Editorial Review:

Irma Rombauer collected recipes from friends for the first Joy of Cooking, and published it herself. For this sixth edition, the All New, All Purpose Joy of Cooking, Ethan Becker, grandson of Irma and son of Marion Rombauer Becker, worked with Maria Guarnaschelli, senior editor and vice president at Scribner's. Together, they called on top food professionals to produce a Joy that reflects the way we eat today.

Five new chapters satisfy today's love of pasta, pizza, noodles, burritos, grains, and beans, including soy. The roughly 3,000 recipes, most revised from earlier editions, give the food processor and microwave their due. Interest in ethnic flavors, grazing, leaner meats, more fish, and less fat are reflected, and old standbys such as Tuna Noodle Casserole and Fried Chicken are updated. Information on canning, jams, pickles, and preserves is replaced by expanded material on grilling, barbecuing, flavored oils, and vinegars. Also gone is the personal voice of the old Joy. The new Joy of Cooking is comprehensive for today's cooks. Time will tell if it remains the long-loved, dog-eared kitchen companion and teacher Joy has been since 1931.

Editorial Review:

Sequel to the bestselling Boy Meets Grill, Boy Gets Grill marks Bobby Flay's return to the fire with his first grilling book in five years.

The connection between Flay and fire began when, as a kid growing up in New York City, Bobby learned to grill during trips to the Jersey Shore. As a young chef starting out, he always wanted to work the grill station, and when he opened his first restaurant in 1991, he called it Mesa Grill. The word grill was firmly hooked to his name. And then, the Food Network called.

Like his highly rated prime-time grilling show, Boy Gets Grill is set on a rooftop in Queens overlooking the Manhattan skyline and celebrates the explosive flavors of his hometown's diverse neighborhoods. This is Bobby Flay's New York, and everywhere he goes, there is great grilling: from Chinatown to Astoria, Queens (Greek food); Arthur Avenue in the Bronx (for old-style Italian); and lower Lexington Avenue (better known as Curry Hill, for Indian); and the flavors go on and on.

The question isn't "Can I grill this?" but "Is there a reason not to grill this?" Usually the answer is "Go ahead and try it!" Throughout, Bobby gets more and more out of the grill, making life easier and encouraging everyone to think big, have fun, and get their hands dirty.

The grill is no longer for weekends only. The recipes in Boy Gets Grill are the quickest and easiest that Bobby has ever created, making the grill a perfect vehicle for busy weeknight meals. Flavors are (pleasantly) challenging. For the simplest of suppers, try Grilled Quesadillas with Sliced Steak, Blue Cheese, and Watercress; Grilled Shrimp with Triple Lemon Butter; Grilled Tuna with Red Chile, Allspice, and Orange Glaze; or a Pressed Cuban-Style Burger.

Boy Gets Grill is also full of great ideas for entertaining and enjoying the company of family and friends. In the "Big Parties" section, Bobby takes hosts and hostesses through every step of preparation for a Fish Taco Party, Burger Bar, and a Skewer Party (perfect for backyard cocktail parties where one hand stays free to hold a glass). There are even recipes for brunch on the grill.

The book includes cool drinks to sip while the fire gets hot, as well as appetizers, salads, simple desserts, and, of course, the meats, fish, and poultry that everyone loves to grill. Bobby also gives tips on what equipment you need to grill (and more important, what you don't); six simple (and decidedly low-tech) steps to test for doneness; how to gauge how hot your fire is; and Bobby's Guide to Steak.

Editorial Review:

Join Texas food writer Robb Walsh on a grand tour complete with larger-than-life characters, colorful yarns, rare archival photographs, and a savory assortment of crispy, crunchy Tex-Mex foods.

From the Mexican pioneers of the sixteenth century, who first brought horses and cattle to Texas, to the Spanish mission era when cumin and garlic were introduced, to the 1890s when the Chile Queens of San Antonio sold their peppery stews to gringos like O. Henry and Ambrose Bierce, and through the chili gravy, combination plates, crispy tacos, and frozen margaritas of the twentieth century, all the way to the nuevo fried oyster nachos and vegetarian chorizo of today, here is the history of Tex-Mex in more than 100 recipes and 150 photos.

Rolled, folded, and stacked enchiladas, old-fashioned puffy tacos, sizzling fajitas, truck-stop chili, frozen margaritas, Frito™ Pie, and much, much more, are all here in easy-to-follow recipes for home cooks.

The Tex-Mex Cookbook will delight chile heads, food history buffs, Mexican food fans, and anybody who has ever woken up in the middle of the night craving cheese enchiladas.

These recipes will make a chef out of you too! 5 out of 5 stars.
2 of 2 people found this review helpful.

I visited Rather Sweet Restaurant in Fredricksburg, Texas with a friend. We both had chocolate cake for desert and decided it was the best we had ever had. So I was on a quest for the recipe. I found it in this book, made it for a party and got the same results! Heaven, this lady can bake and tell you how to bake too!

Editorial Review:

Texas accent and all-American flavor, even pitching in to help her put a fresh coat of paint on the porch of her Main Street shop. Rather takes the best of the Lone Star State—pecans, peaches, pralines, chiles, dulce de leche, German sausage—and turns out treats that taste like home, only better than anything homemade ever tasted before. There are the Bacon-Cheddar Scones, the Texas High Hairs Tarts (the only big hair Rather has ever had!), Fourth-of-July's Fried Pies, Turbo-Charged Brownies with Praline Topping, pillowy Kolaches (yeasted buns with savory fillings), dulce de leche, German sausage—and turns out treats that taste like home, only better than anything homemade ever tasted before. Self-taught, Rather's 150 utterly original recipes reflect her made-with-love-from-scratch philosophy and are guaranteed to get everyone fixin' to bake.

Editorial Review:

In this irresistible collection Rachael continues to work her 30-minute magic with nearly 100 awesomely delicious brand-new recipes. From pasta to pizzas, soups to sammies, and chicken, fish, and meat, you’ll find a 30-minute-meal to suit every appetite.

But what if you don’t have even 30 minutes? No worries, Rachael has you covered with her quickest-ever 15-minute meals. Why order pizza when you can have Provencal Tuna Melts, Italian Surf ‘n Turf Salad- even a fabulous paella- on the table in just 15 minutes? You’ll never reach for the take-out menus again when super speedy Pea and Parsley Soup with Canadian Bacon and Skillet Tamale Pie are the delicious alternatives.

And what about those days when you want to slow things down a bit? Rachael’s got the perfect recipes for those times, too. Her 60-minute meals like Paprika Chicken Stew with Potato Pierogies, Chicken, Corn and Tomatillo Lasagna, and Swordfish Rolls with Spaghetti Squash don’t require any more effort from the cook, but they tale advantage of a little extra time in the oven or simmering on the stove to develop those great, deep flavors we all crave on lazy days. Among these dishes are some of Rachael’s “Double Duty Dinners,” recipes that you cook once, serve twice, but look and taste so different that no one will be the wiser (such as Chicken in Creamy Mushroom Sauce with Chive Egg Noodles in which the base magically morphs into Tarragon-Tomato Chicken and Bread Soup another night).

You’ll also fine fun Rachael Ray signature meals like:

BLD (meals you can eat for breakfast, lunch, or dinner)
MYOTO (Make Your Own Take-Out Meals) that feature ethnic flavors but no mystery or fats
Date Night Dinners and Fancy Fake-Outs that are every bit as elegant as the fare from your favorite little bistro
The Kids Will Eat It meals (besides chicken nuggets) that will bring even the pickiest eaters to the table

This is Rachael’s most versatile book yet, the one that will help you get the very most out of every minute you spend in the kitchen- whether you’re rushing to the beat of the clock or taking advantage of a little extra time to stop and smell the veggies roasting. Either way you’ll be dishing up some of Rachael’s most appealing recipes ever- and all on your own schedule.

Editorial Review:

At his BLT restaurants, chef Laurent Tourondel offers a tempting reinvention of bistro fare. His Bistro Laurent Tourondel presents over 150 recipes from his repertoire--"easier" fare like Adobo Marinated Hanger Steak and Braised Swordfish with Tomatoes, Olives, and Capers; and more "chefy" productions, including Camembert Beignets with Smoked Duck Salad, and Sea Salt-Crusted Pink Snapper with Ice Wine Nage. Sweets, such as Peanut Butter-Chocolate Parfait, Passion Fruit Crêpes Soufflé, and Strawberry-Rhubarb Cobbler are also on hand, as are sections on ingredients and techniques.

Tourondel's recipes cover the usual menu stops but also include interesting formulas for breads and sandwiches, like one made with spicy soft-shell crabs. Though planned for home cooks, and not difficult to execute in themselves, the recipes often require multiple preparations and, therefore, an ingredient array. Readers may also find the recipe headnotes generic or insufficiently forthcoming on technical and other matters (though there are occasional asides called Chef's Tips). These things said, the book, which includes color photos and wine suggestions, offers an interesting and savory collection that many cooks will want to try. --Arthur Boehm

Editorial Review:

Entertaining doyenne Phyllis Hoffman shows how to prepare a stunning table for any occasion.

So many of the events of our lives, from the formal to the informal, are celebrated by gathering around a table. Whatever the occasion—whether it's a holiday dinner, Sunday brunch, or a casual lunch with friends—the table is the place where we relax and enjoy each other's company while savoring a great meal.

No one knows how to dress a table with elegance and flair better than Phyllis Hoffman, publisher of Southern Lady magazine, the quintessential resource for entertaining the gracious Southern way. Now, Hoffman draws upon her years of expertise to create Southern Lady Gracious Tables, the definitive guide to creating gorgeous "tablescapes" for every occasion.

Starting with the basics, Hoffman presents a series of breathtaking spreads for a whole range of occasions, from formal settings to casual get-togethers, and describes how to achieve each look, right down to the recipes—55 in total—for her mouthwatering specialties. Enjoy a lovely outdoor lunch of tasty Fried Green Tomatoes with Crab and Green Chile Cream Sauce, or finish off a dinner party with delectable Praline Bread Pudding with Bourbon Sauce.

Hoffman then builds a "wardrobe for the table," navigating through the complex world of dinnerware, fine linens, and serving pieces. Each and every element of the table—from fruit saucer to lemon fork to water goblet—is covered in a friendly, helpful way.

Finally, there's advice on adding that all-important personal touch, with instructions on how to craft flowers, family heirlooms, collectibles, and other unexpected treasures into the perfect centerpiece, place marker, or accent. All along, her advice includes refreshingly simple techniques for presentation and encourages the reader's own creativity in playing with colors, patterns, and styles.

Complemented by lush photography and told in Hoffman's accessible, encouraging, and deliciously Southern voice, Southern Lady Gracious Tables is a must-have for every aspiring hostess, south or north of the Mason Dixon. The perfect gift for any woman who loves to entertain, it has all the tools, tips, and inspiration you need to elevate the ordinary to the unforgettable.
