Editorial Review:

Gifted chef and storyteller Martha Hall Foose invites you into her kitchen to share recipes that bring alive the landscape, people, and traditions that make Southern cuisine an American favorite.

Born and raised in Mississippi, Foose cooks Southern food with a contemporary flair: Sweet Potato Soup is enhanced with coconut milk and curry powder; Blackberry Limeade gets a lift from a secret ingredient–cardamom; and her much-ballyhooed Sweet Tea Pie combines two great Southern staples–sweet tea and pie, of course–to make one phenomenal signature dessert. The more than 150 original recipes are not only full of flavor, but also rich with local color and characters.

As the executive chef of the Viking Cooking School, teaching thousands of home cooks each year, Foose crafts recipes that are the perfect combination of delicious, creative, and accessible. Filled with humorous and touching tales as well as useful information on ingredients, techniques, storage, shortcuts, variations, and substitutions, Screen Doors and Sweet Tea is a must-have for the American home cook–and a must-read for anyone who craves a return to what cooking is all about: comfort, company, and good eating.

Editorial Review:

For the first time in a gorgeous hardcover, more of the finest Southern recipes from the Food Network star, whose restaurant has been a Savannah staple for decades

In her first cookbook, Paula H. Deen hardly exhausted all of the best meals from her beloved Georgia restaurant, The Lady & Sons. In a sequel that’s just as delicious and brimming with color photographs, she serves up more of the surefire recipes that have kept customers coming back for more.

In her own life, Paula has turned hardship into hope. Losing both her parents by the age of twenty-three, she was left with two babies and a teenage brother to raise. Later, financial troubles in her marriage made her hide from the world. But surmounting her fear, surviving her divorce, and starting her own business with her sons jump-started her life–and created a favorite eating spot for Savannah natives and tourists alike.

Here are more than 315 of her purely Southern recipes, as simple as they are special: from appetizers, including Polynesian Chicken Wings and Tangy Marinated Shrimp, and such main courses as Brandied Prime Rib and Hurry-Up Chicken Pot Pie to desserts as good as Pecan Pudding Cake and Caramel Apple Cheesecake. And The Lady & Sons, Too! also features a weights-and-measures section and recipes from some of Paula’s friends, including author John Berendt’s mom.

In its gorgeous new edition, The Lady & Sons, Too! is more than an indispensable guide to good eating–it’s a lovely keepsake anyone would be delighted to own.

Been a while since I was this excited 5 out of 5 stars.
4 of 5 people found this review helpful.

When I picked this book up locally to browse through it, I knew I had to have it. I bought it on Amazon because I knew for a large hardcover, a local store couldn't beat the price. I could hardly wait for it to come!

I had already had dinner when I got it, but it wasn't a half hour before I eyed the fridge yeast rolls which are rising overnight right now. The dough came together easily... I had it in the fridge before my husband noticed I was making it even though he was talking to me the entire time and I can tell you it's looking more than promising.

I love Southern Living, but just like cooking shows or searching the big websites, with limited access to new recipes that may or may not be in the mood for, or too much access to too many recipes to browse through, it can get really frustrating when you're trying to get inspired. With most cookbooks, no matter how much I love them (I adore you Paula Deen) I just find the scope is too limited to provide inspiration unless I'm in a particular mood. This is a great answer to my recipe slump! Yes it's a southern cookbook, but not in the stereotypical sense. There's of course a healthy nod to classic southern cooking but also a huge, but also an adventerous variety of recipes from various styles and flavor combinations (but always with ingredients I can get my hands on, of course).

Of course, nothings perfect. As mentioned by a few others, the organization is pretty terrible compared to most recipes. They did divide by the nature of the food (breakfast, yeast breads, and beverages all have their own section rather than organizing by date of publication in the magazine). However, the sections, for reasons I don't understand, are arranged alphabetically so that pastries come between meat and poultry!

Still, the organization can't beat the fact that I can't open to a spread of pages and not find at least one recipe I would love to have (and make). I'm not kidding, I tried this and only once did I open to two catfish recipes and a reference page (I'm not crazy about catfish) and even then I'd easily break one of them out during Lent. My husband tried the same... he's as excited as I am.

This ones going on my surefire hit for Christmas gifts!

Being Dead Is No Excuse 5 out of 5 stars.

I did not know what to expect but I laughed all through the book. The recipes look promising although I have not had the opportunity to try one. I have given this book as a gift and recommended it to several friends. You might find it more relevent if you are from the South and are Episcopalian.

Just the recipes alone ... 5 out of 5 stars.

are enough to justify this purchase! They're outstanding, and so traditional down south that most folk don't even bother to write them down. But the writing - especially ias it relates to being Methodist or Episcopal, and whether your family falls on one side or the other of the politics in your hometown ... it's all good. Just hilarious! If you grew up in the South, you recognize these people described herein - and if you didn't grown up in the South, well, you'll wish that you had!

Buy it - it's all good!

Love,

Wonderful 5 out of 5 stars.

This is one of the best books I have ever read. Being from Alabama I know that what she says is absolutely true!

Nostalgia for plantation life?!!! 1 out of 5 stars.
1 of 6 people found this review helpful.

Apparently I am the only reader who found parts of this book DEEPLY offensive. The author practically swoons over those fabulously fortunate [white] folks who owned plantations. I think we all know who provided the labor force on said plantations. Thus nostalgia for slavery is pretty much undisguised. I quit reading and returned the book to the library at this point. I'm white, but I hate to think what an African-American would experience reading portions of this "humor" book. I'd give it zero stars or, if it were possible, negative stars.

A pleasing sampler of Southern-style favorites 5 out of 5 stars.
2 of 2 people found this review helpful.

Nancie McDermott's Southern Cakes gathers some of the South's most well-known delights: pristine fluffy coconut cakes, deliciously oozy jelly cakes, red velvet cake, pineapple upside-down cake, Mississippi mud, all the way to that towering confection, Lady Baltimore cake, rich with raisins, figs, pecans and brandy. Along the way, she shares plenty of stories of the origins of the various recipes, many from family and friends or from various regional cookbooks.

There are numerous variations on pound cakes (classic, chocolate, marble molasses, brown sugar, cream cheese, blue ribbon, bourbon, sweet potato) that are easy to whip together; these are perfect for impromptu afternoon teas or to give as gifts. There are light and fluffy coffee cakes, oatmeal cake, and date-nut cake. I also loved the addition of "ethnic" baking recipes such as a Russian Jewish babka (yeast bread), a tres leches cake (a traditional Hispanic favorite that blends milk, sweetened condensed milk and evaporated milk), a Rosh Hashanah honey cake and a Passover torte that are perhaps not as quickly associated with Southern desserts.

Also included are heirloom and antique recipes such as a tomato soup cake, Ozark pudding, and a cake recipe dating from 1898. I loved some of the more offbeat creations such as chocolate mayonnaise cake, pumpkin-raisin cake, a "Japanese" fruitcake, and the divine fig cake and pear bread.

Finally, a chapter on icings rounds out the cakes, with recipes for seven-minute frosting, cream cheese, browned butter, chocolate fudge, classic boiled, and never-fail chocolate icings, a caramel glaze, and an easy lemon curd (which is super-expensive if you buy it at a specialty store).

The ingredients are ones that you probably already have in your pantry (except for the Southern staple of self-rising flour, perhaps), and the instructions are very easy to follow (they're broken down by paragraph, with the first line of each printed in an easy-to-read red and a less-easy to read light blue). The text runs on the small side, which might be harder to read for older readers. In the back are a bibliography, a selection of sources online, and a conversion chart.

This is a nice addition to your baking library if you love to whip up frosted layer cakes or you're looking for some lighter ideas perfect for brunch or tea (the pound cakes and coffee cakes). It's easy to use, and Nancie lists many intriguing Southern cookbooks if you're interested in learning more about the cuisine of a particular region.

Editorial Review:

Taste the chocolatey goodness of Mississippi Mud or marvel at the extravagant elegance of the Lady Baltimore and there will be no doubt that Southerners know how to bake a cake. Here are 65 recipes for some of the most delicious ever. Jam cakes and jelly rolls; humble pear bread and peanut cake; whole chapters on both chocolate and coconut cakes each moist and delicious forkful represents the spirit of the South. A Baking 101 section offers the cake basics, some finishing touches (that means frosting and lots of it!), and the how-to's of storing each lovely concoction so that the last slice tastes as fresh and delightful as the first.

Editorial Review:

Here for the first time the famous food of Louisiana is presented in a cookbook written by a great creative chef who is himself world-famous. The extraordinary Cajun and Creole cooking of South Louisiana has roots going back over two hundred years, and today it is the one really vital, growing regional cuisine in America. No one is more responsible than Paul Prudhomme for preserving and expanding the Louisiana tradition, which he inherited from his own Cajun background.

Chef Prudhomme's incredibly good food has brought people from all over America and the world to his restaurant, K-Paul's Louisiana Kitchen, in New Orleans. To set down his recipes for home cooks, however, he did not work in the restaurant. In a small test kitchen, equipped with a home-size stove and utensils normal for a home kitchen, he retested every recipe two and three times to get exactly the results he wanted. Logical though this is, it was an unprecedented way for a chef to write a cookbook. But Paul Prudhomme started cooking in his mother's kitchen when he was a youngster. To him, the difference between home and restaurant procedures is obvious and had to be taken into account.

So here, in explicit detail, are recipes for the great traditional dishes--gumbos and jambalayas, Shrimp Creole, Turtle Soup, Cajun "Popcorn," Crawfish Etouffee, Pecan Pie, and dozens more--each refined by the skill and genius of Chef Prudhomme so that they are at once authentic and modern in their methods.

Chef Paul Prudhomme's Louisiana Kitchen is also full of surprises, for he is unique in the way he has enlarged the repertoire of Cajun and Creole food, creating new dishes and variations within the old traditions. Seafood Stuffed Zucchini with Seafood Cream Sauce, Panted Chicken and Fettucini, Veal and Oyster Crepes, Artichoke Prudhomme--these and many others are newly conceived recipes, but they could have been created only by a Louisiana cook. The most famous of Paul Prudhomme's original recipes is Blackened Redfish, a daringly simple dish of fiery Cajun flavor that is often singled out by food writers as an example of the best of new American regional cooking.

For Louisianians and for cooks everywhere in the country, this is the most exciting cookbook to be published in many years.

Wonderful Cookbook 5 out of 5 stars.
1 of 1 people found this review helpful.

Last night I had the opportunity to experience Virginia Willis making some of her delicious recipes from her new book, Bon Appetite, Y'All. Not only was she charmingly delightful, her Southern style, mixed with French cuisine, was refreshing to me. My daughter and I were entertained with stories and recipes from her mother and grandmother. As she read the introduction to her book, I was flooded with emotion, relating to the same Southern heritage, recipes written on scrapes of paper taped to cabinet doors, and the smell of fresh baked cake coming out of the oven. Virginia Willis is able to take complicated techniques and explain in terms everyone can understand. You will love her stories as she introduces her recipes. This is a beautiful cookbook to display in your kitchen or keep on your coffee table. I love Bon Appetit, Y'all and getting to meet Ms. Willis in person was a treat. What a wonderful evening to experience with my daughter.

Editorial Review:

Before she attended the prestigious French cooking school École de Cuisine La Varenne, Virginia Willis had been shelling butterbeans alongside her mother and grandmother in her Georgia family kitchen ever since she could stand on a stool. These divergent influences inform her passionate homage to the cooking of the South. From simple starters and slaws to generous entrées and desserts, Willis makes down-home cooking refined and haute cuisine friendly, with recipes like Vidalia Onion Soup with Bacon Flan, Pulled Pork Sandwiches with Mama's Barbecue Sauce, and Hot Vanilla Soufflés with Vanilla Ice Cream. Brimming with stories, tips, techniques, and gorgeous photographs, BON APPÉTIT, Y'ALL seamlessly blends Willis's Southern and French roots into a memorable and thoroughly modern cookbook.
