Editorial Review:

This cookbook from Zuni Pueblo, in western New Mexico, is a unique compendium of recipes, folklore, and even linguistic information, compiled for the first time by Zuni people and written for both Zuni and non-Zuni readers. Included are recipes for regional specialties like posole and blue corn pancakes, native delicacies like wild spinach, sheep stomach soup, and prairie dog, and dishes that could come from any part of the United States, such as sourdough bread and roast turkey. All the recipes are from Zuni cooks, and the book includes illustrations by young Zuni artists along with historic photographs from the pueblo archives. In addition to recipes, the book includes an introduction to the Zuni language as well as fascinating information from Zuni elders on such subjects as planting customs, using an outdoor oven, sheep herding, and how to cook and eat locusts. Dietary analyses make the book useful for diabetics.

"The recipes in this book will no doubt be a practical resource for cooks, but if you read and imagine, you might hear grandma's shuffling feet on the wrinkled linoleum floor at daybreak, crackling fires in woodstoves, children's voices, and elders speaking archaic Zuni telling how it was, how it should be."--from the Foreword by Jim Enote, Pueblo of Zuni

Editorial Review:

Pompano tamales. Shrimp enchiladas. Candied sweet papaya. These are some of the foods whose recipes reside in the pages of Nancy and Jeffrey Gerlach’s Foods of the Maya. The authors have spent years traveling throughout Mexico, familiarizing themselves with the cultures and cuisines of the people they have encountered. They created this cookbook to bring the flavors of the Yucatán to tables north of the border.

In an easy-to-follow format, Foods of the Maya provides handy background and travel information about the region and some of its ruins before dipping into the ninety-one recipes included here, organized according to meal course. There are recipes that will suit most everyone’s palate, from sauces and salsas to soups and sausages; from vegetarian and meat appetizers and main dishes to simple drinks and desserts. Each section begins with a brief description of the course and the types of food involved. The recipes are clear and easy to understand—one need not be a trained chef with a vast kitchen to create a tasty Yucatecan meal.

Foods of the Maya incorporates an array of cooking tips and techniques and a brief glossary of terms to help in food preparation—the authors have ensured that ingredients for their recipes are readily available at local food stores. This edition also includes an introduction by historian Jeffrey Pilcher which helps familiarize readers with the history and cultures of the Yucatán peninsula. So the next time you get a hankering for something different, you might consider cooking up a platter of Yucatán ribs or preparing a bowl of chayote pudding. Take a short trip to the Yucatán—without leaving your kitchen.Nancy and Jeffrey Gerlach live in Albuquerque. Jeffrey Pilcher teaches history at The Citadel.

An excellent Take away 4 out of 5 stars.
8 of 10 people found this review helpful.

This book does exactly what it says on the cover, namely it allows you to cook your favourite Indian curries at home. The easy to follow recipes are complemented by useful tips on preparation techniques. Bore your friends with facts about the origin of their favourite dish but most of all wow them with your culinary prowess. I was stuck on a remote Antarctic island for two years and despite being over a thousand miles from the nearest take away through this book I managed to satiate my curry head.

Great Cooking Made Easy 5 out of 5 stars.
9 of 9 people found this review helpful.

What a great book! Ms. Romero has included some fantastic, authentic dishes that are tasty and easy to prepare. I'm a guy and not all that gifted in the kitchen, but her book makes me look like a hero with all of my family and friends. I told my wife that my recipes are family recipes--I just didn't tell her whose family.

The family history in the book is extremely interesting, too.

You should buy this book and get cooking.

Editorial Review:

In this special cookbook, Regina Romero recalls the traditional Hispanic cooking in the home of her grandmother, Flora Duran Romero, famous for her cooking for six decades. Over fifty classic recipes cover a wide spectrum of delicious foods: chile verde caldo (green chile stew), fideos (a delicate noodle dish), empanaditas (little turnovers), natillas (a heavenly meringue dessert that melts in the mouth), and dozens more. All ingredients and directions have been carefully updated to include modern techniques and current sources of supply. Everyone can make these dishes--even the reduced -fat tamales! Regina Romero has combined the recipes with a heart-warming memoir of this remarkable family. The result is a unique contribution to Southwest cooking.

An excellent guide - both India and Indian cuisine! 5 out of 5 stars.
9 of 9 people found this review helpful.

I have loved Indian cuisine and culture for many years - and have read many books on both.
In my collection, this book stands out as a truly great guide to authentic Indian cookery, and to the history and culture of India itself.
Keith Floyd opens this book with a travelogue which is a joy to read. Profuse use of photographs create a great atmosphere as you see the places described come alive on the page.
Next, we are introduced to a range of dishes (both vegetarian and non-vegetarian), and those I have tried I have enjoyed a great deal.
In summary, this is a great book, and one of my favourite guides to India and indian food. If you are looking for a book on either, you could do a lot worse than to buy this book! I very highly recommend it!
One sentance review: "A great Indian cookbook that is a joy both to read and to use!"

Editorial Review:

This title accompanies the eight-part television series for Channel 5 of the same name. In the series, Keith Floyd turns his attention to the remarkable continent of India, traveling throughout the country, comparing and contrasting the different food styles. The book depicts his journey from the green hill stations in the north of the country, through the bustling markets of Delhi, Calcutta and Madras, to the lush rice fields of the south. He cools off in the sparkling waters of the Indian Ocean and takes tiffin with sari-clad memsahibs. He uses the local specialities - the spices, mustard greens, dals, ghee, lotus seeds, almonds, and paneer - to create pasandas, kormas, koftas, bhajiyas, and all manner of spicy curries. Throughout his travels, Floyd meets the local people, shops in local markets and cooks according to local customs.

Editorial Review:

From the organization that brought us The Black Family Reunion cookbooks comes The Historical Cookbook of the American Negro, a fun, richly brewed collection of recipes, historical facts, photos, and personal anecdotes. First published in 1958 by the National Council of Negro Women, it includes contributions from members in thirty-six states plus the District of Columbia and offers exceptional insight into American history and the African-American community at the time of its publication. As John Hope Franklin (whose own family owns a copy of the book) points out, much of the cultural information in the cookbook has never been passed down to successive generations.

Arranged according to the calendar year, the cookbook opens with a cake to be baked in celebration of both New Year's Day and the Emancipation Proclamation. Scattered among the recipes one finds excerpts from documents such as the Gettysburg Address and the Universal Declaration of Human Rights. Tributes to well-known figures like Harriet Tubman, Phillis Wheatley, and Booker T. Washington appear alongside brief bios and recipes in celebration of important but obscured figures. This delightful collection of delicious recipes helps us commemorate African-American history throughout the year.

Terrific recipes! 5 out of 5 stars.

My Mom gave me this book when I moved out and got my first apartment. I wasn't much of a cook then, but I learned many easy, traditional dishes from this cookbook. The directions are well-written and easy to follow, and this book has the only successful recipe for Prickly Pear Jelly I've ever tried!

Great book, even for armchair bakers! 5 out of 5 stars.
5 of 5 people found this review helpful.

I adore this cookbook! Spiral-bound, lie-flat pages; many gorgeous color photographs of the baked goods as well as historical photographs of cowboys cooking and eating; and a great layout are just the beginning. Every single recipe has a several-paragraph commentary about how the recipe came into being or the differences between the original Old West and updated recipes. Scattered throughout the book are features on various topics such as cooking equipment in the Old West, chuck wagons, and availability and use of various foods. I also enjoyed the uniqueness of the recipes. Never before have I seen recipes for green tomato pie, gems (similar to muffins), or spotted pup (a pudding). However, the book doesn't neglect more common fare such as sourdough bread, cherry cobbler, bread pudding, biscuits, etc. Additional features include an Old West cooking dictionary, a comprehensive index, and a bibliography of books about food and life in the Old West. If you love baking or the Old West, you MUST get your own copy, because I'm not going to lend mine to anyone!!!
