To counter the damp and dreary days of winter I surround myself with distractions that promise better days to come. At the top of my pile is Braiden Rex-Johnson's Pacific Northwest Wining and Dining. Just looking at the cover of this love letter to NW cuisine warms me. I imagine myself dining al fresco on the patio of this restaurant or a myriad of others. Then I pour over the interior pages, like a gardener pouring over a seed catalogue in winter. I indulge in the descriptions of familiar restaurants and wineries as well as intriguing new ones. I plan our next excursion into Eastern Washington or the Willamette Valley or the always promising Vancouver area, while noting the recipes from these areas that we want to make today and the wines we will want to serve with them. I smile at the quotes from favorite and unfamiliar chefs and feel as though I now know something of what makes them who they are. And then I remember another friend who I want to share this book with and I'm back online to order it. What a perfectly luscious way to wile away the winter days.

Severson & Denkler have done a great job offering delicious, do-able, interesting recipes and delivering them in an entertaining style. One doesn't have to be in Alaska to appreciate or use these recipes.

I bought this cookbook while I was in Ketchikan. It has fabulous recipes that showcase the freshness of AK wildlife, seafood and berries. Wonderful!!!

The most interesting thing about IN SEASON is the author's personal tales relative to each of the principal ingredients about which he writes. It is more than a cookbook, it is fascinating personal epoch which draws you in and keeps your interest, all the while giving good advice and recipes about Northwest products.

Apples, salmon, wild mushrooms, and Dungeness crab--these are some of the ingredients celebrated in Greg Atkinson's The Northwest Essentials Cookbook, an exploration of regional bounty and the cooking it inspires. Atkinson, food writer and chef at Canlis in Seattle, offers 150 accessible recipes peppered with personal culinary narratives evoking his own Northwest "journey." Readers interested in one of the country's most fertile and gastronomically distinguished regions, and those seeking straightforward yet polished recipes for its cooking, should be delighted.

Organized by the ingredients (which, in addition to the above, include stone fruit, herbs, berries, oysters, and mussels, among other seafood), the book features recipes for the likes of Pork Tenderloin Sautéed with Morels, Grilled Singing Scallops on the Half Shell, and Warm Chocolate Hazelnut Cake. There's a definitive recipe for apple pie, a marvelous Dungeness crab gumbo and, among more modish offerings, Flame-Broiled Arctic Char with Cherry Salsa. If Atkinson's introductory essays on, for example, an early morning encounter with a wave-skimming salmon strain for effect, his recipes are always inviting and his culinary information comprehensive. Of all my cook books, this is my favorite. The beautiful illustrations are a plus along with the truly unique recipes. It's such a beautiful book I leave it on my coffe table for my friends to look through and comment. As much as I like experimenting with different styles of cooking, I seem to always return to this book. It truly represents the unique style of cooking in the beautiful Pacific Northwest!

This is absolutely one of the most beautiful cookbooks I have ever had the pleasure to add to my library. It could as easily be presented as a travelogue with recipes, as it contains sections for all of the Pacific Northwest; Vancouver and British Columbia, the Islands, Washington, Oregon and Idaho...and is so informative and full of images, I want to go there right now. I vacillate between wanting to visit the restaurants where some of the recipes originated, and wanting to take a stab at making them myself; and the pictures of the finished products make me want to eat the page. All recipes are complete with a history of the dish and concise and readable instructions, and most, if not all, look quite easy to replicate. There are some that include ingredients that would be hard to find (Yelloweye Rockfish and Singing Scallops comes to mind) but I'm sure other (lesser in the eyes of Pacific Northwest natives, I'm sure) variations would work as well for the dish. I am looking forward to trying Geoduck and Green Onion Hash; Wild Mushroom Ragout; Basque Onions in Sour Cream; Peppered Flank Steak with Oregon Blue Cheese Sauce; Stout Braised Beef with Onions and Sour Cream; and the Baked Blueberry Clafouti looks divine. There isn't a page that doesn't suck you in and you realize that your mouth is watering as you read. If you can obtain a copy of this cookbook (a caveat; it is a coffee table sized book), it will satisfy both your yen to read about the Pacific Northwest as an eventual destination and excite your imagination towards creating some outstanding dishes for your next dinner party. Highly recommended.

I am not a cook, but after reviewing this book, i really want to be, not to mention that the recipes left me salivating. It may not be a book for the complete beginner but with some enthusiasm, the recipes in this book are very do-able. The side essays written by kathy casey are funny and informative and both authors clearly try to make the recipes understandable and do-able for the home kitchen. I am smitten with my kitchen and the tasty treats i can make in it. Thanks to Kathy Casey and Cynthia Nims for their tempting inspirations!

I can vouch for the el camino enchiladas and bahia mussells 4 out of 5 stars.

The enchiladas, especially, were great, which they should be since it took one chef, two drunken sous chefs, and one person sitting on a stool shouting instructions about 2 solid hours to make them. But it was worth it.

Having actually dined at this charming restaurant, I was delighted to find the cookbook with their actual recipes. I enjoyed it so much that I purchased a second for my stepmom. Keep up the fantastic job and for anyone thinking about visiting Alaska, this is a "must go to" place to dine.

My husband and I used to eat at this restaurant when we traveled to the Kenai/Palmer/Seward area from Anchorage. Their food is absolutely the most wonderful, the essence of the restaurant is comfortable for anyone, from jeans to suits. I flew home for my uncle's funeral in December and found that they have a cookbook, as soon as I returned home I ordered from Amazon - this is a must have cookbook, if not for the recipes, which are incredible, but for the memories.
