This is a delightfully easy to follow low fat cookbook. I haven't found one recipe that is not a "keeper". My 47 year old husband recently had a heart attack and we have had to make major adjustments in our diet. This cookbook made it easy and delicious

I've used this cookbook so many times and each time the food has turned out really tasty with so much flavour... Her meat masala can be used in so many different ways, the best part is different dishes taste different even after using the same masala... Her recipes are easy to follow and most importantly - Good for the Heart!! Highly Recommended

The Iron Disorders Institute has served up a heaping
helping of EXCELLENCE with "Cooking With Less Iron"!

Despite popular opinion that "diet does not count" in
controlling iron, I've long been mindful of my Hemochromatosis
husband's diet. How could it not count? If you want to lose
weight, you monitor fats and calories. If you're a diabetic, you
monitor sugars and carbohydrates. If you're a heart patient,
you monitor fats and cholesterol. If you happen to have
Iron Overload......YOU MONITOR IRON!

Once again, the Iron Disorders Institute has reigned with a
cool head and educational approach. "Iron is an essential
nutrient, human beings could not survive without it. We can
enjoy the BEST of health when all nutrients are in balance and
adequate amounts are available for normal body function without
creating harmful excesses".

What an education the book offers with regard to metabolism,
iron absorption and diet! There are so many things, even a
"true believer" like myself did not know (nor had I thought of)!
Marinating flank steak in a mixture that includes coffee??
Boil pasta in water that contains brewed tea?? Far beyond the
"basics" I've learned so many "tricks" that allows my husband a
terrific, tasty menu, containing the iron he needs to remain healthy, and excluding excess iron to add to his stores.

I've tried many recipes before offering an opinion, and all have
been absolutely wonderful. Anything BUT bland and boring,
and I especially appreciate the graphics for each and every recipe that tell me exactly which ingredients are substances that inhibit the absorption of non-heme iron. I find myself thinking of just that educational tool while preparing other traditional family recipes! I am learning!!

Hemochromatosis is forever, as are those maintenance phlebotomies
to regulate stored iron. This is exactly the kind of tool that can help us extend the period between needed extractions! Thank you so much IDI, you did it again!! (More please!)

I first saw this book in the new-book section of the local library. I took it home and tried several of the recipes. I found the book to be easy to read and the recipes, in general, good and easy to prepare. There is an emphasis on red-pepper and hot sauce in many of the recipes (the author is from Louisiana)and I would suggest going lightly on those ingredients if, you have children, like I do - they refused to eat the dishes they found too hot and spicy. I was unable to find the cheese often listed as an ingredient, but the author did list a source for ordering it if it was unavailable in your local grocery stores. Many of the recipes used baked bananas or un-cooked, mashed bananas as sweeteners. This is fine if you can eat the dish in one or two sittings, but bananas do not keep well and turn dark upon refrigeration, making the dishes unappealing to look at. The author also recommends using apple juice concentrate as a sweetener in many of the dishes and this worked well. The author included a wide variety of dishes and many that were vegetarian for those interested in meat-free recipes. I particularily enjoyed the chicken salad and some of the pasta salads. Over all I found the book interesting and informative enough to purchase and add to my collection of favorite low-cal cookbooks.

The kind of book a food chemist would create 1 out of 5 stars.

Obscure ingredients, and odd mixtures could characterise this book. Although the recipes are definately gluten free, they are complicated. Three or four different types of flour are used in many of the recipes, and include bean flour, soya flour, cornflour, teff flour....etc. If you are used to the usual rice, tapioca and potato flours, then this book is not for you. Also, ingredients have to be weighed instead of measured, which is very time consuming. I by far preferred "Special Diet Solutions" by Carol Fenster. It is far more practical.

I never cooked for myself before, but this book told me exactly what to do. Now I'm enjoying my food again. My meals had gotten much the same, but now I'm trying all the different things and putting weight back on.
