Absolutely the BEST SW Territorial Cuisine - AUTHENTIC! 5 out of 5 stars.
12 of 13 people found this review helpful.

There is no doubt in my mind or on my tongue that this cook book has absolutely the best recipes for SW Territorial Cuisine. When you dine in Santa Fe or Taos, this is the food you eat in private homes or at the best restaurants. The meals are totally authentic. Dent takes you through time and tradition providing descriptions of ingredients and preparation methods that are sure to get your juices flowing! There isn't a better reference. I've given over a dozen of these books to people who have commented on my enchiladas and green chile. Go for it without hesitation!

The Cookbook I Use the Most 5 out of 5 stars.
9 of 11 people found this review helpful.

I have used this cookbook for over 5 years and I still find new things to try. Today I showed this book to my in-laws and they were so excited to see long forgotten recipies from their childhood. I will now buy another copy to give my father-in-law otherwise he will have me make all his favorites everytime he visits.

Editorial Review:

Dent explores the traditions of Native American cooking and shows how they were modified by Spanish, Mexican, and Anglo-American influences and by the bounty of the land. More than 150 recipes have been adapted to suit the modern coo k, making it easy to create an authentic feast from appetizer to dessert. 2-color illustrations.

Falling In Love again! 5 out of 5 stars.
10 of 10 people found this review helpful.

The review I did for Ms. Kagel's previous book was entitled: Can You Fall In Love With A Cookbook? Well, the answer was yes and is yes. It is difficult to believe it has been a decade since the last wonderful book was published. In those years I have matured as a cook/baker and it appears Cafe Pasqual has matured, but in a good way. The recipes in this volume are a little different with a bit of Malaysia, Thailand and the exotic East thrown in for good measure. However, to be honest, it is the Southwest recipes I will probably enjoy again and again.

The recipes you will find in this beautifully photographed book (the color is to die for)offer something for everyone. I gave the recipe for Linda's Golden Granola to a co-worker today and she rushed home after work to make some. She's a Yoga instructor, by the way, and vegetarian, of course.

My particular favorite at the moment is the fantastic Red Chile & Sugar-Cured Bacon. If you have been bored to death with breakfast and haven't been able to find a recipe to rock your world in the morning, look no further. I made this yesterday (I pre-ordered the book and got it last week) and got rave reviews from my brunch guests. You simply MUST try this unique and wonderful recipe. Beyond yummy.

Tonight I made the Shortbread Cookies and used my Scotty Dog and Cat cookie cutters. They turned out great. You can never have enough shortbread recipes. Great with Tea.

This week I will be making the Moroccan Eggplant with Cilantro, Ginger & Garlic. I can almost smell the aroma!

This wonderful book has it all. Fantastic recipes for:
Breakfast, Soups, Salads, Lunch, Appetizers, Dinner, and Dessert. You can go on-line to their website and order a wide array of their signature goodies, as well as their fab T-shirts, coffees and other great items. There is also information at the back of the book on how you can order spices and other items mentioned in the book, from companies all over the US. So you can't use the excuse: My store doesn't have these ingredients. You will find them listed for you. Ms. Katherine has thought of everything!

The cover photograph is festive and beautiful, colorful, inviting, warm and homey. At some point in the next couple of years, I will definitely be dropping in at Cafe Pasqual to meet Katherine Kagel and staff, and also enjoy some of the dishes that are represented in this wonderful book. Can't wait! However, you don't have to wait. Just order this book right now and spend an evening just sitting on the sofa going through page after colorful page. Yes, you CAN fall in love with a cookbook! I have. Twice.

Editorial Review:

Disappointing as best 1 out of 5 stars.
31 of 42 people found this review helpful.

The authors produced a much better book when they compiled The Border. Rancho de Chimayo has very few recipes, some of which call for Velveeta of all things, and the warnings about drinking and driving in the Cocktail chapter, are annoying.

This restaurant may be the darling of the New York food writers, but NY food writers don't know anything about Southwestern food.

Spend your money elsewhere.

Taste the "land of enchantment." 4 out of 5 stars.

The authors of The Rancho de Chimayo cookbook DO love New Mexico. The sub-title states: "The Traditional Cooking of New Mexico," and the cookbook lives up to that statement. The first 48 pages gives history of New Mexico through native foods, folk-lore, spirituality and settlers bringing their own norms of food production. Unfortunately, you will not find the flavor of New Mexico in restaurants outside of N.M. I lived in N.M for 10 years. If you have ever been charmed by N.M.'s food & beauty you can re-create this experience through this cookbook. Try it!

Editorial Review:

Who hasn't fantasized about leaving behind the chaos of everyday life and moving someplace where life is simpler? Well, that's just what chef and food writer Paula Disbrowe did when she left New York City and moved to Texas. She traded her subway MetroCard for a pickup truck and her stiletto heels for a pair of down-home cowboy boots.

In Cowgirl Cuisine, Paula tells her story through food. She weaves together romance, adventure, and more than a few laughs as she celebrates the beauty of flavorful food, fresh air, and her own wholesome recipes, all while taking home cooks on a journey well off the beaten path.

Like Texas itself, the recipes in Cowgirl Cuisine are big-hearted and bold—whole-grain muffins bursting with berries, salads loaded with leafy herbs and avocado, and fiery bowls of chili. Paula's food is healthful and full of nutrients, but this is not a diet cookbook—cowgirls don't have time to count calories (besides, they burn it all off hoisting newborn calves, hiking the hills, and galloping off on long trail rides). Instead, this is food that is satisfying and easy to prepare, which leaves plenty of time for living life to the fullest.

From hearty ranch breakfasts to fresh salads, spicy nibbles, seductive desserts, and killer watermelon margaritas, Paula's recipes are full of her signature zest, spunk, and spice. Start your day off right with Canyon Granola or Cowgirl Migas. For lunch, have a nourishing bowl of silky Roasted Pumpkin Soup with Red Chile Cream or Chicken and Citrus Slaw Tostadas. For dinner, try Gazpacho Risotto with Garlic Shrimp or Cowboy Pot Roast with Coffee and Whiskey. And be sure to save room for one of Paula's decadent desserts, such as Chocolate Pecan Squares or Dulce de Leche Flan with Pepita Brittle.

In addition to her recipes, Paula includes humorous and heartfelt vignettes about wild animals on the loose, scorpions in the sheets, and Casanova cowboys. And the pages are filled with lush photographs of food and life on the range. Cowgirl Cuisine isn't just spurs and salsa—it's about following your dream. So saddle up and follow yours.

Editorial Review:

Southwest the Beautiful Cookbook explores a cuisine as diverse as the terrain and the people who settled there. The region's culinary originality derives from a historic union of native American, European and Mexican cultures, each contributing its own distinctive cooking traditions to produce what we know today as Southwestern fare. This cuisine is sumptuously presented in Southwest the Beautiful Cookbook with more than 200 recipes illustrated with stunning full-color photography. Noted Pheonix-based cooking teacher and food writer Barbara Pool Fenzl has gathered recipes that combine innovative techniques and dynamic food combinations with historic methods and ethnic contibutions to produce dishes as vibrant and exciting as the Southwest itself; shellfish tamales with ancho cream, quail salad with pumpkin seeds, sopiapillas and jalapeño chutney and so much more.

Complementing the recipe chapters are informative essays by noted author and Southwest enthusiast Norman Kolpas, along with glorious photography that bring this wonderful region to life on the printed page. The people, geography, and history of the area are skillfully portrayed in scenic photography and richly anecdotal text. Home to such awe-inspiring natural wonders as the Grand Canyon, Arches National Park, Mesa Verde and the Sonoran Desert, this region is a land of austere beauty, rich culture and a uniquecuisine that is very much alive in this gorgeous addition to the Beautiful Cookbook® series.

Part of the simply outstanding "Best of the Best" state related cookbook series from Quail Ridge Press, Best Of The Best From New Mexico Cookbook is a compilation of recipes drawn from a variety different cookbooks showcasing New Mexico's culinary traditions and treasures of this southwestern state. From Gazpacho (Cooking at the Natural Cafe in Santa Fe); Zuni Succotash (Southwest Indian Cookbook); Burgundy Venison Steak Tips (Sassy Southwest Cooking); and Chicken Tacos with Avocado (Beyond Loaves and Fishes); to Ruidoso Winner (Savoring the Southwest); Bavarian Apple Torte (Recipes from the Cotton Patch); Applesauce Cake (Billy the Kid Cook Book); and Berry-Pecan Flan (The Santa Fe School of Cooking Cookbook), each easy-to-prepare recipes has a complete list of readily acquired ingredients and step-by-step preparatory instructions. A kind of "sampler" cookbook, one of the best features is the section devoted to listing each cookbook represented in this culinary collection, including their respective publisher's contact information for obtaining the originating cookbook for any particular recipe that has proven to be an especial family favorite. Indeed, all dedicated kitchen cooks and fans of regional cuisines should visit the Qual Ridge Press website for a complete state-by-state listing of their "Best of" cookbooks.

Editorial Review:

If there are beans and corn on the stove, a stack of blue corn tortillas nearby, and a ristra of dried chilies against the wall—then you must be in a New Mexico kitchen! Be forewarned: the pungent aroma of roasting chilies and simmering salsas will likely send your senses into a frenzy. And when you taste the resulting dishes, you will quickly understand why the popularity of one of our country’s oldest cuisines is rapidly spreading across the country.

Best of the Best from New Mexico will introduce you to a variety of these lively, spicy dishes that bring a new meaning to the word taste. Fifty-six of the leading cookbooks from the Land of Enchantment have contributed their most popular recipes to create this outstanding collection. New Mexico’s unique cuisine is captured in such southwest favorites as Blue Corn Meal Pancakes, Jalapa Hamburgers, Tequila-Lime Grilled Chicken, Mexican Cream with Strawberries.

New Orleans Restaurant Cooking 5 out of 5 stars.
2 of 2 people found this review helpful.

This beautiful 192-page book is a triumph for Chef Carl Walker. This eclectic and inventive collection of recipes has been carefully accented with full-color photographs and personal anecdotes. It is a wonderful gift for fans of Brennan's, and even for home cooks who have never made their way to Houston.

The book is organized by course: Beginnings (Lagniappes, Drinks, and Appetizers), Garden and Beyond (Salads and Soups), Breakfast, Meats and Poulty, Seafood, Accompaniments (Sides, Sauces and Seasonings), and Fantastic Desserts.

Each recipe features an expected yield, list of ingredients, paragraph-style instructions on how to prepare the ingredients, and a Chef's Tip. The Chef's Tips include technique suggestions, ingredient substitutions, and reminders on how to prepare the raw ingredients.

The desserts section is especially decadent. For example, the Chocolate Praline Cheesecake is a masterpiece by Pastry Chef Melissa Piper Reilly. This luscious dessert uses a chocolate crumb crust filled with caramels, pecans, and chocolate-laced cheesecake filling.

This beautiful cookbook will be a delight for chefs and bakers alike. Enjoy!

Editorial Review:

Proving that Creole and Texas styles are kitchen-compatible, Chef Carl Walker artfully presents these distinctive tastes at the acclaimed Brennan's of Houston. Capitalizing on fresh ingredients available at his back door, Chef Carl injects his culinary magic into every dining element and reveals his own kitchen tips and techniques.

Comfort Food at its best 5 out of 5 stars.
28 of 29 people found this review helpful.

This cookbook keeps with the tradition of all previous Southern Living cookbooks, providing recipes for tons of comfort foods. The gooey, rich Candy Bar Brownies are WONDERFUL, but needless to say, everyone is glad that they keep the nutrition information on this recipe a secret. Additionally, this cookbook has quite a few good low-fat/light recipes. Southern Living's 20th Anniversary cookbook is a must have for any kitchen.

I really liked this book. It is a collection of the best recipes from Southern Living over a 20 year period. How could it not be great. Also, unlike the annual editions it lists recipes by category making things easier to locate.
