Editorial Review:

Mark F. Sohn’s classic book, Mountain Country Cooking, was a James Beard Award nominee in 1997. In Appalachian Home Cooking, Sohn expands and improves upon his earlier work by using his extensive knowledge of cooking to uncover the romantic secrets of Appalachian food, both within and beyond the kitchen. The foods of Appalachia are the medium for the history of a creative culture and a proud people. This is the story of pigs and chickens, corn and beans, and apples and peaches as they reflect the culture that has grown from the region’s topography, climate, and soil. Sohn unfolds the ways of a table that blends Native American, Eastern European, Scotch–Irish, black, and Hispanic influences to become something new—and uniquely American.

Sohn shows how food traditions in Appalachia have developed over two centuries from dinner on the grounds, church picnics, school lunches, and family reunions as he celebrates regional signatures such as dumplings, moonshine, and country ham. Food and folkways go hand in hand as he examines wild plants, cast-iron cookware, and the nature of the Appalachian homeplace.

Appalachian Home Cooking celebrates mountain food at its best. In addition to a thorough discussion of Appalachian food history and culture, Sohn offers over eighty classic recipes, as well as mail-order sources, information on Appalachian food festivals, photographs, poetry, a glossary of Appalachian and cooking terms, menus for holidays and seasons, and a list of the top 100 Appalachian foods.

Finally! 5 out of 5 stars.

Thank goodness they finally put these wonderful recipes in one book. I've had back issues piled up all around the kitchen for years now! This is an incredibly comprehensive collection of the best of SOUTHERN LIVING. The recipes are easy to follow and most won't disappoint. Throw away that Junior League cookbook and use this instead!

Also recommended: Fried Green Tomatoes (the book AND the recipe book), Jackson McCrae's Bark of the Dogwood (for a good fiction read) and the book "Grits."

Grab this book while you can! 5 out of 5 stars.

I think what I love about these books the most is that ALL the SL recipes are in one book so you don't have a zillion magazines to go through and remember where on earth you saw that recipe you had to try. Once again, once I bought one of these, I wanted the others. These books are so very addicting because the recipes are just fabulous and very easy to prepare. My husband groans each time a new one comes in the door because he's just thinking, "oh no, there's five more pounds!" The food is just fabulous and you just can't go wrong with these recipes.

Editorial Review:

A handy compilation of every single recipe from an entire year of the magazine. All-new recipes-almost 1,000-are each tested and made foolproof by the famous Test Kitchens of Southern Living. From down-home dishes to sophisticated fare, these recipes and casual entertaining ideas have a decidedly Southern accent.

Editorial Review:

"Eating Your Way Across Kentucky" - A traveler's guide to local favorites. There are literally thousands of eating-places in Kentucky. Some are outstanding, some good, some fair and some not so good. It seems it would be easy to identify 101 must places to eat in the state, but it is a much more daunting task than one would think. What author Gary West has done in these pages is to select eateries that in all probability you may not even know about. Oh sure, the locals eat there and know they are great, but some of the restaurants are not well known to outsiders - until now! The criteria for making the 101 is simple: it cannot be a chain restaurant and, except for a rare exception, must have been in operation for at least five years. And, of course, the food must be exceptionally delicious! Beautifully illustrated with detailed directions and menu reviews, this book is guaranteed to thrill the traveler trekking across the bluegrass in his never-ending pursuit of his next dining delight. 6 x9" hardcover w/ full color dust jacket 232 pages w/ photos MasterCard, Visa & Discover accepted (we do not currently accept American Express).

Editorial Review:

Perhaps no other cook has played such a central role in the renaissance of traditional southern cooking as Edna Lewis. When asked who has influenced them most, chefs from New York to Little Washington to Charleston cite Ms. Lewis and her classic collection of recipes, In Pursuit of Flavor, first published in 1988.

Edna Lewis learned to cook by waHChing her mother prepare food in their kiHChen in a small farming community in Virginia. Because she was raised at a time when the vegetables came from the garden, fruit from the orchard, pickles, relishes, chutney, and jellies from quick canning, and meat from the smokehouse, Edna Lewis knows how food should taste. Every recipe included in her cookbook, both old friends and new discoveries, reflects her memory of and continuing search for good flavor.

In chapters devoted to fruits and vegetables, meat and fowl, fish, herbs and spices, bread, and other baked goods, Ms. Lewis shares her secrets for getting the best out of food: combining tomatoes with cymling squash, pumpkins with onion and bacon, cooking sweet potatoes with lemon, and boiling corn in its husk. She always keeps a bit of country ham around to perk up greens, cooks fish fillets or chicken breasts in parchment, and braises meat in a clay pot to keep it moist. Her baking recipes, for the griddle and the oven, include tips on the right flour to use, how to make your own baking powder (to avoid the chemical taste), how to listen for signs that a cake is done, and when to use frozen butter in a pie crust and when to use pure leaf lard. In Pursuit of Flavor brings generations of cooking wisdom to today's kitchen.

Number Two ... 1 out of 5 stars.

... is exactly what this book is worth. This was poorly written, poorly put together, and in generally bad taste. The recipes are plain recipes that anyone with a Better Homes and Gardens cookbooks can put together. The Cajun stories are dumb. They are NOT funny. Justin Wilson and his publishers should be ashamed for pushing this out onto the American cooking public.

I don't think any of justin wilson's books are essential for would be cajun chefs. His books are fun and this book has some nice recipes.

Wilson's version of cajun cooking is different from what you see on most books in the genre. I know i own more than a dozen books on cajun or creole cuisine and only wilson makes constant use of bitters, worchester sauce and sauterne wine. Those three ingredients seems to find their way into almost every savory recipe in this book even though you will see little off them in the exellent "cajun cuisine" book or paul prudommes seminal book the finest on the subject. Wilson was the first to admit he was no chef just a damn good cook and these three ingredinats provide the flavor backbone for most of his dishes.

Of course you see this in his shows with the hot sauce ever ready and always with the lea and perrins and the big bottle of wine. That's how he approaches cajun food and most of the time the result is quite good. This is a man who became famous first for his humours stories and then he worked the cooking in.
As far as i know he has never owned a restaurant in which his food would stand the ultimate test. It is not essential as prudomme's book is but it is a fun addition to any collection.

One nice segment of the book is the one on leftovers. The turkey hash is superb and the ham souffle. He has an idea for cold leftover mac n cheese that i did not try. You take cold mac n cheese and pour mayo over it with some paprika. Other highlights are the turnip casserole and the "i don't know chicken". Funny but also quite good.

Enjoy it.

Editorial Review:

Authentic southern barbecue for the home kitchen.

When renowned Vancouver foodies George Siu and Park Heffelfinger first tasted pulled pork in Memphis, they fell in love at first bite. They brought home the fresh memories of all those succulent tastes of Southern barbecue, and opened their first award-winning Memphis Blues Barbeque House Restaurant in Vancouver. Using this new cookbook and the guidance of these two superb chefs, home cooks can now create some of the South's most legendary dishes, to be savored by the whole family.

Meat prepared in Southern barbeque style is unlike any other -- amazingly juicy and unbelievably tender. From ribs, pulled pork, beef brisket and Cornish game hen to shrimp, oysters and chicken wings, the dishes always end up tangy, sweet and flavorful.

Here are some of these delicacies from the Deep South:

  • Sausage and corn chowder
  • Sweet pickle potato salad
  • Pulled pork
  • BBQ brisket and tomato soup
  • Slaw with apples, walnuts and raisins
  • Smoked Cornish game hen
  • Smoked leg of lamb.

Southern barbecue is smoky, tender and succulent. The recipes in this cookbook will bring all those tastes home.

My Favorite Party Recipes 5 out of 5 stars.
10 of 12 people found this review helpful.

The Party Recipes from the Charleston Junior League is my favorite cookbook. Of all the cookbooks I own I always buy the ones that have lots of pictures. I usually like to see what it looks like first before I make anything. This cookbook was the exception, as it does not have pictures of the food. I looked through the cookbook and immediately saw at least 30 recipes that I knew I wanted to make. I couldn't put it down, as there was such a collection of recipes that I always wanted to try. Whenever I need a recipe for a party or gathering, this cookbook is always the first one that I pick up.

I like the short comments with each recipe from the recipe contributor. I especially like the spiral binding as the book stays flat on the table while you are using it. The people of Charleston, South Carolina know how to throw a successful party. I'm glad they shared their most popular recipes in this book.

Recipe categories in the book:
Accoutrements: Nuts, Nibbles, and Beverages
Cold Dips and Spreads
Hot Dips and Spreads
Cold Hors d'Oeuvres
Hot Hors d'Oeuvres
Lowcountry Shrimp, Crab, and other Seafoods
Southwestern Favorites
Sandwiches and Baked Savories
Sit-Down Starters
Cookies, Cakes, and Confections for the Buffet Table

A Good, Possibly the Best Southern Cookbook 5 out of 5 stars.
14 of 15 people found this review helpful.

When I first pick up a cookbook on Southern foods, I immediately look in the index for Grits. The first entry under grits in this book is called Hot Brown with Fried Cheese Grits. Now you're not only talking grits, but fried as well. How can you get more Southern than that? And the more I looked at this recipe the sooner I had to try it. It was wonderful. The recipe called for it to be used as a bread replacement in an open faced turkey sandwich. Unfortunately the fried cheese grits by themselves were all eaten before the turkey could get put on them. Oh well, I'll just do another batch.

I'm actually from the Atchafalaya (Pronounced chaf-a-lie - I know, I know, but that's the truth.) Basin, so Crawfish Etouffee was a big thing when I was a kid. Now most crawfish are being imported from China rather than the Atchafalaya swamps. They of course aren't as good, how could they possibly be, but they'll do. Just remember to do as the book says and don't boil them too much.

The editors comment that there seems to be no regional or even generally agreed upon recipe for fried oysters. So the editors whipped up a bunch of different ones and say that the one in the book is the best they found. It certainly has some different stuff in it. I haven't tried it yet, tomorrow night. The thing I'd add is use small size oysters rather than the giant ones you can get now a days. They get crisp rather than having the soft insides like the larger ones.

That's enough writing. I tried a few other recipes, most worked out very, very well. (One we didn't like, but I think that one was my fault, I changed a couple of things.) This is a good Southern cookbook, possibly even the best.

Only Cajun-Creole Cookbook You Need! 5 out of 5 stars.
8 of 8 people found this review helpful.

I not only recommend this book, I have bought it-- TWICE!

I owned an earlier version of this book and used the recipes in it as the basis for my parties while in the Navy. I have a few of my mother's recipes but this book is the basis for all of my friends thinking that I am an outstanding cook. Instead, I was a thirty-something bachelor who can read and follow directions. This book is that good.

The recipes are absolutely delicious and after Hurricane Katrina hit I ordered a new copy of this- PRONTO!

My only complaint about the book is that occasionally the recipes assume you know the basics. Maybe most people know that you have to soak dried beans before cooking them but I didn't and so my first attempt at Red Beans and Rice was a disaster. But most of you aren't going to be such amateurs in the kitchen as I was when I did that. I look forward to reading the latest version just to see if those oversights were eliminated.

Aside from that, I wholeheartedly recommend this book. I read the reviewer who said he had a separate copy in a safe deposit box. Good Idea!

The cookbook for never fail to please goodies for family and friends for any occasion. I adore it. Virginia Hospitality says it in the name and can be depended upon to provide just that.

I have sent this cookbook to friends and relatives around the country over the years and the feedback has always, and I mean always, been positive. In fact, it has been ecstatic. These recipes are easy to prepare and I have yet to make one that my guests and I did not enjoy thoroughly. I have heard it referred to as one of the most reliable cookbooks around and I would echo that sentiment unequivocally. A must have for any kitchen.
