Poland, like France, is a country where people really know food. One can stop at a wayside inn in the country or at a modest restaurant in a working-class city neighborhood and be served a meal worth remembering. Good food is a tradition.

Polish Cookery is an American adaptation of Uniwersalna Ksiazka Kucharska (The Universal Cookbook), long the most famous standard cookbook in Poland. All weights and measures have been converted to American usage, and suitable substitutions are provided for hard-to-get ingredients. The recipes range from the familiar to the exotic and include soups like Polish Mushroom and Barley Soup, Fresh Cabbage Soup, many variations of Barszcz, the famous Polish beet soup, and Sorrel Soup with Sour Cream.

The Poles are very fond of pates, dumplings, and meat pastries. In Polish Cookery, you'll find recipes for Meat Patties, Potato Croquettes, Venison Pastry, Partridge Pie, Game Pate, many variations on the celebrated Pierogi, or dough pockets, and Buckwheat Cakes.

Authentic entrees include Loin of Venison, Roast Wild Goose, Smothered Pike, Turkey in Madeira Sauce. Chicken Casserole with Currants, Smothered Duck in Caper Sauce, Hussar Pot Roast, Tenderloin Smothered in Sour Cream, and perhaps Poland's most famous dish, Bigos, or Hunter's Stew.

To round out the Polish meal, there are recipes for Mashed Turnips and Potatoes, Split Pea Fritters, Stuffed Kohlrabi, Fried Carrots, Mushroom Ramekins, and Pearl Barley with Dried Mushrooms.

I had no exposure to Polish cooking until I got a Polish boyfriend. I ended up with this book and I am now a big fan of Polish food. Who knew there was more than Perogies at the local fair? This book literally has EVERY recipe even a Pole could want and I have been reliably informed that the recipes are very authentic. I know I have enjoyed making many of them and have also been very surprised at how scrumptious the results have been. You could buy this book just for the dessert recipes alone but I love the soups and special hearty foods like bigos. I do wish this book had more photos but if it did, it would impossible to lift. I have found the recipes easy to follow although a bit inconvenient in that the ingredients are listed within the directions. Then again, maybe that is good because it makes me read the entire recipe before I gather the ingredients. Some of these recipes take some time to prepare so you need to read before you make up your menu. I have other Polish cookbooks but I think this is the only one a person needs. A good investment.

A delicious change of pace from our everyday fare 5 out of 5 stars.

I bought this book because of its price. I had no idea how popular it would be with my family. So far, every recipe I've tried has been a big hit. The contents are arranged into seasonal meals, such as "Easter Dinner for 10" and "Winter Brunch for 4." This makes it easy to choose dishes that work well together. In the back are sections on "Vodka Beverages," "Salads," and "Light Polish Fare." The recipes are relatively simple, and full of unexpected, delicious twists. (Who would have thought that horseradish gives just the right punch to carrot & apple salad?) I'm especially impressed by the Walnut Torte and the Cabbage, Leek, and Orange Salad. (My family has actually been taking second helpings of their veggies, thanks to this and other unique salads.) I never knew I could make anything so delicious and different at home. Some of the recipes were a bit time consuming, but most of the labor went into things like peeling potatoes and slicing mushrooms. Once the fruits and veggies are prepared, many recipes are easy and speedy. Just be forewarned that the yields are larger than you might expect. Many dishes for four people could easily feed six or more - and most of the planned meals include more courses than my family can eat in a sitting. However, we've been enjoying choosing a couple of dishes each night, and everything's so delicious that leftovers aren't a problem for long.

Polish Government Secret Sausage Recipes!

In 1945 someone in the newly organized Polish government came up with a brilliant idea of standardizing Polish meat products using traditional time proven recipes. The official list of meat products and sausages was drawn and the Department of the Meat Industry started to work out details. In 1959 the first official guide for making meat products and sausages was issued which was followed in 1960 by a slightly revised version. Then in 1964 the Polish Government issued the final version that covered 84 meat products and 119 sausages. Those manuals reserved for internal use only helped to create the best meat industry that ever existed anywhere and this standardization allowed Poland to produce sausages of high and consistent quality. They were not written by restaurant cooks or college students, but by the best professionals in meat science the country had. The recipes presented in this book come from these manuals and they were never published before. These are recipes and production processes of the products that were really made by Polish meat plants and sold to the public. Most of those sausages are still made and sold in Poland today.

Finally, a cookbook that works! This is so much more than just an ethnic cookbook about Polish food. After years of collecting stodgy, uninteresting and badly written Eastern European cookbooks, it is refreshing to finally come across one that is well written, beautifully photographed and is fully laden with well rounded chapters of recipes that actually work. I recently purchased a celebrity chef cookbook and was so disappointed with the recipes offered that I sent it right back. It seems to me the price tag on those celebrity books is inversely related to the content and value. Not so with Chef Baruch's New Polish Cuisine. At $32.00, it is a real bargain. As a grandmother of 12, it's highly admirable that this accomplished young chef took it upon himself (without any help from a big publishing company as the book is self-published) to lighten up, revitalize and Americanize a cuisine that is generally heavy and fat laden. Most Polish cookbooks I own were published in the 60's with recipes and techniques from the dark ages and have never held any interest for my children or grandchildren. However, Mr. Baruch's book has renewed my family's interest in the food of their ethnic heritage and the history related to it. The 3 pound, beautifully hard bound book with full color pictures is this grandma's favorite gift to give. Besides the fabulous recipes, the stories and introductions to each chapter are heart warming and bring comfort. Kudos to Chef Barch for bridging the generation gap!

This book offers a spectacular introduction for the uninitiated, and a refreshing look at the classic dishes for those who are familiar with the cuisine of Poland. Author Ewa Michalik doesn't try to overwhelm with the sheer number of recipes. Quite the opposite--she selects some signature dishes and some lesser known ones, creatively updates most of them, and complements each one with page-sized photograph. With slightly more than 60 recipes, this book is perfect for the beginner who is curious about Polish cooking. At the same time, the quality of the recipes will appeal to the more experienced reader. Finally, the beautiful presentation makes The Food and Cooking of Poland as much a feast for the eyes as for the palate.

I rather liked this book for two reasons. 1) The way it is organized and 2) the fact that it is not a rehash of how to cook kielbasy and pirogi. (In fact there is only one kielbasy recipe lsited.) - The author(s) describe a period in Polish history, all of which is very informative, and then give you recipes for the foods that were prominent at that time. As a result, you don't get the standard list of Polish recipes, but rather a unique package of traditional food, going way back. A very nice arrangement and very nice recipes. Easy to read (very interesting) and printed very nicely, and it makes you hungry just reading it. Also note: since it goes back in history, it does ALSO contain those special Lithuanian dishes.

Not many people realize how *fine* is Polish cooking - and how sophisticated are traditional Polish dishes. This book dispels many myths - for example, it is NOT the kielbasa, cabbage rolls and pierogi what is the best and most celebrated food in Poland.

This is more than a cookbook - it is a wonderful history book filled with an amazing mix of culinary facts written in very entertaining style. Authors Maria Lemnis and Henry Vitry are very well known Polish food columnists (as celebrated as Julia Child is in the US). They are brilliant writers who understand Polish food better than any other cook book writer.

It is a pure delight. Definitely the best book on Polish food in English language. Written for people who can appreciate a good story, fine writing and good food. It has not as many recipes as other cookbooks mentioned here, perhaps 50 recipes or so. But it is the quality of recipes that counts.

This book should be staple in every household aspiring to cook a Polish dish now and then - it is carefully edited and illustrated and makes also a PERFECT gift!

Made my first-ever stuffed cabbage leaves from this book (but added lamb, as the beef-only sounded so blan.) Got a thumbs up from my Polish relatives -- so much so, they asked me to make more at Easter. Who knew?

They have some variations on same receipe which is nice to try difference. The instructions are not crystal clear and require a few re-reads to get right. Completely agree that photos would be nice . . .maybe in the next addition?
