"Real" food recipes--great tips! 5 out of 5 stars.
30 of 30 people found this review helpful.

This is a really great book for people looking for freezer recipes--both the kind that you cook and freeze as well as those you want to prepare, package, freeze and then pull out for quick cooking. ALL recipes have nutritional breakdowns for those who have dietary restrictions to follow.

The recipes are for REAL food--not the typically frozen stuff. I was thrilled to find a variation of my favorite Chicken Paprika that was freezer-friendly. And Snapper with Orange Sauce...? Butternut Squash Risotto...? There are chapters for soups/stews/chowders, fish & shellfish, breads/muffins/quick breads, desserts/cakes/cookies--even sauces and condiments!

The beginning of the book has an excellent primer on the benefits and basics of freezing; how to do it withOUT a standalone/comm'l freezer; cutting grocery costs; thawing--including thawing quickly and safely; and planning.

Overall, a really good--and versatile--book for making your life easier when it comes to cooking!!

Editorial Review:

Busy schedules encourage the use of convenience foods, and this innovative cookbook shows how to save money, time, and effort with delicious and healthy recipes made from staples that most people have available in the freezer. 75 illustrations.

Not What I Expected 2 out of 5 stars.
75 of 78 people found this review helpful.

I ordered this book because I really like to cook and love legumes and my pressure cooker. Perhaps I should have looked elsewhere.

The recipes in here are nicely put together with the nutrition information and there is quite a bit of information on legumes. However, I found that there were too many Southwestern Chili type recipes for my taste. If you like to make chili and lots of Mexican and Southwestern inspired dishes this might be the cookbook for you. That is not to say that there aren't some Mediterranean and Caribbean inspired recipes but it just seems that the Tex-Mex and Southwestern flavors beat out the others.

Also, I happen to loathe margarine and avoid it at all costs. I love to cook and would much rather use less butter or a combination of canola oil and butter or olive oil or even an olive oil spray -- anything but margarine. Not only does this cookbook call for margarine specifically, but diet margarine. In the same vein I understand that the author is an M.S., R.D. but I really don't think there is a need to use Fat-Free Dressing for everything. I also didn't like that one of the recipes called for onion soup mix. I have never purchased onion soup mix and try my best not to purchase lots of processed foods. Thus, I get very uneasy when a cookbook uses these types of ingredients.

One more irksome tidbit was the fact that there weren't any recipes or mention of other beans such as the anasazi, adzuki, flageolet, cranberry to name a few.

This cookbook might not be the best cookbook for someone looking for a wider repertoire of legume recipes than your Better Homes and Gardens Cookbook can offer.

Editorial Review:

This collection of 150 recipes using more than 20 types of beans and lentils maximizes the health benefits while offering creative and sumptuous dishes even the toughest bean skeptics will enjoy.

Editorial Review:

Persian cuisine is exotic yet simple like a poem by Omar Khayyam, healthy yet colourful like a Persian miniature painting. It combines rice, the jewel and foundation of Persian cooking, with a little meat, fowl or fish; plenty of onion, garlic, vegetables, fruit, nuts, herbs; and a delicate, uniquely Persian mix of spices such as rose petals, angelica seeds, dried limes, candied orange peels, cinnamon, cardamom, cumin and saffron to achieve a delicious and balanced diet. Drawing on her 15 years of experience collecting and adapting authentic Persian recipes, and inspired by her years in Southern France and the United States, Najmieh Batmanglij has brought about a marriage of ancient Persian cooking, French Provencal food presentation, and contemporary American eating styles. The result is Persian Cooking for a Healthy Kitchen, 95 exquisite kitchen-tested recipes that are low in fat yet high in flavour -- a feast for both the eyes and the taste buds--that meet the current health goals of limiting the calories from saturated fats. The recipes have been kitchen tested by both American and Persian chefs. They are intelligently written and easy to follow, one per page, each facing a magnificent photograph by the renowned French photographer, Serge Ephrahim.

A Whole Systems Approach 5 out of 5 stars.
27 of 27 people found this review helpful.

My only complaint with this book is its title, "Low Fat Living." It goes far beyond that. This is really the "whole mind, whole body" approach to weight control and more. This book seems to be a collection of everything that the authors could find that contributes to weight loss, organized in an interesting and integrative manner. I particularly loved the study that showed that people watching television burn up fewer calories than people sitting and watching a blank screen. As a woman at age 53, I was wondering if I could ever again shed pounds. My old approaches didn't work. The one thing that I knew was that people who successfuly do lose weight and keep it off do so through making life-style changes and they tailor what they do to their own bodies. This book enabled me to have a comprehensive understanding of what those changes needed to be concerning (1) nutrition, (2) exercise (including simply increasing motion), (3) water, (4) sleep, and (5) stress management. To my surprise, stress management has actually been the most challenging-and perhaps the most rewarding. I am no longer in the "diet" mentallity. I am now concentrating on making the small changes--trying this and that until I find ways that appeal to me and that I can sustain--and these are adding up to large changes that affect not just my weight, but my general health. Through this process and over several months, I am finding that my body and mind are changing in what they want. It is like my whole system is resetting to different standards. I'm beginning to actually be drawn to vegetables and whole grains, walking the dog, and skipping TV. Who'd'a thunk?

Editorial Review:

In The Taste for Living WORLD Cookbook, Mike Milken has once again commissioned chef Beth Ginsberg to transform more than 100 global favorites-- including quiche Lorraine, Spaghetti Bolognese, fajitas and crme brulee, into practically fat-free recipes loaded with cancer-fighting nutrients and soy protein. These low-fat dishes help fight heart disease too.

The ink was barely dry on the first Taste for Living Cookbook (CaP CURE, 1998), when chef/author Beth Ginsberg began perfecting the new recipes for her second collaboration with philanthropist and financier Mike Milken. The Taste for Living WORLD Cookbook: Mike Milken's Favorite Recipes for Fighting Cancer and Heart Disease (CaP CURE, October 1999, distributed by Time-Life) explores the vibrant international flavors that have become so much a part of American cooking today.

Ginsberg, a Culinary Institute of America graduate and natural foods chef, is a master at transforming high-fat classics such as spaghetti Bolognese, quiche Lorraine and egg rolls into soy-rich fare that meets the high standards for healthfulness and flavor that Mike requested when she became his personal and corporate chef.

"Don't give up the dishes and the flavors you love," encourages Ginsberg. "Change the ingredients. Adapt your cooking methods. You dont need lots of fat for food to taste great."

When Mike Milken was diagnosed with advanced prostate cancer in 1993, he quickly swore off the high-fat fare that he had eaten most of his life. He also founded CaP CURE, the Association for the Cure of Cancer of the Prostate. Working with some of the nation's top cancer researchers, he recognized the vital importance of cutting fat and increasing the consumption of soy protein to 40 grams daily--not an easy feat for a man who used to eat a fried-egg-and-bacon sandwich every morning.

L.A. chef/ restaurateur Beth Ginsberg convinced him that she could create healthy versions of his favorite dishes. Through the Taste for Living cookbooks, Mike and Beth share these great recipes with people who love to eat and people who want to lower their risk of cancer and heart disease through a healthy diet.

The more than 100 recipes in The Taste for Living WORLD Cookbook are all easy to follow, and each is accompanied by a complete nutritional analysis. Colorful icons tell the cook how long it takes to prepare a recipe from start to finish. Most are well under one hour.

The all-new Taste for Living WORLD Cookbook is organized into 14 complete menus, each featuring the cuisine of a particular country or region. Youll find some of the best known dishes from the French, Italian and Chinese repertoire. Youll be tempted by the aromatic flavors of the Indian, Caribbean, Mexican and American offerings. Individual menus offer appetizers, main course options and scrumptious (and wonderfully healthful) desserts.

As a bonus, the final section focuses on Mike's love for American junk food. From corn dogs to chocolate cupcakes, doughnuts to deep-dish pizza, you'll find recipes for the foods you thought were forbidden in a healthy diet. Ginsberg has not only taken the fat out of these notorious bad-guys of the American menu, she's enriched their nutrition profiles with soy protein, added fiber, vitamins and crucial micronutrients.

The Taste for Living WORLD Cookbook doesn't rely on exotic, hard-to-find ingredients to produce flavorful international food. Everything you need--from tofu, tempeh and tamari soy sauce to assorted grains, beans and produce--is available at large supermarkets or natural food stores nationwide. A special section at the back, "The Healthy World Pantry" provides additional information about all the ingredients.

More than a collection of recipes, The Taste for Living WORLD Cookbook presents up-to-date nutrition facts in the battle against cancer and heart disease. Sidebars look at different foods currently being studied for their potential roles fighting these chronic diseases. Special contributors David Heber, M.D., Ph.D., Director of the UCLA Center for Human Nutrition and Dean Ornish, M.D., Director of the Preventive Medicine Research Institute in Sausalito, CA, provide the scientific basis for why this diet works.

Scores of luscious full-color photographs from award-winning Burke-Triolo Studios in Los Angeles prove that low-fat, healthy food can and does look absolutely delicious.

CaP CURE, the Association for the Cure of Cancer of the Prostate, located in Santa Monica, California, is a nonprofit public charity that rapidly identifies and funds promising prostate cancer research. CaP CURE scientists have developed revolutionary vaccines, nutritional therapies and other treatments that give hope to prostate cancer patients. CaP CURE-supported researchers are currently conducting more than 70 human clinical trials of various therapies. The organization also works to raise public awareness of the role that diet plays in reducing the risk of cancer and other chronic diseases. All profits from The Taste for Living World Cookbook go to further CaP CURE's research.

From cacciatore to sukiyaki to enchiladas, and from tiramis to banana pudding, The Taste for Living WORLD Cookbook is for anyone who cares about enjoying good flavor and good health.
