Like the rest of the series, this book is full of fantastic recipes. Our friends swear by the corn recipe, we've loved all the marinades, and the steak recipes are top notch. Just wish there was more!

Jeremiah Tower is a talented and innovative chef with brilliant instincts on food and its preparation. But in this memoir he comes across as a totally shallow, erratic, cocaine sniffing, champagne swilling, celebrity fawning, spendthrift and airhead.
One senses that Tower has never read anything more serious than a cookbook. If there is a single idea of consequence in this work I must have missed it. What there is no lack of is insipid gossip and name dropping. Worst of all is the editing, or rather lack of it: this must be one of the most poorly edited books in the history of publishing.
Tower's descriptions of his endlessly messy legal and financial entanglements might possibly have been interesting had they been written in something approaching comprehensible English. But like much of the rest of the book they are barely coherent with unexplained references and gaping holes in the narrative.
In sum, this work is very thin gruel, indeed. Tower should stick to cooking!

This is a great cookbook. I've tried several of the dishes, and they have all been good. I just made the swordfish piccata, and it was really yummy! There's a good variety, and even people who aren't big fish fans can find something they will like. The directions are clear and simple to follow, and the receipes are all easy to prepare.

In 1991 Ruth Reichl, then a Los Angeles Times food writer, observed that much of the style now identified with California cuisine, and with nouvelle cuisine du Mexique, was practiced by Encarnacion Pinedo a century earlier. A landmark of American cuisine first published in 1898 as El cocinero espanol (The Spanish Cook), Encarnacion's Kitchen is the first cookbook written by a Hispanic in the United States, as well as the first recording of Californio food--Mexican cuisine prepared by the Spanish-speaking peoples born in California. Pinedo's cookbook offers a fascinating look into the kitchens of a long-ago culture that continues to exert its influence today.

Of some three hundred of Pinedo's recipes included here--a mixture of Basque, Spanish, and Mexican--many are variations on traditional dishes, such as chilaquiles, chiles rellenos, and salsa (for which the cook provides fifteen versions). Whether describing how to prepare cod or ham and eggs (a typical Anglo dish labeled "huevos hipocritas"), Pinedo was imparting invaluable lessons in culinary history and Latino culture along with her piquant directions. In addition to his lively, clear translation, Dan Strehl offers a remarkable view of Pinedo's family history and of the material and literary culture of early California cooking. A little too much seafood 3 out of 5 stars.

This is a nice cookbook, but more for looks than for novice to close to chef status.....very hard and long recipes. The food looks great, but coming from the restaurants and with the list of restaurants, you may as well just fly there and visit the place and eat at them, than try to cook them.
