Editorial Review:

The Sustainable Kitchen brings home the thrill of tasting fine cuisine made from the best seasonal ingredients grown locally. Designed for people who want to make food choices that promote the economic, environmental and social health of their communities, this book gives seasonal cuisine new flair, using recipes adapted for exciting home cooking. Its two talented chefs share their passion for the culinary arts and their regional focus that inspires home cooks everywhere to connect with local farmers and purveyors to obtain the freshest produce available. These connections encourage regional food supplies and a strong local economy, maintain community, foster earth stewardship, and protect the future of family farms.

The Sustainable Kitchen focuses strongly on ingredients, offering a chef's insights into how and why to combine several together into a sauce, soup or ragot for optimum flavor. The sumptuous recipes are offered as guidelines-the basis for inspiration, but not as absolutes-to allow for local market variations and a dash of spontaneity. Recipes include the full range, with special sections featuring entrees:

from oceans and rivers-seafood
from forests and farms-game, meat and poultry
from fields and gardens-vegetarian

Additional sections cover the basic tastes, tips for pairing food and wine, preserving the harvest, and "Notes to the Cook"-collecting useful recipes for basic vinaigrette, vegetable stock, crme frache, pasta dough, and much more.

Stu Stein and Mary Hinds are executive chefs at The Peerless Restaurant in Ashland, Oregon, which they own together. Both award-winning chefs with national experience, Stu has also appeared as featured chef on the nationally syndicated cooking series New American Cuisine and has contributed to several cookbooks.

Judith Dern has won awards for her food writing.

John Rizzo's prized photographs have appeared in many cookbooks and periodicals.

A great gift idea that is also decorative and fun 5 out of 5 stars.
12 of 12 people found this review helpful.

When you have an urge for cookies the easiest way to satisfy it is to grab a pack at the store. Of course, they taste better if you get a roll of cookie dough and bake them. Then again they taste even better if you get all the ingredients and actually make them from scratch, but who has time for that? Wouldn't it be great if you could just grab a box or jar with all the dry ingredients already measured so all you had to do is pour it into a bowl, add the egg and butter, mix and bake? "Gifts for the Cookie Jar" is a collection of cookie recipes that are appropriate for just this sort of gift. Each recipe has complete instructions for the correct measurement of the ingredients, the size of the jar needed and an appropriate layering order so you end up with an attractive and unique gift. After layering the ingredients into the jar, you add a decorative lid, and a small tag with the baking instructions (tags with the instructions are included in the book). Decorative and yet practical, all the gift recipient has to do is take the lid off, pour the ingredients into a mixing bowl, add the appropriate egg, butter, vanilla, or other perishable ingredient, mix and bake. Quick, easy, no searching for the recipe, no searching for ingredients, no quick trip to the store for a forgotten ingredient, and delicious homemade cookies; it's the perfect gift to give or keep available for yourself for that day when you want fresh cookies without the hassle.

Recipes include oatmeal-raisin cookies, orange sugar cookies, date and walnut cookies, malted milk crunchies, butterscotch snaps, toffee chocolate chippers, and butter pecan delights. These are really good recipes and an absolutely delightful idea. A highly recommended book, the recipes, instructions, the baking instructions tags, and the ideas for decorations make it a delight to read and create.

Editorial Review:

The reason for reissuing this book is because it is Jane Grigson's celebration of the seasons and the foods they bring and seasonality is now the top priority of all those who take their eating and cooking seriously.

She says in the Introduction to the original edition published in 1971, "...I feel that delight lies in the seasons and what they bring us...the strawberries that come in May and June straight from the fields, the asparagus of a special occasion, kippers from Craster in July and August, the first lamb of the year from Wales, in October the freshest walnuts from France where they are eaten with new cloudy wine. This is good food.....The encouragement of fine food is not greed or gourmandise; it can be seen as an aspect of the anti-pollution movement in that it indicates concern for the quality of environment. This is not the limited concern of a few cranks. Small and medium-sized firms, feeling unable to compete with the cheap products of the giants, turn to producing better food....People in many parts of the country run restaurants specializing in locally produced food, salmon from the Tamar, laver and sewin from the Welsh sea, snails from the Mendips, venison from the moors of Inverness. I notice in the grocers' shops in our small town ...the prominence given to eggs direct from the farm." How prophetic she was when she pointed out to us the importance of locally-produced, fresh food and she wrote those words 35 years ago!

The book is divided into sections covering Fish - kippers, lobster, mussels and scallops, trout; Meat and Game - meat pies, salting meat, snails, sweetbreads, rabbit and hare, pigeon, venison; Vegetables - asparagus, carrots, celery, chicory, haricot beans, leeks, mushrooms, parsley, parsnips, peas, spinach, tomatoes; Fruit - apple and quince, gooseberries, lemons, prunes, strawberries, walnuts. And importantly the book contains the recipe for her famous curried parsnip soup.

How to start a tradition 5 out of 5 stars.
13 of 14 people found this review helpful.

This is one of a series of Gooseberry Patch books that are filled with hard-to-find, practical and fun recipes appropriate to the season/holiday, and short, paragraph or so descriptions from around the country of traditions associated with that time of year. The book includes suggestions for everything from gifts to give, to decorating for parties and entertaining guests, to cooking, Though perfect for anyone, as a senior preparing to enter the "real world" for the first time, I think it's especially valuablefor anyone who believes that the little things can change a big world, and wants some cheap and practical ideas for how to start out.

THE GIRLS HAVE DONE IT AGAIN!!!!!!!!! 5 out of 5 stars.

A Wonderful Guide & Celebration of Tea at the Elmwood Inn! 5 out of 5 stars.
9 of 9 people found this review helpful.

Whether you're a tea connoisseur or just beginning to explore the wonderful world of tea, "A Tea For All Season's" is an excellent companion to have. Written by Bruce & Shelly Richardson, owners of the Elmwood Inn in Perryville, KY, they provide an informative, enjoyable guide to preparing and hosting a perfect tea, as they do at Kentucky's premeir tea room. Breaking the book down into seasonal & monthly themes, they provide recommendations of food, tea and music to accompany your celebration. The tea themes include angels, roses, sunflowers, Shakespeare, Monet, the Ballet, Kentucky Harvest, etc. The meal recipes are also included and some of them are largely synonymous with Kentucky's culture. They give an overview of each theme and share the historical significance of all involved. The Elmwood Inn, itself, has a rich history and is listed on the National Register for Historical Places and is designated as a Kentucky Landmark. It's probably better known for the role it played during the Civil War battle, that befell Perryville on October 8, 1862. The book is also filled with wonderful colored photograph's, including some lovely peices of artwork, which can be found hanging on the walls of the Inn throughout the year (featuring notably local artists). The art, too, is coordinated with the theme of each month's menu. The Richardson's create a warm rapport as they entice and educate the reader; Much like their genteel hospitality when greeting in person. At the end of the book you'll find a list of tea suppliers and featured artists, including Elmwood Inn. "A Tea For All Season's" would make a great gift for any tea lover, and is a must to add to your tea repertoire. At the least, this book will leave you with the desire for a delicious pot of steaming hot tea. Most likely, it will inspire you to plan a tea party of your own. The Richardson's have also written two other books, "A Year of Teas at the Elmwood Inn," and "The Great Tea Rooms of Britain." I am fortunate to call Perryville home and frequent Elmwood Inn often for my 'cup of serenity.' I also have the fortune of calling Bruce & Shelly Richardson, friends. The almost 160-year-old Inn is beautiful with elegance and charm, as are the grounds. May I reccommend, if you're ever in Central Kentucky, plan on visiting and having afternoon tea at the Elmwood Inn. You must make reservations, though. It will be one of the most pleasant experiences of your life!

Editorial Review:

Afternoon tea at Kentucky's historic Elmwood Inn is a glorious celebration of outstanding foods, great teas, captivating art and classic music in the serene setting of one the state's best-known landmarks. Shelley and Bruce Richardson share twelve of their favorite theme teas. Each is complete with recipes, suggested teas, commissioned art, music and color photography. From "An Angelic Christmas Tea" to "A Tea with Claude Monet", tea lovers will be sure to find the perfect menu and recipes for each season of the year. This book is now in its fourth edition and it is volume two in the Elmwood recipe series.

Editorial Review:

In Nightly Specials Michael Lomonaco, former chef at Manhattan's Windows on the World and Le Cirque, offers 125 easy dishes--food for everyday enjoyment. Avoiding complication and fussy invention, Lomonaco focuses principally on old favorites, like Maryland-Style Crab Cakes and Chicken Pot Pie, to which he often gives a satisfying twist. (His meatloaf, for example, contains pecorino cheese, tomatoes, and oregano.) Included also are "original dishes" like Hacked Chile Lobster, Corn Cakes with Smoked Salmon, and Beef and Porter Stew, also uncomplicated to prepare. The Lomonaco approach extends to tempting desserts like Triple Berry and Pecan Crunch Pie, Silky Coconut Flan, and a particularly good flourless chocolate cake. Recipe variations called Nightly Specials--you can, for example, exchange grilled chicken breast for the roast beef in a hash with mushrooms--round out this very attractive collection. All the dishes celebrate an improvisatory spirit that leads cooks to create menus based on what's freshest in the market--your own nightly specials. --Arthur Boehm

Great introduction. 4 out of 5 stars.
8 of 8 people found this review helpful.

In its roughly 50 parts, all written by experienced cooks and cook book writers, HP Books' "The Book of ... Cooking" series takes you to the cuisines of various regions of the U.S. and around the world; all in easy to follow, well-explained recipes.

This installment, the Book of Fish and Shellfish, starts with an introduction on preparing, cooking, skinning and filleting fish and preparing shellfish, and then presents recipe suggestions for all major types of seafood recipes, from flatfish to mixed catch and smoked fish dishes. Special chapters are dedicated to firm white fish, rich fish, shrimp, crab, lobster, mussels and oyster recipes. Classics such as crab cakes, Cajun style red snapper, chowders, gravlax, Mediterranean fish soup (bouillabaisse), oysters Rockefeller and seafood gumbo appear next to unique dishes such as bass with ginger and lime, flounder with prosciutto, monkfish in coconut cream, salmon with avocado salsa, trout and artichoke frittata, trout with hazelnuts, and tuna and ginger vinaigrette.

From Angels on Horseback (oysters wrapped in bacon) to yogurt-topped halibut, this collection of recipes, while not all-encompassing, is a great introduction to the endless varieties of seafood dishes - and at a relative bargain price, to boot.
