This cookbook is so much more than recipes. It's an approach to food that's gentle, kind, thoughtful and practical. The recipes are great, nothing to out there, just good food my family will love. The ideology behind this book is nothing less than inspirational. Highly recommended for those interested in taking care of our bodies, our families and the entire planet.

As others have shared, I have had this book since the 70s and find it more applicable than ever now. It got me through the lean days putting my husband through graduate school, through raising two kids on a budget (while working full time outside the home), and now I'm sending a copy to my son and his fiance as they start out. As we strive to simplify our lives, be more "green", be more economical in tough times, and be more healthy with our food, this book is a MUST!!

It is an excellent book with so much helpful information. It helps us focus on eating more simply with less meat. My old copy has fallen to pieces because I used it so much!

Cute book, not very helpful 2 out of 5 stars.

The folksy advice and complicated concoctions in this book seem to be more fantasy than reality. They call for more ingredients than you'd find in any grocery store, and in order to make these juicy refreshments, you have to have a wide variety of juices on hand. Not to mention a dozen appliances for blending, chopping, squeezing and processing the ingredients they way the book describes.

I was hoping for something that said "juice 2 apples, a stalk of celery and a bannana." But this book says something like, "blend 1.5 oz. apple juice, 3/4 oz. of celery juice, and 3/4 oz of banana juice." It doesn't suggest how much of each fruit you need on hand to make the desired amount. It doesn't even focus on Juicing, which is why I bought it.

Looks cute on the bookshelf, and that's where it will stay. UN-USED.

This book is a wonderful collection of healing
drinks and energizing fuel for the body.
It specifically outlines drinks for each particular
ailment and juice recipes to remedy the problem.
Why pop a pill you cannot digest like eating a rock
when you can enjoy a fresh homemade juice drink to
awaken your soul and tantalize your tastebuds.
This is an excellent book which I have recommended
to several people who juice for their health and
enjoyment. Enjoy life....a pill is no fun.

The food is delicious, but be prepared to make some trips to the store for uncommon ingredients and give yourself some time to make the items. A dehydrator is required for many dishes. We have a collection of cookbooks and it's definitely one to try. More importantly you should visit Cafe Gratitude in the San Francisco area to try all the things that are too tricky to make in the book!

I like the flexitarian menu 4 out of 5 stars.

The biggest difference in this Healthy Eating/Diet book from others of this genre is the flexibility in protein sources. I am not a vegetarian, but I don't care for meat much, especially chicken and fish and I am lactose intolerant so diets heavy in meat and dairy are hard for me to stick to. I appreciate being able to eat whole grains and legumes to meet my protein needs. They are already part of my regular menu. I am still reading the book and plan on starting the 21-day Diet plan in a few days. For me, at least, it seems to be a diet plan I will enjoy and therefore be able to stick to.

    This is a wonderful cookbook for those who typically cook a strict, healthful diet, but it will also fool our friends and family who aren't ready to give up their poor diets. Easy to follow recipes.

    I've had this cookbook since I was an intern right out of college, and it has been my favorite ever since. I especially like the fish recipes, the chick pea artichoke heart stew, and veggie chili recipes. I find that with the lower fat recipes, I can usually eat as much as I want, and still know that I am maintaining a healthy weight, which I struggle with usually. I am buying this book today for my mom, who is now living alone and needs healthy easy recipes. My husband likes it too, since the meals are hearty (he's 6'-5"). I usually make a double recipe and freeze half in individual servings. I highly recommend this, especially for new cooks and busy people, since the recipes are all reasonably quick (like, 45 minutes to an hour). It may not be for gourmets, since there are a lot of pre-prepared foods used (canned beans and vegetables.) You could always substitute your own soaked dry beans if you were feeling ambitious, but the cookbook is great because it uses lots of shortcuts. I highly recommend the book, and I'm not even vegetarian!

The main aim of this addition to their list is to offer much-needed help to those who need recipes for speedy preparation. Most take less than 30 minutes preparation. Recipes include stir-fries, salads, sandwiches, bean dips, soups, scones, pancakes and desserts. Almost all are vegan, with dairy products offered only as optional extras, though there is a separate section on fish and eggs. Winner of the 1995 James Beard Award for vegetarian cookbooks.

    The medical world has been touting the health benefits of the Mediterranean diet for decades. In The Mediterranean Vegan Kitchen, Donna Klein provides more than 300 recipes suited to anyone who wants to eat a healthful diet free of animal products. Unlike many vegetarian or vegan cookbooks that simply take the meat or dairy products out of a recipe--or even worse, use tasteless substitutes--this book includes only recipes that actually exist in Mediterranean cuisine. You won't find any grainy cheese substitutes or spongy meat imposters here.

    In chapters on every course from appetizers to desserts, the author presents recipe upon recipe for flavorful and healthy dishes--all without meat, dairy, or eggs. Appetizers like Mushrooms Stuffed with Bread Crumbs, Parsley, and Garlic--given a sweet and nutty zing from the addition of a fortified wine--or Baked Black Olives with Herbes de Provence and Anise are so full flavored they certainly don't need the richness of animal products. The Poor Man's Pesto (so named because of the absence of cheese) that tops fluffy Potato Gnocchi proves that fruity green olive oil is the heart and garden-fresh basil is the soul of a good pesto. Desserts don't disappoint either. Relying on fresh fruits for flavor, they are just the sort of sweet and rich concoctions we expect from the Mediterranean.
