Galatoires, as Burton and Holditch portray it, is a microcosm of New Orleans traditions reflected in the history of the Galatoire family, the loyal generations of staff, food tastes as they have evolved, and the eccentric, and sometimes famous, patrons throughout the years who have made the restaurant so successful. The layout with photographs and numerous anecdotes convey the vitality of this venerable institution. We even tried some of the recipes and created a little bit of Galatoire heaven in our own kitchen. The many facets of this book will appeal to a broad spectrum of readers. Whoever thought anyone could portray the life of a restaurant so vividly on the printed page!

In the early nineties, friends Daniel Abel, Charles Leary, and Vaughn Perret noticed something significant about Louisiana’s culinary landscape: the many of the indigenous foods and techniques that had once been so integral to Cajun and Creole cooking had vanished. Fueled by their appreciation for Old-World French farming and cooking styles, as well as New World native products, the three founded the renowned Chicory Farm and Chicory Farm Café. Their distinctive cheeses, mushrooms, and organic produce were soon featured in the best New Orleans restaurants, and brought about a renaissance in small farms and local produce.

Continuing their search for the roots of Cajun/Creole cuisine, in 1996 the trio traveled to an area in Nova Scotia originally known as Acadia, where French settlers early in the seventeenth century founded North America’s first culinary society: the Order of Good Cheer. When expelled by the British in the eighteenth century, these French Acadians moved to Louisiana, where they were called Cajuns.
Out of the three partners’ trip came the idea for a center for food learning that would also be a vacation destination. Trout Point Lodge, a cooking school and resort located in the spectacular beauty of the Nova Scotia wilderness, was born. Called “extraordinary” by Food & Wine magazine, Trout Point has become one of the premier culinary destinations in North America.

Southern cooking is more than pork fat and collards (though these are good things). Southern cooking is--like any other important cuisine--making the most out of nature's bounty. Damon Lee Fowler knows that. He takes the natural abundance of Southern gardens and creates (or in many cases) recreates recipes that make eating your vegetables the best part of the meal.

If you grew up in the South and/or (like me) had a Southern mother or grandmother who cooked lots of seasonal vegetables. This book is chock full of recipes and memories.

I have tried about 2/3 of the recipes so far and I haven't found one that I disliked.

In a city where eating is a main attraction, New Orleans cuisine is as distinctive as it is succulent. A Little New Orleans Cookbook charmingly showcases some of the Big Easy's most beloved recipes. With every turn of the page you can almost witness the teeming city coming to life: streetcars clacking along the streets, the garish coronets of a passing funeral procession marching sedately along the Rue, and the tantalizing scent of chicory laced coffee and beignets wafting from the cafes. A Little New Orleans Cookbook is richly steeped in the fabulous heritage and exotic grace of New Orleans taste.
