Editorial Review:

A revolutionary new low-carb diet for diabetics by the doctor who pioneered a successful new approach to the disease--with 100 original mouth watering recipes. For diabetics, diet is more than a lifestyle choice--it*s the key to controlling the course of their disease. Many diabetics struggle their entire lives to maintain a healthy weight, but the guidelines given to them by the American Diabetes Association have proven unhelpful in regulating blood sugar--the critical component in keeping diabetes in check. In THE DIABETES DIET, Dr. Bernstein serves up the groundbreaking low-carbohydrate approach to diabetes care that has enabled his patients to take control of their disease by regulating their blood sugar without the usual swings. Dr. Bernstein himself is living proof of the success of this method, and he has the science to back it up. Plunging into the current debate on low-fat vs. low-carb diets, he shows that, especially for diabetics, low-carb is what will change lives--and he offers 100 delicious all-new recipes to help keep diabetics on track for life. The recipes and advice in THE DIABETES DIET will provide readers with an easy-to-follow guide for controlling their disease and regaining their health and well-being. * There are an estimated 18 million diabetics in America, and their number is increasing every year--yet there are no low-carb diet books appropriate for diabetics. * Since publication in 1997, Dr. Bernstein*s Diabetes Solution and its revised 2003 edition have sold more than 120,000 copies. * An engineer by training, Bernstein pioneered blood glucose self-monitoring and the tight control of blood sugar that is now accepted as the standard treatment of diabetes. He entered medical school at the age of 45 in order to publish his findings.

Editorial Review:

A bold and eye-opening new cookbook with magnificent photos and unforgettable stories.

In the West, when we think about food in China, what usually comes to mind are the signature dishes of Beijing, Hong Kong, Shanghai. But beyond the urbanized eastern third of China lie the high open spaces and sacred places of Tibet, the Silk Road oases of Xinjiang, the steppelands of Inner Mongolia, and the steeply terraced hills of Yunnan and Guizhou. The peoples who live in these regions are culturally distinct, with their own history and their own unique culinary traditions. In Beyond the Great Wall, the inimitable duo of Jeffrey Alford and Naomi Duguid—who first met as young travelers in Tibet—bring home the enticing flavors of this other China.

For more than twenty-five years, both separately and together, Duguid and Alford have journeyed all over the outlying regions of China, sampling local home cooking and street food, making friends and taking lustrous photographs. Beyond the Great Wall shares the experience in a rich mosaic of recipes—from Central Asian cumin-scented kebabs and flatbreads to Tibetan stews and Mongolian hot pots—photos, and stories. A must-have for every food lover, and an inspiration for cooks and armchair travelers alike.

Geared for Japanese (or Japanese Grocers!) 1 out of 5 stars.
3 of 10 people found this review helpful.

I like the concept of this book (small meals with a Japanese flavor that are made for taking and eating on the go). The recipes and ingredients are geared for those familiar with Japanese ingredients and cooking techniques AND who have easy access to a Japanese or Asian grocery store. I'm not familiar, and don't have easy access, so this book isn't very practical for me. Therefore, I decided to return it using Amazon's easy return policy. Instead, I'll search for a book that not only has great Japanese recipes but has ones that I'll actually be able to make!

recipe book, not directions 4 out of 5 stars.

This little book is stuffed full of recipes that make good bento boxes. It is ,however, intended for a Japanese audience and assumes a certain level of familiarity with basic Japanese food preparation. Don't let that scare you off, though, this is a great book!

If you are not familiar with basic Japanese food and ingredients, i suggest you also buy "the Asian Grocery Store demystified" or "a dictionary of Japanese food" or some other basic guide to Japanese cooking to go with this book. Most of the ingredients listed can be found in any large Asian supermarket, or failing that can be substituted with items found in typical American Supermarkets, if you are willing to take a small amount of time to figure out what the ingredient is meant to be doing in the recipe. (is it for taste? texture?) Part of this will depend on where you live, of course, but here in Philadelphia i had no problem finding all the ingredients.

what this book offers is a LOAD of Japanese and Japanese style recipes that are meant to be packed for lunch or dinner. Many of them can be prepared ahead, and all of them are ideal candidates for the bento box or picnic lunch! Most other Japanese recipe books are full of wonderful foods, but with no guarantee that they will be able to survive packing and toting around.

jammed with recipes, its a bargain for anyone looking to make healthy meals on the go.

Easy to Follow and Delicious Recipes! 5 out of 5 stars.
3 of 3 people found this review helpful.

I love this cookbook! The recipes are easy to follow and delicious, believe it or not! Rebecca Katz's philosophy is to experience not only nourishment (so important for those dealing with cancer) but also enjoyment from food. She provides lots of friendly and helpful commentary on the recipes; it feels as if she is cooking right alongside me. I've been having fun cooking and eating again thanks to the delicious recipes like Chicken ... Roasted All The Way to Yum!, Anytime Crunch, Flourless Almond Torte, and Parmesan Crisps. Tonight I'm going to make Dark Leafy Greens with Caramelized Onions, Raisins, and Pine Nuts (hey if ya gotta eat greens, might as well make 'em sweet). I lent the book to my friend, an Acupuncturist, and now she's planning on buying a copy for herself.

Editorial Review:

Chef Rebecca Katz shares delicious, nourishing recipes for cancer patients, who often experience culinary ups and downs because of sudden dietary restrictions and poor appetite due to damaged taste buds from harsh treatments. Revised and updated with 10 new recipes, this second edition provides caretakers with a tangible way to nurture loved ones through easy-to-digest meals that offer maximum flavor while boosting the immune system.

How Optical Illusions Help You Eat Well 4 out of 5 stars.
1 of 2 people found this review helpful.

How can air in food make you more satisfied - make you eat less? How can it curb a tendency to be fat, or reverse a trend?

Can it? Turns out - yes.

Feed a hungry college student a half glass full of smoothie and they will eat 20% more at lunch ½ later than the college student who drinks the SAME smoothie only whipped until it swells to a full glass with air. Not only that, but the ones that eat the airy smoothie don't make it up at their next meal.

My brother, John, and my food guru, Dick, have both recommended Mindless Eating and Volumetrics to you and me. I finally read them. Actually, John recommends listening to Mindless Eating as a book on tape, so that's what I did. I recommend it.

Listen to get the fun of it and the flavor of it. Then get the book to read the summaries of what to do.

Both titles don't really work to tell you their messages. The subtitle of Volumetrics is great - Feel Full On Fewer Calories. I'd rewrite that to read - Feel Satisfied on Fewer Calories.

It's not my job to re-title these excellent books. Mindless Eating deals with how our brains are tricked to eat more than we want by other visual cues and often by genuine optical illusions.

You could summarize Volumetrics - We don't eat calories, we eat size, volume. We are stratified by greater volume and not necessarily by greater calories. Satisfied means you eat less, means you lose fat and still feel, well, satisfied.

These are not deprivation diet books. DEPRIVATION DIETS DON'T WORK. And need I say, not fun.

The two cheapest ingredients in food are water and air. Adding air or water is the simplest way to feel more satisfied with no additional calories. You read about air in the smoothie above. Soup is food with water added. Raisins are grapes with water removed.

Let's see what that does for you...

Raisins

Which is more satisfying. ¼ cup of raisins or nearly 2 cups of grapes (50 ml or 500 ml). The metric numbers makes the size difference even more startling. Exact same number of calories. Exact same food. One has water; one doesn't.

Which would you choose if you wanted to feel most satisfied?

Yep, me too.

Soup is the Free Lunch of Satisfaction

I live on good soup, not words. - Molière

Even though soup is mostly water, you and your body perceive it as food. This is very counter intuitive to me.

Proof? Give people a 270 calorie chicken-rice casserole and a glass of water as a first course to a luncheon.

Give another group the same casserole with the water added to it to make it a soup. Check both groups to see how much they ate for the rest of lunch.

The soup people ate 100 calories less of the lunch that followed and didn't make up the loss at dinner. Cool, yes! Soup created more satiety, satisfaction. Other experiments showed that chunky soup creates more satisfaction than strained soup. And hot and cold soups both create the same benefits.

You can read the physiology in the books if you're interested. But this seems like magic to me.

Bag the Peanut Butter

I over eat peanut butter; it is one of the highest density foods you can find. If I eat volume, then you have to eat a mountain of calories to get a decent volume.

If I lived alone, I would just not bring it into the house. Obviously you can use this useful tip for all your trigger foods. Since I live with the Mysterious Madame Ling, who likes peanut butter on apples, I simply put the peanut butter in a brown paper bag.

Not only is this -- Out of sight, out of mind -- it puts inconvenience into the circuit making it harder to mindlessly eat.

Note: You may be and I am on a seafood diet, I eat everything I see. Out of sight, out of mind.

OK, One Optical Illusion

People perceive tall as more than short.

Remember the optical illusion from childhood of the upside down T. They ask which is longer - the horizontal part or the vertical section.

People say the vertical is up to 20% taller when they are in fact the same length. (The illusion is so strong for me, that I got out a ruler and tested it.)

Tall thin glasses will have you drinking less wine, juice, or Coke. And again, you will feel satisfied. Remove the short squat glasses from your life, unless you want to increase your consumption of water, then the idea works in your favor. I drink water out of a Bavarian beer mug.

Action

If you have people in your family who need to monitor fat gain, get the books, read them, and then apply the tricks.

Eat well,

William

Editorial Review:

Dieters everywhere have the same complaint: they're hungry all the time. Now this revolutionary book, based on sound scientific principles, can help you lose weight safely, effectively, and permanently without those gnawing pangs of hunger.

The Volumetrics Weight-Control Plan introduces the concept of "energy density" -- concentration of calories in each portion of food. Here you'll learn how to avoid high energy -- dense foods, and how such different nutritional factors as fat, fiber, protein, and water affect energy density and satiety. You'll discover which foods, eaten under which circumstances, allow you to consume fewer calories and still be satisfied. And you'll get to know the hidden calorie traps, seemingly innocuous foods that can sneak unwanted calories into your body. Finally, the authors offer 60 sensible, tasty and easy recipes, plus an integrated program of exercise and behavior management that can be sustained over a lifetime.

Rainbow Green Live-Food Cuisine 4 out of 5 stars.
2 of 2 people found this review helpful.

Like a lot of people, I am gradually coming to the realization that what I put into my body affects the way my mind and body are able to function. Not all food is created equal and counting calories or carbs does very little good if I'm not giving my body the nutrition it needs. Slowly, I am learning that my body, mind, and spirit prefer whole foods to fast food and empty calories.

Rainbow Green Live- Food Cuisine introduces the concept of live-food. This plan is strictly vegan and promotes the usage of fresh raw foods whenever possible. For most people, these recipes will be a radical change from what they eat at present. Nonetheless, they will provide a place to start.

I had a few personal challenges while trying these recipes. A large portion of the foods contained coconut, which I am allergic to, so I had to make some adjustments. Moreover, many of the dishes contained ingredients that were unavailable in my area, so I again had to make substitutions.

Editorial Review:

Medical researchers have found that a high-fat, high-sugar diet, combined with environmental pollutants and stress, can lead to a buildup of toxins in the body collectively known as chronic degenerative disease. Here holistic physician Gabriel Cousens addresses the dangers of foods that have been genetically modified, treated with pesticides, microwaved, and irradiated—and presents an alternative diet of whole, natural, organic, and raw foods that can reverse chronic disease and restore vitality.

Both a guide to natural health and a cookbook, Rainbow Green Live-Food Cuisine features over 250 revolutionary vegan recipes from chefs at the Tree of Life Cafe, from Buttery Butternut Porridge to Raw-violis to Carob Coconut Cream Eclairs. Combining modern research on metabolism, ecological consciousness, and a rainbow of live foods, Dr. Cousens dishes up comprehensive, practical, and delectable solutions to the woes of the Western diet.

Terrible cookbook if you're actually following the GI Diet 1 out of 5 stars.
11 of 14 people found this review helpful.

I started following the GI Diet (Rick Gallop's book in case there are other versions). I'm not crazy about all of his recipes, so I wanted to get another cookbook that would give me some additional recipes that I could use while on the diet. The cover of "The Low GI Diet Cookbook" even says "The World's Foremost Authorities on the Glycemic Index". Hah! As I flip through the pages, every recipe that calls for a sweetener uses honey, maple syrup, sugar, brown sugar, and even confectioner's sugar! There aren't even any conversion charts on how to substitute with agave nectar, stevia, or xylitol. My biggest gripe is with the sweets, but I'm not thrilled that many other recipes call for non-green-light ingredients.

Editorial Review:

Let’s face it. In America’s Test Kitchen our goal has always been clear: develop the best recipe possible. Only rarely have we stopped to consider the fat or calorie content of the food we make …until now.

The Best Light Recipe is different. In response to the increasing interest from our readers to shed the same obsessive attention the right ingredients and techniques for the guaranteed foolproof recipe for lighter foods, we are pleased to offer more than 300 guaranteed foolproof full-flavored, lower fat and reduced-calorie recipes, 95% of which are completely new! Each recipe lists calories, fat, saturated fat, cholesterol, protein, fiber and sodium per serving to help you cook smart.

From chunky guacamole to brownies, from macaroni and cheese, lasagna, and spaghetti and meatballs to blueberry muffins and even chocolate cake and cheesecake, we tested and retested our favorite recipes until we arrived at the best recipes that cut calories and fat without sacrificing flavor. We also recognized that we couldn’t do the impossible- so if we weren’t satisfied with the results in our kitchen, the recipe didn’t make it into the book. Nor did we include recipes that relied on smoke and mirrors to reduce fat and calories, like beef stew with only a forkful of beef or cookies the size of quarters.

The Best Light Recipe, packed with more than 100 illustrations and 16 pages of full-color photos, also includes naturally healthy recipes tweaked to be even lighter and healthier, like gazpacho, poached salmon, stir-fry chicken, grilled tuna burgers, and pan-roasted asparagus. And the healthy techniques you’ll learn, including using milk and cornstarch instead of cream and butter to make a simple pan sauce (trust us, it really works), or reserving the good olive oil to lightly drizzle on your pasta before serving (when you use less and get the most flavor), will last over a lifetime of healthy cooking.

The Best Light Recipe also features objective equipment ratings and ingredient tastings, from the best muffin tin and Dutch oven to the best soy sauce and chicken broth, as well as illustrated tips and techniques, from slicing flank steak for stir fries, to creating the best deep-fried crust without actually frying. In short, it is your essential guide to lighter, great-tasting recipes that deliver every time.
