Reading Matt Martinez's Culinary Frontier is like digging into heaps of the best food you've ever eaten while listening as a kicked-back, sleepy-eyed hombre tells you how his Mexican grandfather fled to the U.S. to escape hanging, then started the first Tex-Mex restaurant in Austin, Texas. Martinez, who spices up his volume with old family photos, talks about feeding the local politicians and famous sports figures who come through town. You want him to keep talking while you keep eating.

Martinez practices true cowboy and prairie cooking. He claims that all dishes can be prepared in a cast-iron skillet. He believes in lard and homemade chorizo, but also cooks lean food. Carne Gasado, an elemental chicken stew, Matt's Jalapeno Coleslaw, and creamy King Ranch Casserole made with sirloin are evidence of his cooking style. Catch the recipes for smoky and hot Chipotle Sauce, unusual Corn Tortilla Quesadillas, and incendiary Prairie Mary Cocktail. If you get to Dallas, the Smoked Baked Potato served at Matt's No Place, one of the four restaurants Martinez has in Texas, is an experience long remembered. The Rancho La Puerta spa in Baja California has been around for almost 60 years and has gained a reputation for its flavor-packed, low-fat vegetarian meals. Longtime chef Bill Wavrin, known for stunning his guests with his expertise, lets his love of Southwestern cuisine show through in his (mostly) simple recipes. Few dishes require more than a dozen ingredients, and he includes information on calories, total fat, saturated fat, cholesterol, protein, carbohydrate, fiber, and sodium for each dish. Orange-Corn Muffins and the Rancho La Puerta Granola have been satisfying guests after the strenuous morning hike for years. Dishes such as Mango Tomatilla Salsa, Broccoli Soup, Curried Rice Salad with Fruit, Banana-Oatmeal Cookies, and Blueberry Cheesecake will make you feel like you're indulging, but won't cost you more than 120 calories per serving. In between the chapters, Wavrin offers cooking tips (how to eat a mango; how to identify and prepare various chilies) and soothing ways to "take the ranch home" with you, including stretches and other fitness tips. If you can't get to Baja, this book is the next best thing.

As with her other book, the Route 66 Cookbook, Marion Clark has again combined wonderful recipes with interesting facts and history on the ever-fasinating Route 66. I wish I had this book before I took my Route 66 roadtrip. Of course, I recommend this book to anyone who enjoys great recipes. But I also recommend it to those who have traveled or long to travel the "mother road." It's a great read for all! (I'm eagerly awaiting the release of her next Route 66 Cookbook!)

Mrs. Clark wholeheartedly wants you to "Get your kicks on Route 66" with the help of her cookbook/guidebook. Following the classic old road from Illinois to California, she visits the kitchens of inns, restaurants, community cookbooks, and residents who provide memories along with regional tastes.

For as interesting a concept as this cookbook is, it's a shame that it has as many editing errors as it does. One can overlook the occasional odd terminology used in the ingredients lists (soda instead of baking soda), and the few rather large portion sizes (the recipe for "Mustard Relish" makes 9 pints). But it is unacceptable to have ingredients called for that are not used and exact ingredient sizes not given.

The recipe for "Chorizo Roll" asks for 4 links Mexican Chorizo Sausage but doesn't tell you how much that would be in ounces or pounds. I've seen these links come as large as Italian sausage links and as small as breakfast sausage links. It makes a big difference. The recipe for "Paper Bag Apple Pie" lists a 9-inch unbaked pie shell twice, once for the pie and once again for the topping. I double-checked the recipe and the second pie shell was definitely an accidental listing. In the same recipe, though this is probably obvious to some, the ingredients list calls for 6 baking apples but doesn't list a preparation for them (diced, sliced, chopped, etc...). It's not until you get into the description does it mention that the seasoning mixture is to be sprinkled over sliced apples.

Of the recipes I tried, each turned out delicious and satisfying, after a few adjustments. Making "Strawberry Muffins" doesn't get any easier and they are not too sweet to serve as a snack or along with breakfast. Though I had to substitute a similar local white wine for the regional one called for in "Chicken and Rice in Wine", the dish smelled heavenly and had a very pleasing taste.

The abundance of recipes and travel information warrants the price tag but the mistakes make you want to ask for a discount. If you are curious about traveling along Route 66 yourself someday, you might find some fun recipes to try out or look into tasting straight from the source. In general though, it asks for more bang for the buck than it delivers.

If you have ever wanted to duplicate the food from your favorite New Mexico restaurant in your kitchen, this book is for you. Probably the most unusual southwestern cookbook ever compiled, it features an assortment of recipes as eclectic as the state’s cultures, many of them contributed by well-known New Mexico chefs. The recipe for refried beans comes from Philomena’s restaurant in Los Alamos: it is followed by instructions for preparing the world-famous chile served at the Owl Bar & Café in San Antonio. Also represented are dishes like poulet marengo from more glamorous Santa Fe restaurants such as La Tertulia and the Pink Adobe, along with such obscure regional specialties as Hobbs barbecued ribs, Silver City sausage, and Carlsbad casserole.

The book concludes with a selection of recipes donated by some of the state’s best known citizens. For those who have eaten at the restaurant in NY and know how good the chili is, this is your chance to try and recreate their chili. Although you'll never get your chili to taste as good as the restaurant's, it will ease your cravings until you have the chance to go to NY again. These recipes are very easy to follow and the payoff is worth it. Every friend I've given this book to has made at least 3-4 different types of the chili and have liked them all. Tenderfoots be ware!!
