Donald Gazzaniga, diagnosed with congestive heart failure, was headed for a heart transplant - the only effective medical treatment. Urged by his doctor to keep his sodium intake "under 1,500-2000 mg. a day," Don headed for the kitchen and went to work. Aware that cutting out table salt is the barest beginning of a true low-sodium diet, Don devised recipes for delicious low-sodium dishes that added up to less than 500 mg. daily, 70% lower than those in other low-sodium cookbooks. The result? Don's name has been removed from the transplant list and his doctors believe that his diet played a significant role.

I have had this book on my wish list for ages but couldn't justify another whole foods cookbook. I decided to try it after it was updated and after reading the authors essay on how we create picky eaters, I am glad I did. The recipes I have tried have been simple to make and taste delicious.The ingredients called for are easily found. I especially liked the lunch section as I struggle with packing my son a lunch. The book also has a nice section on nutrition that is helpful and informative for those new to whole foods cooking. I recommend this book to anyone looking for delicious meals for their families.

This book has become one of my favorite kitchen books. Throughout it thinks of the reader, beginning with being spiral bound. The book has a comprehensive index, glossary of terms, tables such as "Sprouting Guide", beautiful photos/print, helpful lists such as "Recipe Title by Nutritional Category" and "Recipe Titles by Alphabetical Order", comprehensive "Getting Started: The Proper Tools" section (such as salad spinner, chopper, Vita-Mix), a "Let's Go Shopping section that includes a comprehensive "Ingredients" guide, and "Resources" for suggested ingredients, to mention a few!

I especially appreciated "Shelley's Shortcuts" where I could get a head-start on the daunting task of food preparation following her twelve suggestions such as to "keep lemons and limes on hand" and which items to keep on hand in the freezer.

That said, it is HARD to eat mainly the foods listed in "Foods You Can Eat Freely" or "Foods You Can Eat Sparingly." I found many of my favorite foods missing and found them instead on the list "Foods You Should Never Eat" such as "chocolate" (gasp), "whole grain bread," and my favorite "tea!"

I accepted the author's "Invitation to Change," by using "phasing" and am following the step-by-step "transition" guide. The author graciously mentions "It took over a year for us to phase milk, risen bread, and meat out of our kitchen." I believe it may take longer for me to phase out my favorites.

While acne has long been a problem for adolescents, in recent decades the last fifty years specifically acne has been on the rise among adults as well, particularly among women. Many scientists have traced this upsurge to changes in the dietary habits of North Americans. Research has shown that there is a strong causal link between certain kinds of foods and acne. These same dietary stresses also influence the level of hormones that cause acne.

The Sugar Busters! diet lets you eat just about anything except certain carbohydrates, including refined sugars, red and white potatoes, corn, white rice, highly processed grains, beets, and carrots. This cookbook offers a variety of Sugar Busters!- acceptable recipes, averaging about 40 percent "correct" carbohydrates, 30 percent protein, and 30 percent fat. These recipes won't keep you in the kitchen all day, though most aren't produced in a flash, either. Breakfasts are predominantly egg dishes. Lunches include Stir-Fried Ginger Chicken, Chesapeake Crab Cakes, Whole-Wheat Spaghetti with Olive-Tomato Sauce, Fourth of July Macaroni Salad (colorful with red onions, tomatoes, green bell peppers, and onions), and Bayou Spicy Boiled Shrimp. Dinner entrées emphasize meat, fish, and poultry, with some regional and international dishes. The collection also includes separate recipe sections for vegetables, appetizers, salad dressings, sauces, and holiday dishes.

Many recipes are high in fat, especially saturated fat, such as Green Chilies Cheese Casserole, which uses six large eggs and four cups of grated cheese to eight ounces of green chilies. No nutritional breakdown is provided, so if you're trying to keep your fat intake to 30 percent, you'll have to guess. The authors suggest finishing the meal with "dessert of a simple green salad coated with a subtle olive oil and milk herb dressing or a few bites of cheese" or "a few nuts." If those don't hit the spot, there's a choice of seven dessert recipes, including a high-saturated-fat vanilla ice cream made with six egg yolks, a quart of whole milk, a quart of cream, and a cup of artificial sweetener.

If you eat natural foods, or want to learn more about them, reading The New Whole Foods Encyclopedia will be a treat. The book is an invitation to learn the lore, health properties, and use of more than a thousand familiar and unusual foods and herbs. Each entry consists of a description, a little history or legend, the health benefits, and how to buy (or find) and use it. Author Rebecca Wood clearly delights in her subject--her writing is warm, like love letters to these intriguing foods. "I don't know what I love most about asafetida--its knock-your-socks-off sulfurous aroma ... or ... its pungent but pleasant and satisfying flavor," she writes of the herb also known as devil's dung. "I also love the way the word rolls off my tongue." Not all the entries are complimentary, though--Wood tried to like banana squash, but ended up feeding it to her chickens. Dotting the food entries are sidebars of recipes, preparation suggestions, and weird information that doesn't fit anywhere else: how horses get sunburned, why young wives fed their elderly husbands celery in the 1600s, tips for not crying over onions, and how to harvest natural chewing gum, for example. You may start by looking up a particular food, but you'll linger, reading just for the pleasure of it. --Joan Price
