Good Authentic New Orleans Recipes 5 out of 5 stars.

Frank Davis is well-known in the N.O. area and all of Louisiana for that matter. He has a number of cookbooks, but this is one of our favorites, and have used it for years. We made this purchase to begin restoring the cookbook collection of family members who have lost their homes in Hurricane Katrina. When I thought of the one book they would most like to have back, this is the one I immediately knew had to be on the list. It has authentic, "regular people" recipes (not high-falutin' gourmet chef recipes) that we can and do cook in our home kitchens. Frank Davis does "N'Awlins" food in a laid back, easy to duplicate style and the results are always good.

This is not my first time owning this book. I am actually replacing the edition my Grandmother gave me in 1988. I loaned it to someone about 3 years ago and she still hesitates to tell me when I will get it back. I don't like the fact that I haven't gotten it back but I understand why I haven't

"Cane River Cuisine" is a wonderful collection of time tested recipes by local Louisana cooks. The recipes are interesting, relatively easy to prepare and for the most part, appealing to a variety of tastes. In my opinion, it is a good cross section of Louisana cooking styles, ingredients and tastes. I say this because some of my family members come from Baton Rouge and New Orleans so I have some experience with Louisana cooking styles.

My favorite recipe in this book is the meat pies featured on the first page. The pies remind me of the ones my mother made when I was a kid. They are meaty, spicy and the crust is flaky and tender. I have served them as a main course and made smaller versions to serve as appetizers for parties. They have turned out wonderfully every time.

I have enjoyed cooking from this book. However, some people who shy away from "comfort foods" might be put off by the types of oils, cooking methods (frying) and high calorie ingredients in some of the recipes. Restraint is all though. Eating these foods (or any food) in moderation is the key maintaining one's health while enjoying some really good eats.

The book has everything you will need to cook a down home Southern meal from clever appetizers to rich, delicious deserts.

After returning from New Orleans this past year, I found that this book allowed me to recreate some to the delicious temptations that I was able to indulge in during my stay. I found the recipes easy to understand, and utterly delicious!

I picked this book up years ago and of the some 50 cookbooks I own, this is the one I keep coming back to. If you've ever been to the Big Easy and indulged in New Orleans cuisine, you will find this book scrumptious. The recipes are typical Creole and Cajun French and simple. Corrinne's biscuits are a delight! You'll feast in culinary delights if you master these recipes of the Master Chefs of Nawlins, darlin'. If you buy this book, buy a scale. Good luck and Bon Appetite!

You get a lot in this little book. Dozens of great recipes that include the essentials you likely are looking for as well as some creative recipes you won't get anywhere like his pasta st, pierre. In addition we get nice commentary, a bit of wisdom and some great poetry.

What runs through this book most of all is passion. This guy is passionate about his culture and his food! He is not just sharing recipes but a piece of himself and always with good humor.

He provides a great dry spice recipe that beats emeril's and is used often here and his shrimp creole that proclaims to be the "best ever" probably is!

The title is correct for gumbo and jambalaya are the heart of this book but instead of the typical gumbo-jambalaya recipes you may already own there are some you definitely don't own. Try the beef gumbo cooked in red cabernet. Out of this world..

Classic Cajun modified to be meat-, dairy-, and egg-free 5 out of 5 stars.

Although this book is already eight years old, it is a new favorite to me since I just bought it. Being a vegetarian, until I found this book, my experience with Cajun cooking has been limited to an occasional Red Beans and Rice. Now I am happily preparing Jambalaya, Courtbollion,and Gumbos that are vegan and low in fat.

Never having been pleased before with recipes for vegan cakes, I have to caution the reader that I haven't ventured into the dessert section at the back of the book. Some vegans may find the use of honey as a sweetener a problem and want to make substitutions.

The breakfasts, main dish and side dish recipes are wonderful, and have given me the courage to read non-vegetarian Cajun recipes with an eye as to how to adapt them to my diet.

I've used this book for 20 years - it's the best for authentic Louisiana cooking. The recipies are true, easy to follow, and always good. In case your wondering I was born and raised in Louisiana, so I do know good cajun food.

My husband purchased this cookbook and now we are giving it as Christmas gifts. The recipes are clear and concise and extremely delicious. They cover the best recipes from South Lousiana Cookeries. Every recipe is a keeper especially for entertaining.

Since I know him, I guess I have to say that he is my favorite chef! Actually, I have hosted him in my store for signings, and he cooked for the customers...his food's terrific! If you write to the address in the book, he will send you a copy of his jambalaya recipe (which is very tasty), which is not in any of his books. How cool is that?

I was in the mall when my sense of smell went into overdrive. I knew that it couldn't be the foodcourt, so I followed my nose. Oddly enouph my nose took me to the bookstore. Chef Remy was cooking up some Jambalaya and signing his cookbooks. I stood around for about 15 minutes watching him cook and asking him questions. Part of the reason I bought his book was because he was so nice. He gave me some great advice and was not "beneath" answering any of my questions. After getting this cookbook home, I looked through it and decided on a recipe I would try for the night. It was wonderful. I have since cooked many of his recipes and they have all turned out great. The thing I like most about this book, and I have many, is the simplicity. I have several Emeril books, and they are good, but I just don't have 3 to 4 hours to spend on a weekday to make many of his recipes. Its not the cooktime that takes so long, it's the 20 something ingredients (most of which I don't have) that consume the most time. That is not the case with Remy, most of the ingredients can be found in anyones kitchen and he limits the amount of ingredients in any one recipe. I enjoy this simplistic aproach. But don't think for one second that this style in any way diminishes the quality of the dish. The opposite is true. It's the simplicity that makes the food so good. The recipe he gives for french bread is worth the price of the book alone. I have the plastic binder version, which I find particuarly nice because it lies flat while I have my hands full reading it. I would recommend this cookbook to anyone who wants a cookbook they will actually use. Remy also includes many antecdotes that are quite amusing.

As a true "cajun" who grew up on South Louisiana, I am interested in the history of cajun and creole culture, which is often centered around food. This book is a treasured piece of the history of creole cuisine in New Orleans. The text is sometimes hard to read, but the recipes are an authentic snapshot of what might have been the "standard" for New Orleans before the turn of the century. I am proud to have this book in my collection of early and historical Cajun and Creole cookbooks.

Lafcadio Hearn lived in New Orleans from 1877 to 1887. His observations on Creole life were published in the New Orleans Times-Democrat and the New Orleans Item. This edition is a combination of a his cook book La Cuisine Creole along with drawings and writings from those articles. It is a loving look at the city and a disappearing way of life. I lost my first copy of this book in the flood caused by the levee failure in the wake of Katrina which makes having it back all the sweeter.
