-American cooking he grew up with. Each has his favorite recipes (see back cover) and his own way, but they're bonded by a shared philosophy that the simplest food is the best, and a shared desire to please families, friends, and loyal customers with food that makes them happy.

So here are nearly 150 delicious recipes representing the best of Italian and Italian-American cooking from not one master but two, with text that teaches, dialogue that's lively, and photography that's gorgeous. There's no question about who reaps the rewards of their friendly competition—it's the reader, hands down. Whether you make...
  • Pino's Oven-Braised Lamb and Artichokes with Oven-Roasted New Potatoes and Spring Onions or Mark's Braised Holiday Capon with Sweet Potatoes and Roasted Brussels Sprouts
  • Mark's Chopped Roman Salad or Pino's classic Caesar Salad
  • Pino's Mushroom Risotto or Mark's Farro with Button Mushrooms, Cherry Tomatoes, and Goat Cheese
  • Mark's Pears in Vin Santo with sweet Polenta or Pino's Neapolitan Cheesecake

...the end result is the same—unpretentious food that is timelessly pleasing. This is home cooking at its very best.

Italian American at Its Best 5 out of 5 stars.
4 of 4 people found this review helpful.

I know that Italian American cooking is out of style, but it still puts a smile on my families face. My brothers, our wives and children rave when I cook Ma's food. But I have a secret, I don't cook Ma's food. She was unfortunately, gone before I got her recipes. I cook Marguerite's food. I bought this book in the late 80's and it fell apart from love. This book will bring back memories or make them, five stars.

Authentic recipes 5 out of 5 stars.

I love this cookbook. The recipes are excellent--the book is worth the value for the gnocchi recipe alone--just like mama's.

perfect, easy, real italian 4 out of 5 stars.

perfect, easy, real Italian. Recipes are no fail. When I lived in the North end in the 90's (pre nouveau) everything tasted this good. But be careful, the Pignoli cookie recipe calls for 1 pound of pine nuts, (thats like $25!) You only really need 5 oz or so. Must be a misprint.

Editorial Review:

Boston's North End is legendary for its Italian-American neighborhood. This cookbook celebrates the delicious fare--from antipasto through dessert--that is served in the restaurants and homes of this area. With many recipes from her own family, Marguerite DiMino Buonopane captures old-world cooking as well as the present-day traditions of the North End.

Editorial Review:

Arthur Avenue winds its way through the heart of the Bronx. Known to many as the "real Little Italy," the storied Arthur Avenue neighborhood has been home to a vibrant community of Italian-Americans for over a hundred years. Today, this area continues to thrive as visitors and residents stop to buy a fresh, crusty loaf of bread; to enjoy a meal at Mario's Restaurant; to dawdle for a while at Randazzo's raw bar on a warm summer afternoon; or to hear Mike's Deli owner Michele Greco belt out an aria from Rigoletto and spellbind his customers with tales of the Avenue's past.

Now, for the first time, the residents of Arthur Avenue invite you to experience the magic of their kitchens and share the flavors of their family tables. Passed down through generations, their delicious recipes are time-tested, tried, and true -- and ready for any kitchen. They include:

• Sicilian Baked Ziti • Yankee Stadium Big Boy (The Greco family's famous grinder that was rated one of the best in the city by the New York Times) • Osso Buco • Olive Ciabatta • Italian Ricotta Cheesecake • Cannoli • and more

The Arthur Avenue Cookbook also invites you to savor the memories of the neighborhood's most colorful residents, restaurateurs, and shop owners, and those of their families -- many of whom have lived in the neighborhood since it first came into being. Meet Mario Borgatti, the noodle maker who has been there for more than eighty-five years. Anthony Artuso, Sr., takes his bakery business so seriously that he went seventeen years without a vacation -- in part, to ensure that each bride and groom got the perfect wedding cake. And Mike Rella, president of the Arthur Avenue Retail Market, remembers learning English by working in a butcher shop, where he's now a partner with his uncle Peter Servedio.

This cookbook also provides a guide to the pastry shops, delis, restaurants, and other famous and lesser-known gems that line Arthur Avenue. Gorgeous photographs, extraordinary characters, and enticing dishes make The Arthur Avenue Cookbook an irresistible addition to any kitchen.

All you need is this book and a lace curtain in the window 5 out of 5 stars.
12 of 12 people found this review helpful.

I have been cooking with 'Bistro', Patricia Wells' book of simple French recipes, for several decades now. I have recently been converted to her 'Paris Cookbook'. So what stopped me from buying her book of Italian trattoria cooking?

Two words: Marcella Hazan.

I am addicted to Hazan's 'Essentials of Classic Italian Cooking'. It's clear. It produces restaurant-quality meals that take only modest effort. And "fancy" is the last thing it is.

I thought I just didn't need another Italian cookbook.

But now, fourteen years after it was first published, "Trattoria" --- a bargain at $13 --- is finally in the house. And, more to the point, in the kitchen. And I am chastened.

You want simple? This is it. Easy? Forget about it. Organized? Buying the book could be the last time you'll ever need to think about an Italian menu.

Why? Because the fact is, you really don't want rich and fancy. You want a trattoria --- an uncomplicated, modestly decorated, family-run establishment featuring traditional regional fare. You drink the house wine. You tend to order whatever special is being pushed. And you are likely to leave satisfied though not sated.

Patricia Wells recreates that experience here.

Editorial Review:

Whether it's a bustling eatery in the heart of Florence or a tiny alcove tucked away on a side street in Venice, the trattoria is where Italians go for robust flavors, great friendship, and good times. Patricia Wells' Trattoria now feeds America's passion for Italian food with 150 authentic recipes. Savor a Fresh Artichoke Omelet, succulent Lamb Braised in White Wine, Garlic, and Hot Peppers, a hearty portion of Lasagne with Basil, Garlic, and Tomato Sauce, or a luscious Fragrant Orange and Lemon Cake, and much more. This essential cookbook of Italian trattorias presents a full range of homemade recipes for antipasti, soups, dried and fresh pastas, polenta, seafood, poultry, and meat, with special chapters on breads, pizzas, and desserts. Come explore the heart and soul of Italian cooking in Patricia Wells' Trattoria.

Seriously - the best cookie book you can buy 5 out of 5 stars.
2 of 2 people found this review helpful.

If there was a rating higher than 5 stars, this book would get it! Every cookie recipe I have tried has been a hit at family and work functions. And easy!! Simple instruction, readily available everyday ingredients make this cookbook a GREAT stocking stuffer for the holidays. I've owned this book for several years and LOVE IT. Recently purchased another copy for a relative. You will be able to toss the bulky 500+ page cookie book that is probably stored away in a cabinet collecting dust and keep this one right on your counter because I promise - it is all you will need!! I have all of her books and they are ALL worth getting.

Editorial Review:

Growing up in a close-knit, Italian American family, Maria Bruscino Sanchez was surrounded by tradition: food, customs, and celebrations from the "old country" were lovingly observed, and if the original meaning was sometimes hidden beneath the patina of a new culture, the respect and desire to stay connected to the past remained. As an adult, Sanchez turned family tradition into her livelihood, opening Sweet Maria's bakery in Waterbury, Connecticut, where she re-created the cakes and cookies of her youth--but with a distinctly American twist. With Sweet Maria's Italian Cookie Tray, Sanchez offers her culinary treasures to an even wider audience; recipes range from drop and molded cookies to filled ones, biscotti and biscuits, taralle and pizelles, and many more. Cookie lovers will find plenty to devour in this compilation of Italian American favorites.

Editorial Review:

Cucina Simpatica brings to home cooks the luscious, lusty food of Al Forno, the acclaimed restaurant in Providence, Rhode Island. Since opening Al Forno in 1980, owners-chefs Johanne Killeen and George Germon have won a loyal following, rave reviews, and many awards for their superb food.

The recipes reflect their down-to-earth style of hearty yet simple trattoria and Italian home cooking. Included are detailed instructions for making their renowned grilled pizza. While Cucina Simpatica is organized by courses—from starters, soups, salads, bruschetta, crostinis, and polenta to pizzas, pastas, grills, roasts, braises, vegetables, and desserts—the authors urge readers to be flexible and make their own choices. A grilled pizza accompanied by a small salad may suffice for dinner. Pasta can be served in small portions as a first course or in larger amounts as the focus of the meal. A platter of roasted vegetables makes a fine meatless meal.

Cucina Simpatica inspires home cooks to prepare the rustic, robust Italian-style food from one of America's finest restaurants.

Editorial Review:

Here is an inspiring, wide-ranging A-Z guide to one of the world's best-loved cuisines. Designed for cooks and consumers alike, The Oxford Companion to Italian Food covers all aspects of the history and culture of Italian gastronomy, from dishes, ingredients, and delicacies to cooking methods and implements, regional specialties, the universal appeal of Italian cuisine, influences from outside Italy, and much more.
Following in the footsteps of princes and popes, vagabond artists and cunning peasants, austere scholars and generations of unknown, unremembered women who shaped pasta, moulded cheeses and lovingly tended their cooking pots, Gillian Riley celebrates a heritage of amazing richness and delight. She brings equal measures of enthusiasm and expertise to her writing, and her entries read like mini-essays, laced with wit and gastronomical erudition, marked throughout by descriptive brilliance, and entirely free of the pompous tone that afflicts so much writing about food.

The Companion is attentive to both tradition and innovation in Italian cooking, and covers an extraordinary range of information, from Anonimo Toscano, a medieval cookbook, to Bartolomeo Bimbi, a Florentine painter commissioned by Cosimo de Medici to paint portraits of vegetables, to Paglierina di Rifreddo, a young cheese made of unskimmed cows' milk, to zuppa inglese, a dessert invented by 19th century Neapolitan pastry chefs. Major topics receive extended treatment. The entry for Parmesan, for example, runs to more than 2,000 words and includes information on its remarkable nutritional value, the region where it is produced, the breed of cow used to produce it (the razza reggiana, or vacche rosse), the role of the cheese maker, the origin of its name, Moliere's deathbed demand for it, its frequent and lustrous depiction in 16th and 17th century paintings, and the proper method of serving, where Riley admonishes: "One disdains the phallic peppermill, but must always appreciate the attentive grating, at the table, of parmesan over pasta or soup, as magical in its way as shavings of truffles." Such is the scope and flavor of The Oxford Companion to Italian Food.
For anyone with a hunger to learn more about the history, culture and variety of Italian cuisine, The Oxford Companion to Italian Food offers endless satisfactions.
