The most interesting thing about IN SEASON is the author's personal tales relative to each of the principal ingredients about which he writes. It is more than a cookbook, it is fascinating personal epoch which draws you in and keeps your interest, all the while giving good advice and recipes about Northwest products.

Great Game, Fish, and Other Recipes 5 out of 5 stars.

I recently found this delightful book in a used book store. The author is a retired Alaska State Trooper, and a lifelong fisherman, hunter, and cook. This cookcook contains many wonderful recipes including Nelson Clam Chowder, Deep-Fried King Crab Legs, Grouse and Noodles, Moose Sauerbraten, Corned Bear, Fancy Pickled Eggs (made with beets), Charlie's Apple Pie, and the Alaska State Fair award-winning Mug-Up Cake. Most of the game recipes can be made with beef or other more common meats instead. I can't wait to try these, although I must admit bear is unlikely to turn up on my menu soon.

In addition his many mouth-watering recipes, Mr. Nelson shares wonderful stories about growing up in Alaska and later working as a state trooper. And in case you're wondering, a "low bush moose" is an artic hare, in contrast to a "high bush moose", which is the big brown deer with the scoop-shaped horns :-)

I can't say enough nice things about this slim littlecookbook. First, every recipe I've tried has been stellar -- and I'veused the recipes with several dinner parties to rave reviews. Second, I appreciate the organization. Sarich classifies every recipe by seasonability of ingredents, cost of ingredients, and time needed for preparation...very helpful features that I wish more cookbooks shared. Third, I like the lay-flat spiral binding, which makes it handy to use. Fourth, the presentation and photography are beautiful. Interestingly, I've bragged up book to several out-of-town guests, and they've purchased the book (even though they don't live in the Pacific Northwest). Additionally, the indices at the back of the book include wine and food/herbs/spices pairing, wine descriptions, and useful lists of ingredients to have on hand depending on what type of cuisine you tend to cook.

I am not a cook and can't really tell you how good/bad this cookbook is. What I can tell you is that I stayed at Camp Denali and the food was great (although not enough chocolate based desserts IMHO and since it is the northwest, maybe a bit more fresh salmon would've been nice). In skimming through this book, I did recall some of the food that I ate while there. If the book is representative of the food served at Camp Denali then you will probably be happy with the outcome of the recipes. Enjoy!

This is a great addition to the WS Library, and will be to any cookbook reader's library. The Pacific Northwest has easy to follow recipes that are true to the regions bounty. As with all WS books, the pictures can write a story themselves. I especially like the sections that go into the history of the regional produce and what florishes naturally in the Northwest climate. This is a true representation of what makes that area of our country so unique. Reading the book has made me want to take a trip back there.

Beyond Burlap has an excellent assortment of potato recipes! I never knew there were so many ways to prepare a potato! The Potato Mocha Poundcake is my favorite. The stories and fun potato tidbits make Beyond Burlap a fun cookbook to own!

Creative, but completely untested recipes 2 out of 5 stars.

I owned this cookbook for two yearnow, and cooked many of the recipes from each section; It seems that most of these recipes were just thoughtlessy typed up and bound together. Did Cynthia Nims actually cook anything out of here herself? Expect to cook each recipe multiple times to adjust cooking times and get a handle on prep times which can balloon out of proportion. These recipes are from restaurants so expect large amounts of heavy cream and butter in everything. Also, expect to search for at least one or two ingredients in every recipe. A quick example: "Hazelnut French Toast" sounds easy and delicious right? Well have fun driving to Langely, WA for a loaf of artisan hazelnut bread. Of course you could substitute a "rustic country bread" but then you would have "Rustic Country French Toast". That's just idiotic in my opinion. Thanks to the chefs who've created some wonderful sounding dishes, and bullocks to Nims for profiting off her rubish editing. You're better off going to these restaurants, which is probably what this book is...a glorified advertisement.

An amazingly thorough look at an emerging wine region 5 out of 5 stars.

This book offers all levels of wine lovers great information. While the geographically-organized chapters are heavy on trechnical topics, the author really tries to explain the reasons each area makes wine and what influences its taste, without talking down to the reader. It also makes a super resource for someone who seeks a touring guide. Every producer in each region is profiled, too, with comprehensive contact information, making planning a wine tour easy. The photos of both winemakers and vineyards are also wonderful. For anyone who loves NW wines or wants to understand them better, this book can't be beat.
