From Shoyu Hot Dogs to Lamb Wellington "Indianne" with Tropical Fruit Chutney, two local authors have hit the nail on the head with their new cookbook, What Hawaii Likes to Eat.
A collection of 130 recipes submitted by readers of a Honolulu daily newspaper, the range of dishes and tastes are as varied as the multi-cultural and chop suey residents of Hawaii.
If there is one thing that all people like to do is eat, and with so many influences in the Crossroads of the Pacific, it would be impossible for even the most finicky of eaters not to discover something in this book that would make their mouths water.
Cookbook writer and editor Muriel Miura teamed with the newspaper's food editor Betty Shimabukuro and asked the professional cooks and chefs along with the experts -- the eaters -- What do Hawaii folks like to eat?
After months of reading, testing and eating, the result is this spiral-bound cookbook -- with the required color photos needed for any amateur Pacific Rim food preparer to serve a mouth-watering dish.
What Hawaii likes to eat will provide comfort food for those who grew up on the plantation: Chicken Hekka, Musubi and Mango Seed; for those townies who were raised in Honolulu or Hilo: Loco Moco, Hamburger Steak and Chicken Katsu; for those who love luau food: Chicken Long Rice, Laulau, Lomi Salmon and Haupia; and for those who appreciate the ambiance as much as the meal: Cavalier Restaurant's Lobster Thermidor, Hiroshi Eurasian Tapas' Garlic Shichimi Ahi with Ponzu Vinagrette and Kahala Resort and Hotel's Roasted Garlic Rack of Lamb with Garlic and Herbs.
For poi dog palates, try Napua Steven's Taro Biscuits, Arare Cookies and Sam Choy's Hawaiian Pulehu Tri-Tip Steak.
The kamaaina baby boomers and their parents may remember Jolly Roger's Orange Bread, Queen's Surf Chicken Kamaaina and Little George's Shrimp Scampi. The Stewart's Pharmacy Corn Bread would bring a tear to the eye of anyone who frequented the once-popular Waikiki establishment.
But for all the fancy Lavosh, Orange Souffle, Golden Phoenix Claws and Scalloped Potatoes that are in this book, perhaps the most intriguing recipe is the first -- and possibly the simplest -- the "Oki Dog," an American, Mexican, Tex-Mex and Okinawan Fusion creation, which is a bright red, crispy Redondo hot dog, Zippy's chili, shoyu pork and iceberg lettuce all wrapped up in a tortilla.
The delicacy was actually first served on Santa Monica Boulevard in Hollywood by Sakai "Jimmy" Sueyoshi, an Okinawa native who got rich selling his "Oki Dogs," and brought to Hawaii by one of the organizers of the Okinawan Festival who replaced the shredded pastrami that Sueyoshi used with the shoyu pork.

The book itself is fantastic. The only problem I have with it, are the ingredients. I bought this so I could remember some of the food I had while Maui. Many of the recipes have ingredients that can only be bought there. Or are in Hawaiian and I have no idea what would be a good substitute. In order to cook something I have to do some research to find out how to get many of the things this book is good for.

If you have a store near by that sells some of these Hawaiian foods...then this is an excellent book. If you are stuck in suburbia main land USA..it could be more difficult.

This is my favorite and most cherished cookbook even though I am a Virginian and this is a decidedly Californian cookbook. I picked up by chance in a used bookstore and began making recipes from it and was soon quite impressed. After 5 years, I have yet to find a bad recipe in the book. Furthermore, the recipes are elegant and somewhat fancy while not being too out of the mainstream or too exotic -- or too difficult for that matter. Interestingly, many of the recipes in here have become "standards" (Khalhua pie, baked brie, Indonesian rice salad) with variations on them popping up in other cookbooks and on the web. These are the original, simple versions that first began to define California cooking. You'll enjoy this.

I have always looked for recipes that are fairly easy but that produce delicious results. This cookbook meets my criteria! Every recipe I have tried has been a success.

I spent a lovely weekend on the coast and happened upon CAFE BEAUJOLAIS. After a splended meal, I purchased an autographed copy of this book. The recipes are all easy to follow and each have a history or source. Her spicy buttermilk coffee cake is to die for! Ms. Fox speaks of her cookbook collection and how she "looks up" the same recipe in many different cookbooks. This is where I first understood the concept of recipe comparing. I also enjoyed reading about the goings-on in her resturant. This is a fabulous book!

The recipes in this book are great, especially the tomato soup and chicken salad (Chinese). I really liked the simple way in which they were written and the use of readily available ingredients. My favorite part of the book was all the minutae about the restaurant itself. From starting a restaurant, to running it, to buying provisions, to personnel, the book was a fascinating inside look at the business of food. The authors never complained, but they made me realize what a tough business they are in. Hope I can visit Cafe Beaujolais sometime.

I am ordering this for a friend in Japan, after having used it myself for years. I give it often as a gift, because it contains so many recipes that are on the "favorites" list of everyone in my family. You won't be sorry!

I personally own over 400 cookbooks & have found Junior League Cookbooks to be one of my favorites. They are "tried & true" recipes for any age. This one contains very unusual recipes & some old standards. Can't go wrong with this one

Delicious recipes that don't require a million ingredients! 5 out of 5 stars.

The best feature of this cookbook is that it uses simple ingredients. I especially like the soup and salad (and salad dressing) recipes, though I have also had success with the main courses and desserts. I have given this book as a gift to several of my GenX-aged friends because the recipes are simple enough for beginning cooks, but my mom and their moms seem to like it, too.

I bought this book at a winery in Napa in 1998 and have used it until it's nearly worn out. Recipes are easy to follow and don't require a lot of time. Everything I've ever tried is great. My family especially loves the salads and dressings. Sorry, Maryana, but I have shared some of your recipes at guest requests, but now I'm going to buy several copies for hostess and holiday gifts, and I'm going to replace my copy while I'm at it!

I got this as a gift and it has its good and bad points. First, its small (plam sized paperback) that is quite attractive. Front of an artichoke on the front cover, back of one on the back. It is put out by the California Artichoke Advisory Board...who knew there was even such a thing?) Because of that the beginning of the book is full of intersting artichoke history, arichoke lore, basics, prep tips,cooking techniques, eating hints and nutrition facts. More than I have seen in cook books of 1000 pages.

There are 21 recipes that run the gamut of sauces for the chokes to entrees where they are the main ingredient. There are good discriptions for the recipes, altho no pictures. Some cute line drawings of artichokes. None of which, thankfully, fall into the walking vegetable catagory.

Risotto with artichokes was very good, but risotto is a hard dish for me and i think it needed a bit more explaination. I tried it twice once it was too hard and once it was too gooey. The problem wasnt exactly the recipe, more my problem with correctly making a risotto but the directions didnt help all that much. The artichoke frittata was excellent.

The book is really a bit too small to to just lie flat on the counter and refer to comfortabley. It snaps shut and if you try to get it to lie flat the binding will break. On the other hand its very inexpensive so its really a minor design flaw for the price.

I can't really imagine having bought this myself. Its a bit too small to be practical for me..but as a gift, perhaps as part of a theme basket. Especially a gourmet or italian themed basket with olive oil, pasta, dried basil, garlic braids..etc. this would be an excellent and inexpensive addition

Even though I live in Louisiana, I think this is a great book on cooking. It has lots of useful ideas, and you can substitute your local foods for the Alaskan products. The important thing is that this book teaches how to use what you have on hand, and how to prepare it and make it tasty, the same way that Alaskans have adapted to their environment. Great book at a great price.

As a lifelong Alaskan, this book contained recipes that I've been searching for, but have never found. Yay!! It covers a variety of recipes - from blueberries to Walrus - and it would make a great gift for friends in and out of Alaska.

"Cooking Alaskan" is well-written with good, easy-to-follow recipes. Not only does it have great suggestions for varied recipes, it also teaches the reader how to actually work with the foods from live crab to fish or octopus. I recommend this book to anyone, especially if you live in or visit Alaska!

I've been making Thai Drumsticks for a Crowd for potlucks for the last two years. They're a real draw on a table full of tahini and tabouli! These recipes are easy and the authors descriptions are engaging. Not for people who are looking for serious ethnoculinary books, but easy to dazzle with.

I've been through a lot of Asian Cookbooks but this is one that I keep comming back to for new and orginal reciepes.

Asian Fusion is the Theme, particularly Southest Asia. Thai, Indonesia, Phillipines, Vietnam, Malaysia, Singapore and Fusion Recepies from Australia and New Zenland dot the pages as well as receipies that are had to classify other than really good. They blend ingredients and techniques for some awesome dishes.

The book is more or less organized by theme and ingredient, finger foods, poultry, deserts, salads, soups etc.
In addition to the organization of the book the receipies are organized in a reasonable fashion as well. To many cook books haphazardly organize the steps and ingredients so that you miss something or do it out of sequence (oh, I was supposed to boil this first).

This is not a book for beginners though. The reciepies here are generally moderate to very complex and are generally not the sort of thing you throw together at the last minute. Not to say they don't have some quick and easy ones but the theme is more towards those with gormet inclinations and farmiliarity with Asian cooking already.

One downside to the book is they assume you have access to an incredible variety of ethnic ingredients. In Austin we have Asian Markets and Central Market (an awesome store that specializes in gormet ingredients) but from time to time I find myself unable to locate something needed for some dishes. I've learned some substitutions. Also some of the reciepies can run up your food bill a bit. They are best left for those yearly special occasions.

Still its an EXCELLENT cookbook. Every time I get bored I go back to it and find something new and interesting. Its just loaded with great stuff. Buy it, you won't regret.

I have most of the Cookbooks from here in Colorado & I have never been disapointed yet from one of them. I will have to say this one will be just as good as the rest.
