Everything I expected, which was a good thing 5 out of 5 stars.

This is not a book of emotional testimonials of how people's lives dramatically improved with their change in diet. It is about the facts, the statistics, the things I can tell the people in my personal life about when they ask me 'why go vegan?'
It's also shown me what foods I can intake and what supplements I should look into to complete a balanced diet.
I highly recommend this book to those wondering why so many people are going vegan and to those who are already vegan and want to get more facts on their side and are concerned about getting all the appropriate nutrients.

Not just for college students! 5 out of 5 stars.
3 of 3 people found this review helpful.

I usually don't bother writing reviews, because most likely anything I have to say, someone else has already said it. That may be true, but I have to add one more glowing review! I have had this cookbook for a few years now, and it has been my most coveted possession. I have since graduated, but this book comes with me fr every move, and survives every purge session.

The recipes ALWAYS turn out, and I love that they have the nutrition information right there, easy to see. The greatest thing, is that no matter how bare my cupboards, I can always find a recipe in here that I can use or easily adapt! Just last night, I had pasta (but no sauce), garlic, canned green beans, tofu and peanut butter. Any yet, I made a complete meal! And it was delicious!

I've never been great in the kitchen, but these recipes are easy, quick, cheap and require few ingredients. And, to top it off, they taste great. Yum!

Editorial Review:

In less time and for less money than it takes to order pizza, you can make it yourself! Three harried but heatlh-conscious college students compiled and tested this collection of more than 200 tasty, hearty, inexpensive recipes anyone can cook— yes, anyone! Whether you're short on cash, fearful of fat, counting your calories, or just miss home cooking, The Healthy College Cookbook offers everything you need to make good food yourself.

Wore my first copy out....! 5 out of 5 stars.
1 of 1 people found this review helpful.

This amazing cookbook has been a staple in our home since the mid-70's when cooking with whole grains and offering meatless dishes for dinner was weird. The Mennonites have long focused on healthy foods and joyful preparations that are kind to your food budget and consume less of the world's limited food resources. I wore out my first copy and am delighted to be able to still buy this wonderful resource!

Great, but... 4 out of 5 stars.

This cookbook is a great start to learning how to stretch your dollar. Just a few things to note before purchasing: 1) it does not allow for gluten intolerance or other allergies (I wasn't able to use any of the bread recipes, for instance), 2) the philosophy it teaches of using less meat and more complimentary vegetable proteins is common sense and some may not be willing to do this, 3) even though it teaches the use of complimentary proteins, there are a lot of recipes which use white rice and regular flour, both of which have very little protein to offer (use whole grains instead). They make up for this by using lots of soy, legumes and some dairy. 4) Most recipes are hearty, standard fair. No mediteranean flavors like olive oil, etc. That being said, so far the recipes are tasty. I just add vegetables to the recipes for color, texture and nutrition.

Editorial Review:

Longacre has gathered 500 recipes from Mennonite kitchens that tell us how to eat better and consume less of the world's limited food resources. All recipes have been tested by professional home economists. This cookbook is written for those who care about their own health and the food needs of others in the world.

The Specific Carbohydrate Diet is a strict grain-free, lactose-free, and sucrose-free dietary regimen intended for those suffering from Crohn's disease and ulcerative colitis (both forms of IBD), celiac disease, IBS, cystic fibrosis, and autism. It is based on the work of Elaine Gottschall, who wrote Breaking the Vicious Cycle, which introduces the SCD and explains the importance of eliminating certain carbohydrates in order to alleviate digestive ailments such as IBD, IBS, and celiac disease.

For those suffering from gastrointestinal illnesses, the Specific Carbohydrate Diet (SCD) offers a method for easing symptoms and pain, and ultimately regaining health. Recipes for the Specific Carbohydrate Diet(TM) offers a diverse and delicious collection of 150 SCD-friendly recipes, that includes over 80 dairy-free recipes. The easy-to-make and culturally diverse recipes featured in the book include breakfast dishes, appetizers, main dishes, and desserts such as -- Hazelnut-Vanilla Pancakes, Olive Sandwich Bread, Chicken Satay, Roasted Bass with Parsley Butter, Thin Crust Pizza, Gretel's Gingerbread Cookies, and Mango Ice Cream. It is accompanied by 40 full-color photos that will inspire you to get cooking again. In addition, personal anecdotes accompany each section of this book. Great book on cooking beans 4 out of 5 stars.
6 of 6 people found this review helpful.

I first discovered Rancho Gordo a couple of years ago at the San Francisco Ferry Terminal Market. I'd gotten bored with vendor after vendor selling heirloom tomatoes, tree-ripened fruit, and wild greens. I love all those things, but I needed a source of protein. And then I spotted the Rancho Gordo booth. Rancho Gordo's booth had dozens of varieties of beans: black midnight beans, anasazi beans, eye of the goat, and many more. I took a chance on a few pounds of heirloom beans. The beans were delicious, but I couldn't figure out what to do with them except cooking them with a bay leaf and a little mirepoix. This works really well for black beans, but doesn't seem to be the best choice for chestnut limas. And that's what excited me about this book.

Heirloom Beans is a pretty, well produced cookbook about beans. It contains basic information about dozens of varieties of beans (though it omits a few popular varieties of heirlooms like pebble beans), and has many recipes that show off the properties of each variety. Most (I would guess three quarters) of the recipes in this book are Mexican, Southwestern, or South American. The remainder are Italian, French, and Spanish.

Most of the recipes appear to be clearly written and straightforward, and don't use too many unusual ingredients. My local Whole Foods has several varieties of heirloom beans (from different producers), and I've seen some others at Italian or Mexican specialty stores; I assume that most readers will be able to find some of the beans mentioned in this book. In my experience, it is worth seeking out good quality beans. Plain black beans from the supermarket (even organic ones) can be a little dull and flat, and better beans can make a big difference in a recipe. (Even the fanciest beans are still one of the cheapest sources of protein that you can find.) Most of the recipes in this book also appear straightforward; almost all of them just involve chopping a few vegetables and simmering some beans.

(The one problem I have with the directions in this book is that bean cooking requires a little practice, and each variety cooks a little differently. Some beans are finished in a couple hours, while others need a lot more time. The book tells you this, but it doesn't tell you that it's a good idea to taste beans when you think they're done to make sure that they're really cooked through.)

Interestingly, this cookbook was published by Chronicle Books, and suffers from some of the same problems as other titles from this publisher. (For example, The San Francisco Ferry Plaza Farmer's Market Cookbook: A Comprehensive Guide to Impeccable Produce Plus Seasonal Recipes or Simply Organic: A Cookbook for Sustainable, Seasonal, and Local Ingredients.) The book is very pretty: it is nicely laid out and has beautifully printed photographs. Unfortunately, it's a slightly impractical cookbook. The typeface is a little small (and I'm a 35 year old with good eyesight!), the pages are made of coated paper (so you can't easily write down notes in pencil), and the book is paperback (so it won't stand up to heavy use.)

I'm excited about this book, and am looking forward to trying a few of the recipes. I will update this review after I've had a chance to test the recipes in this book. (You can't fairly review a cookbook until you know if the recipes work.) I'd recommend it to anyone who likes beans and is looking for more ways to add them to their diet.

Editorial Review:

Who would have thought a simple bean could do so much? Heirloom bean expert Steve Sando provides descriptions of the many varieties now available from Scarlet ?Runners to the spotted Eye of the Tiger beans. Nearly 90 recipes in the book will entice readers to cook up bowls of heartwarming Risotto and Cranberry Beans with Pancetta or Caribbean Black Bean Soup. Close-up photos of the beans make them easy to identify. Packed with protein fiber and vitamins these little treasures are the perfect addition to any meal.

Valuable information in a poor package. 3 out of 5 stars.
7 of 9 people found this review helpful.

I became quite interested in Dr. Budwig's work through research. My chemistry skills are pretty old, so I struggled mightily through her lectures embodied in the companion volume "Flas Oil As a True Aid ..." etc.

Now, this book is supposed to be a cookbook. The substantial value of the diet is the preparation of the flax-based key ingredients that are then replicated in every ensuing recipe.

What this book needed was a decent editor. It is a translation of work that was mainly done 60 years ago! One cannot go to Germany circa 1960 in order to implement the food plan, and so the editors needed to do just a little bit of work to make this relatively painless for implementation.

There is virtually NO decent editing work done here, and the references to Dr. Budwig's patented, offered products is not suitable. For instance, one of the key ingredients in these recipes is a "Muesli" carefully designed by Dr. Budwig. (One of her colleagues stated that he wished the beneficiaries of this diet - the users - all had a PhD in chemistry so they could understand the quality of Dr. Budwig's work.)

This Muesli ("Linomel") was once branded by Dr. Budwig, apparently, and the book references an 800 number to call. However, when you do call, they tell you that was a "misprint" in the book, and that they sell flax seed oil, and not "Linomel," Dr. Budwig's patented product.

The fact is, you will look in vain for what Linomel truly is, and therefore will have to go without it. Some internet sites tell you to simply use 4 teaspoons of freshly-ground flax seeds, and to eat them within 20 minutes. Others simply replace it with flax seed oil and cottage cheese, which, in the book, is called something else.

Therefore, when buying this book, be prepared to do a whole lot of head-scratching and web searching to get the basic ingredients down.

Also, be prepared to pay a fortune for your flax seed oil, as the cheapest it can be found, even buying bulk, is $12.50/qt. More likely you will be paying around $15 per cup!
