Some good recipes; but book is somewhat pricey. 3 out of 5 stars.

Even though Tex-Mex food is on every nutrionist's "Index of Forbidden Cuisines," I love the stuff. I ordered this book prepared to like it; and,overall, I'm glad I've got it. For one thing, nearly every item listed in the recipes can be found in my local grocery store located in a town of 8,000 souls in the Northeast.

So, what are my reservations? Though the recipes it contains can expand your waistline, it is rather slender in scope. For myself there are about ten recipes that I would fix at home. If you are not on a restricted budget, buying this book may not be an issue. If you have to be careful with your bucks, then think carefully before placing this item in your shopping cart.

I've never used a book that produced meals that get more compliments from my Dallasite friends or Houston in-laws (and that's no easy feat as they are Tex-Mex experts). Matt's recipes are much simpler than those I've tried from other cookbooks while producing the same or superior results without having to soak chilies, grind them in a blender, etc. I may have to tweak flavorings some (hence 4 stars instead of 5) but the techniques and overall results can't be beat. As to how many recipes a person will use from any given cookbook ... well, in Dallas we eat a lot of this kind of food and I consider the money well spent.

Great Recipes, Wish I live in Louisiana. 5 out of 5 stars.

I was walking in the mall in Lafayette when the most wonderful smell stopped me. It was a chef giving out samples from his new cookbook. After one try, I knew that I wanted to be able to cook the wonderful foods I had just tried. Usually, this is an impossible task. However, every recipe I have tried has been a success. I have found the recipes to be easy follow and easy to prepare and the result taste wonderful. The pictures only add to the book.

My only comment would be that for people who don't live in Louisiana, many of the recipes call for Louisiana type ingredients. These have to be special ordered or substituted in some way and are next to impossible to find locally (boudin, tasso, etc). So be aware when you buy this book that many recipes are typical cajun cooking recipes with Louisiana type ingredients.

Barring that, this is a nice cookbook.

This book is a compendium of recipes that the author has collected over the years but it is also a book that helps you understand the area around New Orleans. It is a fun read and the recipes are marvelous! I have never met the author of this book but would love to meet some day, preferably over a good pot of gumbo for a lively discussion of the region's most famous past time - good eating!

My mamma's a Crochet, I am Catholic and my husband and I can each make a roux. I, also, am Cajun, know Marcelle and can attest to the authenticity of the recipes and accompanying stories. Many try to capitalize on the Cajun food craze, but few are the real deal. The only thing better than the recipes in Marcelle's book is enjoying them with she and her husband over dinner from their kitchen.

Although I wasn't raised in Lousiana, I love the food, and I love this book. The home recipes and the family memoirs are too good to put down, in the kitchen or the easy chair. If you only buy one cajun cookbook, buy this one.

This book is a keeper! The directions are easy to follow and the results delicious. I've tried many of the recipes and they are all indistinguisable from gluten filled--even the beignets! They taste just like the ones at Cafe du Monde from my pre-diagnosis days. My family and company are surprised when they realize that I am eating the same foods they are. Do try this book.

We down south love tomatoes, and the baked tomatoes with cornbread crumbs are some of the best I have ever tried. They not only taste delicious, but the recipe is soooo easy. This lady really knows how to cook southern style.

If you like cajun, this is the book to buy. The jambalaya is very easy and feeds a crowd in a hurry. The crawfish pie is a little taste of heaven from down Louisiana way.

Old stand-by recipes from New Orleans 3 out of 5 stars.

This 2003 cookbook by Alex Barker (Alex is a SHE) comes to us from Gramercy Books (Random House) and Regency House Publishing Limited. The work was printed and bound in hardcover in Italy and the numerous beautiful photographs of the dishes were supplied by Food Features. The nice dust jacket sort of hides the actuality of a budget binding, much like what we used to see on the old Whitman Classics, "shiny cardboard".

The book is pretty brief at 80 pages in length and the dimensions are 8 1/4" x 10 1/4" x 3/8". The one-page index will get you where you need to go in regard to the recipes, which are just over 100 in number.

The layout of the recipes is not very convenient. Each one might commence anywhere on a page, the beginning of each recipe is difficult to spot as it blends in with the surrounding text, and there are typically a couple of recipes per page. Sometimes you only get a segment of a recipe without turning the page which is bothersome if you display your recipes in a cookbook shield while you cook. The fonts are fairly small and thin, tough to read easily while you're cooking. The actual recipe directions are pretty good with adequate detail.

In "The Best of Cajun and Creole Cooking" you will find most of the signature recipes of New Orleans and of Cajun Country in general. Some examples include "Muffuletta" (sandwich); (chicken and shrimp) "Jambalaya"; and, "Shellfish Étouffée". The ingredient lists for all recipes are pretty long and I did not detect many dishes which one could prepare "on a tight budget," "Banana Bread" serving as an exception to this caveat.

If you are really into collecting each and every available Cajun/Creole recipe, you might find a few in here to expand your collection but, as I said, there are better cookbooks available for this interesting realm of cooking.

Plain, pickled, or in hot sauces, three-quarters of the world's population like peppers and like them hot. Tennessee reporter Richard Schweid has followed the American use of hot peppers to their source, New Iberia, Louisiana, where the capsicum thrive on the oily salty soil as nowhere else. Besides being home to the hot pepper sauces of McIlhenny and B.J. Trappey, New Iberia is also Cajun country, where the soft lilt of the language can be heard sung over the music of a zydeco band, co-existing with the combines of agribusiness and the boom (and bust) of offshore "oil patches." Keeping his journalist's eye on the pepper, Schweid follows it to New England herbalists, Columbus, and its uses by the Aztecs and the Mayans.
