This is a great addition to any cookbook library. Great recipes, quick to fix and with all the handy modern day convenience items available, does not take long at all to whip up something.

We always buy green chilis from Hatch, New Mexico each year which we roast, bag and freeze for use during the year. I wanted to find new ways to prepare these. This cookbook contains many yummy recipes that I can hardly wait to prepare.

This book is an excellent collection of Southwest American chile recipes. The recipes are divided by meals or usage into chapters including breakfasts, appetizers, salads, soups, vegetables, breads, main dishes with meat, main dishes without meat, accompaniments, and sweets. The recipes are at once creative and inspiring. While some of the recipes are clearly influenced by traditional New Mexican cuisine, such as sweet chile albondigas, some are of native American origin, like summer squash bake, still others are clearly 100% Midwestern American, like crusted green chile loaf. In any case, all of the recipes are united by their common use of chiles.

For reading pleasure, there is a short section on tips, facts, and fancies- -did you know that wild chiles on the bush are also attractive to birds? At the back of the book you will find a glossary, and for those who don't live in New Mexico, a list of chile suppliers. There are no pictures, but that's OK- -more room for recipes. If you like chiles, you need to have this book.

Not the book I hoped it was going to be . . . 3 out of 5 stars.

Like a lot of people, I use my slow cooker regularly because it means I don't have to spend a lot of time in the evening, after work, cooking from scratch. You let something spend the day cooking by itself and when you come home, it takes only a few minutes to make a salad or a side dish and then you can get down to eating. And because I'm an afficionado of Tex-Mex and New Mexican food, this nicely illustrated volume caught my eye. Well, there are a number of interesting recipes here, but very few of them were designed with slow-cooking in mind. The authors seem mostly to have taken standard dishes, like Chicken & Chile Enchiladas and Pork Adobada, and substituted a crockpot for a stove top pot. That is, after you remove the contents of the crockpot, you still often have a fair amount of work to do. That's not why I use a slow cooker. I also have to wonder why they think simply tossing in some chipotle powder makes spareribs (or whatever) "southwestern." So it's not a bad book, but neither is it what the title seems to advertise.

Wonderful recipes, made healthier in River Road III 4 out of 5 stars.

I guess I would give this book more like 4 1/2 stars. My fiance is from New Orleans and I wanted to serve more native dishes but in a healthier way. This book is just the ticket. The only thing I'd change is a few more of the "traditional" recipes but what is in there is very good with easy-to-follow directions. I especially like the way it shows you the difference between the original and lighter recipes. My future mother in law has used the book for years and really likes it. I can't wait to try more recipes.

This book was like a dream come true for me. The two previous River Roads Recipes books were my favorite cookbooks, but I was trying to cut back on the fat content that is usually so high in the Cajun & Creole cooking I grew up on. This book offered me the answers I was looking for.

I can't believe there are used copies available! Why would anybody sell one after seeing and using it? I wasn't born in Texas but was made an "honorary native" by friends (complete with membership card!). I received this book as a gift after moving back to the midwest and I LOVE it! I now make the best chicken-fried steak this side of the Sabine River thanks to this cookbook. It not only has great recipes, it has invaluable tips and interesting comments on Texas culinary history and culture. The recipes are not fancy (meaning not "nouveau" or "fusion"), not laden with fillers. Just good food suitable for any night of the week.

I have owned this book for over 10 years now and have cooked most everything in it. I'm telling you honestly that I have yet to cook something out of here that doesn't get snacked on constantly or rave reviews from people that visit. My original copy of this fell apart from being used so much! What I wound up having to do was cut the spine off of the book and rebind it myself.

I'm honestly very surprised that this book doesn't have more reviews than it does. Not only are the recipes wonderful to eat, they are fun to read. The author adds fun descriptions and background information with every recipe. Reading these will actually make you want to cook them. Almost every recipe book that I've read since has been disappointing in this respect. This book raised the bar!

Actually there is one recipe that I haven't been able to cook very well, and that is the biscuit. I've dedicated entire days here and there to do nothing but cook batches trying to get it right, but they always come out hard and don't taste very good.

I bought this book for my father-in-law who loves to cook and loves southwestern food. I decided to flip through the book when it arrived and couldn't put it down to wrap it so decided to use five of the recipes and make my father-in-law his birthday dinner from the book I was giving him. I chose Pulled pork (which as a unique ancho chile-dried cherry sauce, YUM!), Cow boy beans (sounds boring, but I could have eaten the entire pot myself it was so good!), chipotle cornbread (spicy, just the way we like it!), cornmeal biscuits (a great non-spicy biscuit with a great texture and flavor, couldn't decide if I liked the chipotle cornbread or these better!), and triple chocolate, ancho chile, and almond tart for dessert (decedently divine!). I also loved how the book has a sample menu for each month of the year so entertaining can be that much less work. The book also included some great recipes that utilized different catus. There are also specatcular photographs of southwestern landscapes and plants that give this book a elegant coffee table feel.

So, if you, or you need to buy a gift for someone who loves to cook and loves southwestern food this is the book for you! I am going to have to buy my own copy so I don't end up stealing my father-in-law's.

Truly a spectacular cookbook, Mark Miller has recipes that will delight the senses and make you a hero at any dinner party. The ingredient combinations play off of each other and offer unique twists on traditional southwestern cooking. As one very familar with the southwest and it's cuisine, this book ranks as enticing and innovative. The recipes are foolproof and easy to follow, but you will need to adhere to the fresh ingredients rule-- no canned black beans, or frozen corn for these recipes, stick with fresh and you can not fail. Unlike some other cookbooks that feature regional cuisine, Coyote Cafe includes complete recipes that you do not need to tinker with and that are tested. So go ahead cook with Miller and howl at the moon!

I received this cookbook as a gift for this past Christmas, and have loved trying the different recipes. Most seem to have ingredients common to our home, and they aren't difficult if you can follow instructions. The stories are very interesting, and the photos make you want to cook the recipe that day. I hadn't heard of it prior to receiving it, and within 2 weeks have cooked 5 recipes, and planning on more. Main dishes, desserts, baked goods, all with a TexMex flare. My recommendation, is go ahead and buy it.

Fresh and Tasty Ideas from Santa Fe! 5 out of 5 stars.

Many people are surprised to find out that we don't just cook Cuban. Yes, we actually enjoy dishes from many countries. Of course, we do have a natural affinity to Spanish and Latin-American cuisines. The Santa Fe style of cooking, an amalgam of Spanish, Native American, Mexican, Southwest, and New Age cuisine has always intrigued us. When we want to "kick it up a notch" on the hot and spicy meter, we like to cook Mexican food. And we love tacos and freshly prepared salsas.

A new book from the Santa Fe School of Cooking has re-energized our taco skills and given us a new appreciation for the flavors of the Southwest. We especially enjoy the variety of inspired salsas -- everything from roasted corn and Anasazi bean to cherry pistachio. For our Cuban audience, the grilled pineapple and grapefruit-orange salsas are right up your alley, offering flavors and a heat level that isn't far removed from Cuban cuisine.

Two taco recipes really knocked our socks off: Hot and Smoky Shrimp Tacos and Roasted Wild Mushroom Tacos with Queso Fresco. Not classically Mexican, these fusion dishes really deliver some unique flavors. We were also delighted to find a recipe in the book for apple pie tacos -- again, we never saw this one in Mexico, but what a great idea for dessert!

Salsas and Tacos is a nice little book in a beautiful package with enticing photographs and easy-to-follow instructions. A perfect gift for the food lover and at this price, why not buy several and make several people happy?

Also recommended: "Three Guys From Miami Cook Cuban" and "Three Guys From Miami Celebrate Cuban."
