Outstanding adaptations of traditional "soul food" favorites 5 out of 5 stars.
22 of 22 people found this review helpful.

The book begins with an insightful glimpse into the world of traditional "soul food": its origins and components. Wilbert Jones does a wonderful job of making simple adaptations to create healthy, extremely flavorful, and virtually fat-free recipes of my time-worn favorites. I was introduced to Jones' work in the form of the Black-Eyed Pea Veggie Burger...a flavorful alternative to fast-food albeit not as fast a meal as I initially estimated. Since that introduction, I have prepared his Skillet Corn Bread, Collard Greens, and Red Bean and Rice. Absolutely, positively delicious!!! Even my picky eaters had no problems with "Mom's experiments!!" My only criticism of this cookbook is that it is too short!! I look forward to more of Jones' work in the future!

Editorial Review:

A cookbook featuring ninety-nine traditional African-American dishes puts the emphasis on fresh ingredients and low-fat or no-fat ways to prepare such dishes as Mixed Greens, Red Beans and Rice, Unfried Chicken, and Mississippi Mud Cake. Original."

Fabulous photos and funny recipes 5 out of 5 stars.
8 of 8 people found this review helpful.

Rappers' Delight is a great cookbook for novice chefs--especially kids. The rappers represented are mostly old school, but the photos are timeless. There's a great deal of humour in this book, in the photographs, the commentary, and the recipes themselves. The personality of each performer is conveyed in his or her contribution, and the author is good-natured and well-versed in rap history. This book makes a wonderful gift for anyone interested in either rap or quick and easy American cooking.

In good taste 5 out of 5 stars.

Reading this book made my mouth water. I can't wait to try out some of the recipes. The photos of all my favorite artists are phat!

An unique cookbook with a saucy slant 5 out of 5 stars.

Al Pereira's writing style and photographic genius has created a hip hop Joy of Cooking for the '90's. A must for any one who is a scholar of older rap or good food.

Editorial Review:

Hip-hop culture comes to the kitchen with this collection of more than 40 recipes that provides a tasty mix of treats. From Queen Latifah's "Royal Turkey Cutlets" and Flavor Flav's "Rice Pilaf" to Patra's "Island Snapper", the creative spirit woven through rap music reverberates in these dishes. 30 illustrations.

I had to have this book! 5 out of 5 stars.
10 of 10 people found this review helpful.

I borrowed this book from the library and after finding at least 20 recipes I wanted to copy (and I was only through a third of it!) I bought this book. Ms. Carter has developed wonderful, homey recipes. You can practically smell her cooking as you read along! Her stories are delightful as well. I recommend this book as a true tribute to Soul Food at its best! Without losing any of the taste, she has succeeded in creating low fat meals that anyone would love! Bravo!

a warm, engaging and thoroughly useful cookbook 5 out of 5 stars.

I cook often, for big dinners and small ones, and I'm always on the lookout for new tastes and flavors. That's exactly why I loved this book so much! I mean, Soul Food that was light, elegant and tasted like fine French cooking--and was easy to prepare besides? I've devoured Down Home Wholesome, cooking at least half of the recipes within it--scrumptious! Plus, I really loved the warm way the author has with talking about her family, her reminiscences of her experiences with these foods, and her filling in the blanks on how the slave diet contributed to the length and breadth of the American palate. TRY THIS BOOK - YOU WON'T REGRET IT

Editorial Review:

A stylish cookbook trims the fat, sugar, and salt from traditional soul food, using low-fat foods to create more than three hundred appealing dishes, such as Country Chicken with Cornmeal Waffles, A Mess o' Greens, and more.

Turkey Ham!!! 3 out of 5 stars.
3 of 3 people found this review helpful.

This is not a bad book... there are some good recipes.
Unfortunately, a lot of the dishes that traditionally
have hamhock (or other piece-o-piggy) just had turkey
instead. I was hoping for something more clever and
tasty than that, I guess. This is a goog cookbook if
you are looking for non-pig dishes.

Home Cookin' 5 out of 5 stars.

What a great cookbook. The recipes are easy. The ingredients are in everyone's pantry. To make it even easier, the author even gives her own recipes for the seasoning blends she uses. And it's low fat! If you like to cook, you should have this book.

Editorial Review:

Generations of Americans have celebrated their heritage with such traditional dishes as fried chicken, black-eyed peas, greens, candied yams, and cornbread--yet these mainstays typically have been high in fat, calories, and sugar. This one-of-a-kind cookbook brings the down-home taste of soul food into the low-fat kitches of the 90s, with 141 tempting recipes including Southern Okra and Crab Gumbo, Oven-Fried Catfish, and Smothered Chicken.

Editorial Review:

Food for the Soul is a tribute to African Americans, their history, their culture, and their cuisine. The author, Monique Y. Wells, was initially inspired to write a book for African Americans in Paris who wanted a taste of home while living abroad. It was to be a simple collection of recipes and a list of indoor and outdoor markets, American grocers and other places where hard-to-find ingredients could be obtained. However, the project evolved and became a labor of love – for family, for cooking, and for history.

Wells honors her family and its origins in virtually every page of this book, recounting the memories associated with many of the recipes that she presents. She speaks of her mother's Louisiana roots and the initiative that her mother took to preserve the recipes that her family brought to Texas from Louisiana. She talks of the pride and care that her father, a native Texan, takes in his barbecue - The Best Barbecue in the World! She also celebrates the tracing of her roots through her maternal grandfather’s Creole family back to the Bordeaux region of France.

If you were never quite sure about the difference between sweet potatoes and yams, or wondered where okra came from, you need look no further. Food for the Soul presents such information on several ingredients commonly used in soul food dishes as well as the origins of certain dishes. The introductory section also discusses the effects of European conquest, in particular the slave trade, on culinary habits around the world, the meaning of the word "creole", and the distinction between the origins and gastronomic culture of Cajuns and Creoles.

Food for the Soul was named Best Nonfiction Book of 2001 by the Sistah Circle Book Club.

FANTASTIC! My only regret is that I didn't buy it sooner. 5 out of 5 stars.
7 of 8 people found this review helpful.

I *LOVE* this book. It is very warmly written, and filled with both recipes and reminiscences from some of the country's finest cooks, all of whom are African-American. It introduces each person (complete with a picture), tells a little of their culinary background -- and then their favorite recipes, with memories of how they'd acquired them and why they were so special. The book is as wonderful to read as it is to cook from.
Two of the people described are well-known: Verta Mae Smart-Grosvenor (who used to host my favorite cooking show on PBS; I still miss it, and own and lover her own cookbooks), and Leah Chase (owner of the famous Dooky Chase restaurant in New Orleans, and author of highly-regarded cookbooks).

Editorial Review:

The quintessential cookbook/family album by master home-chef and photographer John Pinderhughes serves up traditional African American cooking with a dash of the nouvelle. From his grandmother Gum Gum's Crab Cakes to his own Papaya Flame, to Redfish with Pecans, Pinderhughes features his favorite recipes by his favorite cooks, who include Verta Mae Grosvenor, author of Vibration Cooking, and Leah Chase, owner of the famous Dooky Chase restaurant, located in New Orleans and author of the Dooky Chase Cookbook.

John Pinderhughes presents his family "in spirit" with their favorite recipes and fondest memories in this treasury of good eating. It captures the diversity of the African-American experience in its savory cooking and rich heritage of its oral tradition. There is something for everyone here, expert and beginner alike.
