This is a well-organized text with comprehensive coverage of business challenges faced by a caterer, ranging from in-hotel to off-site mom/pop style businesses. It is very helpful and readable, although I hoped for more recipes and display ideas to leaven the text.

After some not so successful experiments with dishes at a recent family gathering, I decided to pick this one up. It's certainly not full of gourmet fare, but its full of the sort of thing everyone loves and remembers from when they were kids... familiar, stick-to-your-ribs recipes. Though the food is geared towards crowds (most recipes serve 6-8 people, so they're definitely going to be leftovers in our house when I make them). None of the recipes are complex, nor do they require outlandish ingredients, and are well within the grasp of all but the most inept chefs. This is a good, basic cookbook that anyone who enjoys cooking for a crowd would love.

Because this book is so beautiful it is truly inspiring. Morgan is a true artist. The photographs are lovely depicting unusual, elegant and even a few quite simple designs. It's a must for floral arrangers.

Mr. Morgan certainly does!!! Color, creativity, shape, style, and talent all should be associated with Mr. Morgan. His ability in floral design is exquisite and his imagination has no boundaries. He has an uncanny eye for the beautiful and the imaginative. Did I get anything out of this book, a lesson in style and class, and just how beautiful you can make ordinary things. Mr. Morgan taught me there is no end to majestry in floral design and I will look forward to future publications. His artistry is superb and he is truly working in his calling. Congratulations Mr. Morgan for thrilling me to no end with your beautiful work and art.

The book would be great except you have no idea what the solution to the problem is because there are no answers! Not recommended for new managers unless it comes with an answer book next time.

There's not a whole lot to say about the English edition of the service textbook used by Swiss hotel management schools. Clear writing, decent maps/diagrams, illustrative photographs, and a conservative position are some of the features of this book that covers both dining room and banquet service.

Like the French edition ("Technologie du service"), the page layout design leaves a fair amount of blank space which results in a volume that's much larger than necessary. Still, this is a good reference for the F&B or catering manager to have on his/her bookshelf, to be supplanted with Conrad Tuor's compact "Aide-Memoire du Sommelier" (a.k.a., "Wine and Food Handbook").

The book has wealth of information for those absolutely new to Food and Beverage. Don't look for inside hints or for good restaurant or service systems for the professional, it's just not there. I ordered the book to improve my knowledge of the finer points of service, what I got instead was a rehash of basic techniques that have been better presented elsewhere. Disappointing for the price.
