Betty Crocker is on the health bandwagon. Not one for fads, Betty sensibly bases this 175-recipe cookbook on the Food Guide Pyramid guidelines recommended by the American Heart Association and many other medical and nutrition professional organizations. You learn tips for cutting down on fat and cholesterol, understanding the different kinds of fat, and making smart food choices for heart health. The idea is to reduce fat by making ingredient substitutions and small alterations, but not making drastic changes. The recipes are varied and creative and don't resemble "diet food": Ginger Shrimp Kabobs, Vegetable Potstickers, Stuffed Veal Chops with Cider Sauce, Vegetable and Ham Jambalaya, Curried Chicken and Nectarines, Caribbean Fish Salad, and Thai Shrimp and Rice Noodle Nests. The desserts include Chocolate Swirl Cheesecake with Raspberry Topping (only 20 percent fat!), Blueberry-Lime Torte (about 15 percent fat), and Double Chocolate-Date Cake (about 25 percent fat). Recipes are labeled with symbols indicating "low-calorie," "low-fat," "moderate-fat," "low-cholesterol," and "moderate-cholesterol," so you can choose how far you want to go. Each recipe has a hefty amount of nutritional information: calories, fat, saturated fat, cholesterol, carbohydrate, fiber, protein, vitamins A and C, calcium, iron, and diet exchanges. this is a great book. my daughter is 2 and she has enjoyed the recipes that i've tried so far. there aren't any pictures though, so if your a visual person this may not be for you. but overall the book was great.

My husband bought this book as a gift for my sons 2nd b'day. The recipes are about 50% vegan, 90% veganizable, and of course 100% vegetarian. I think it would be good for someone who isn't a great cook or who has a picky kid. If you're a good cook with an adventurous toddler like me then you're not going to get much out of it.

I am happy I found this book. My 1-year old son is vegetarian by choice, he spits all the meat out. This book is meant for 2+ kids but I use it already and I found a lot of recipes that appeal to adults as well. I like the that the recipes are marked either vegetarian or vegan.

Chances are excellent that you could cook out of The Mediterranean Diet Cookbook for the rest of your life and never feel the slightest tinge of boredom. I had never heard of Celiac Disease until I got a call from my Dr saying I had tested positive. After five minutes on the Internet I began to cry!! What CAN I eat?? This is the first cook book I bought when at a nutritional store for the first time (Talk about overwhelmed!!). As I read through this book I received my first ray of hope that I CAN do this. I have tried some of the recipes all with good results. The bread I made is simply delicious. I actually can have sandwiches!!! I am going to give away all my other cookbooks ( I have quite a collection from the past forty years or so) and just keep Bette's. I will say that some of the ingredients are not the most healthy (Butter flavored Crisco), but let me be honest, I didn't always cook or eat totally healthy (croissants, pie, cake, cinnamon buns) before my diagnoses! It is a wonderful encouragement to me to know, that while I cannot make a steady diet of these treats, I can make them for myself fairly easily. I highly recommend this cookbook for those who are willing to put some initial time into advance preparation. Frankly, I am thrilled to know I can enjoy pumpkin pie and my family's traditional corn bread stuffing this Thanksgiving!

If you or a family member has diabetes, food preparation may seem like a chore or a deprivation. What can you cook that tastes good and fits the diabetes guidelines? The authors of Diabetes Cookbook for Dummies, diabetes expert Alan Rubin (who also wrote Diabetes for Dummies) and registered dietician Fran Stach, have come up with dishes that will please not just the person with diabetes but the whole family. The diabetes diet is healthy for all of us, and if we can make it taste good, we all benefit.

That's where this book shines. The 112 recipes are as creative and tasty as they are healthy, yet most take a half hour or less of preparation (plus cooking time). Recipes include Soy Waffles, Crispy Corn French Toast, Portobello Paté, Carrot Soup with Leek and Blood Orange, Mango Tortilla Salad, Oriental Beef and Noodle Salad, and Spaghetti Squash with Fresh Basil, plus a variety of fish, meat, and poultry entrées. horrible, I would really love to know who these moms are that have all the time to make all this stuff. I am convinced they must have nannies or other major help. Many of the recipes have over an hour for prep time (3 1/2 hours prep time for beef stew anyone?) If I am going to spend that much time making something for my 15 month old, I would hope at least that they were recipes she would eat. About 3/4 of the stuff she wouldn't take more than a bite of. You will also go broke trying to get all the ingredients and fresh spices needed for these recipes. Just stressed me out. Use your hard earned money for a book that is actually useful!

Making sauerkraut and pickled vegetables at home 2 out of 5 stars.

This book is a disappointment. I bought it after I got my Harsch fermentation crock and I do not find it very useful. There are 8 recipes for fermentation for different vegetables (in addition to two different variations for sauerkraut)and about half of the book has 9 food recipes all for sauerkraut (ie pineapple sauerkraut, reuben, etc) with a full page color glossy photo on the opposite page of the recipe (wasteful in my opinion). There is a section on adding herbs and spices and it is unhelpful as it does not give details for many of them on how to use/prepare them for fermentation. There is an interesting section on Healing with Lactic Acid Fermentation, but that is about it. The biggest reason I do not like this book is that there is little troubleshooting detail or any help/suggestions for fermentation when the conditions are less than ideal.

Great book for beginners. Easy to follow recipes that require only vegetables and mason jars to start . Even my very first batches of sauerkraut turned out great. Delicious!
