Bread in Italy is rough country loaves with thick chewy crusts and flat disks of focaccia seasoned with the wild herbs of the fields. It is celebratory sweet holiday breads dense with fat raisins, toasted nuts and candied fruit peels. It is "new wave" wave" breads, recently invented by artisan bakers and studded with roasted peppers, sun. dried tomatoes and salty olive paste. It is imaginative multi-grain breads and rolls with tastes and shapes that vary dramatically from region to region.

Recipes for the breads of all these regions, for the comforting rustic soups and salads and appetizers based on them, for breadsticks and rolls, pizza and focaccia, for holiday specialties, for pastries, cookies, cornetti and nut tortes, fruit tarts, cheesecakes and spice cakes and other confections-all are offered in this landmark volume which presents, for the first time in English or Italian, the diverse baking traditions of Italy.

Knowing these regional specialties and the stories behind them is like taking a trip through the Italian countryside. I thought there would be more unique recipes using more vegetables (ie; Spagettie squash, broccoli rabe, etc) and variety of beans not just substituting dairy for soy cheeses.

This is a book to change the world! It certainly changed mine. I was a longtime vegetarian, but I never thought I could love Italian food without dairy and eggs. How wrong I was! If you want a better diet for your health, the planet, and the animals, here it is!!

This review is written from the perspective of someone that has been studying cooking for 25 years, and concentrating on Italian cooking for the last 10 years. I have more than 100 cookbooks on Italian cooking and have traveled to Italy many times. I am a tough critic on Italian cookbooks.

This book begins with a little history of Italian cooking, the outdoor markets in Rome, and the distinct differences in the neighborhoods. Then the book discusses the following topics from a Roman perspective:
Coffee
Pasta
Greens
Pizza
Cucina Ebraica (Jewish Cooking)
Wine
Dolci (dessert)

The recipe section is subdivided as follows:
Antipasti
Primi (first course: soup, pasta, pizza)
Secondi (second course: meat and fish
Contorni (side dishes: vegetables)
Dolci (sweets)

The photography in this book is fabulous. They did a wonderful job of capturing what it is like to walk down the streets in Rome. As you turn the pages each new photo is another little peak into Roman life and food.

The recipes are very authentic. I was pleased to see that the recipe for Carbonara did not include the Americanized version which adds cream. This recipe is for the Carbonara that you would find in Rome. Of the recipes that I have prepared (approximately 50% of the book) all have turned out exactly as I expected them. A few of the recipes are time consuming. But, making homemade stuffed pasta is not something that happens in a flash.

If you are looking for a nice authentic cookbook on the cooking of Rome, written for Americans, you will love this book. My only complaint is that the book left me wanting more photographs and more recipes. Overall, this is an excellent book for those that love Italian cooking.

An earlier edition of this continues to be my favorite Italian cookbook after 15 years. I just purchased a new copy to give to my daughter for her first cookbook.

Every recipe from this book that I've tried over the years has been delicious. There are other great Italian cookbooks out there, and I own some of them, too. I like this one in particular for Caggiano's recipe selection, and its sample illustrations of preparation technique and presentation. The visuals were reassuring when I was new to cooking and entertaining. Now, when I'm deciding on a dinner, this is one of the books I consult out of reflex.

Italian cuisine varies across the penninsula. Most Italian-Americans came from the south. If you are accustomed to southern italian cooking, many of the recipes in this book will be brand new to you, and add a savory variety to your menu.

From appetizers to pasta, polenta, risotto, main courses, vegetables, sauces and desserts, I've made many wonderful dinners with what I call "Biba's book".
