Fabulous book 5 out of 5 stars.
36 of 36 people found this review helpful.

I have at least four other raw food cookbooks. The recipes in them always have a thousand ingredients and take forever to produce. I wind up not using them because of the exotic ingredients or the time it takes to make the food. Soaking, cutting, blending, juicing, dehydrating, all in one recipe usually!

This book uses simple, available ingredients and a minimum of time to prepare. I can usually prepare a dish from what's already in my house, which if you've used any other book, is usually impossible. Yes you might need to blend something and then dehydrate it, but you probably didn't have to soak it and juice it and hang it somewhere first.

The other thing I really like about the book is that if you use their recipes for salad dressings, for example, you are not just adding flavor, but you are also adding nutritional content. It's all very well thought-out. It's a lovely little book that I recommend to anyone who is interested in making simple, elegant raw food dishes that taste great.

Editorial Review:

Cookbooks need not—indeed, should not—involve cooking, say the authors of this authoritative, beautifully illustrated book. And they should know. Sergei and Vayla Boutenko bring fifteen years’ experience to this collection of scrumptious, sophisticated recipes and comprehensive guide to the raw life.

Fresh covers the whole range of recipes, including savory dishes, desserts, fermented foods, drinks, and wild foods. Techniques common to the recipes are introduced and clearly explained, including an inventory of uncommon fruits and how to handle and prepare them, as well as an immersion into the five basic flavors and the herbs, fruits, vegetables, and grains that help chefs bring out each flavor best. The authors introduce the three stages of adaptation to this lifestyle and provide a concise review of minimal equipment requirements and ideal appliance additions for the well-stocked raw kitchen.

Easy and delicious 5 out of 5 stars.
5 of 6 people found this review helpful.

I bought this book online on a whim. So far, I have made 4 things and they all have been super easy and very tasty. I like these meals because they are very hearty - unlike some vegetarian meals. The author also uses a lot of "one-pot" meals where you just make one dish and it is filling enough to be the whole meal (I prefer this to having to prepare a main dish and a side dish and a salad, etc.) I thought the ingredients were easy to find and the health information seems well-researched. I have found that the preparation times in the book (generally 10-20 minutes) are very accurate. The dishes also seem very kid-friendly both in cooking and taste. I have already thought about sharing this cookbook with my mom!

Editorial Review:

Designed for busy people who have little time to spend in the kitchen, these vegetarian recipes are delicious, versatile, and above all, quick and easy to prepare. This book is Vimala Rodgers' personal invitation to you to produce outstanding meals that will please the palate. She has been relentless in her quest to create healthy and delicious vegetarian meals.

Editorial Review:

Detox diets are making news as the quickest, easiest way to shed pounds, boost your energy, and get yourself on a wellness track. Popular in the 1970s, cleansing fasts are again all the rage among celebrities like Gisele Bundchen, Gwyneth Paltrow, Stella McCartney, and Madonna.

One of the key advocates of the health benefits of cleansing detoxes is Roni DeLuz, ND, a licensed naturopathic and health practitioner at Martha's Vineyard Holistic Retreat, part of the renowned Martha's Vineyard Inn. The idea behind DeLuz's new detox plan is the belief that the foods we eat (along with the coffee, tea, and alcohol we drink and the air we breathe) contain harmful and toxic substances that accumulate in our bodies and need to be removed in some way. In 21 Pounds in 21 Days, DeLuz offers three different detox programs, including the original and most effective 21-day "MasterFast," which promises a 21-pound weight loss in just three weeks and focuses on detoxification through antioxidants, fasting, stress reduction, and lifestyle changes. Also included in the book are:

  • Maintenance plans
  • Dozens of easy, delicious recipes
  • Real-life tips
  • An extensive glossary of terms
  • A guide to supplements

Meals consist of supplement-laden drinks, herbal teas, thick, delicious vegetable purees, and "live" juices, along with nutritional supplements, vitamins, and enzymes designed to keep the body's systems stable and its cells nourished while harmful toxins are flushed out. 21 Pounds in 21 Days isn't just for those looking to lose weight; everyone can benefit from this revolutionary detox diet that results in a clean, refreshed system that functions at its best.

I love Ani's Raw Food Kitchen 5 out of 5 stars.
2 of 4 people found this review helpful.

Of course I love Ani's Raw Food Kitchen, since it is my book. :)
Just wanted to post a note since many of you have been commenting and asking me questions.

Thank you for enjoying my book. It means all the world to me to know you are enjoying it, that it is making a difference in your lives, that it is inspiring new ways of thinking.

Some are critical about the number of photos of me throughout the book. I didn't intend for all these photos of myself to be included, but the publisher thought it looked best this way. Also, I really wanted to show a glimpse into the lifestyle of living and eating green. The raw food diet is so much more than just a diet for me. It's changed my life, how I live, how I relate to other living beings, how I treat our planet.

A decision was made to keep the cost of the book as low as possible. I wanted the recipes to be in the hands of more people, rather than less because the book cost $45. This means black and white printing, rather than color. And, much of the food photos didn't look good black and white. However, the lifestyle photos worked in black and white. I just didn't want a black and white book that was all text. Wanted lots of photos and a nice visual feel throughout.

My next book, Ani's Raw Food Desserts, will be all color with a photo for almost every recipe. It'll be available in early May 09. Please keep a lookout for it. And remember to visit my website for more recipes, tips, organic ingredients, and to watch my free uncooking shows on various online networks:

Editorial Review:

For twenty-five years, Alice Waters and her friends at Chez Panisse in Berkeley, California have dedicated themselves to the ideal of serving the finest, freshest foods with simplicity and style. From tender baby asparagus in early spring, to the colorful spectrum of peppers at the height of summer; crisp, leafy chicories in autumn, to sweet butternut squash in the dark of winter, much of the inspiration about what to put on the menu comes from the high quality produce Waters and her chefs seek out year-round.

Using the treasures from the earth, Chez Panisse Vegetables offers endless possibilities for any occasion. Try Grilled Radicchio Risotto with Balsamic Vinegar at your next dinner party, or Pizza with Red and Yellow Peppers for a summer evening at home. Why not forgo green-leaf lettuce, and opt for Artichoke and Grapefruit Salad drizzled with extra-virgin olive oil? Or serve Corn Cakes with fresh berries for breakfast instead of cereal?

Throughout Vegetables, Waters shares her energy and enthusiasm for what she describes as "living foods." When she first began in the restaurant business, the selection of good-quality vegetables was so limited that she found herself searching out farmers with whom she might do business. Luckily, today's explosion of markets and organic farms across the country ensures that any home cook can find freshly harvested produce to put on the table. And with the increased popularity of home gardening, more and more people are taking their vegetables straight from the earth and into the kitchen.

Cooks, gardeners, vegetarians and everyone who appreciates good food will find Chez Panisse Vegetables to be not only a cookbook, but a valuable resource for selecting and serving fine produce. From popular vegetables like corn, tomatoes and carrots, to more unusual selections like chard, amaranth greens and sorrel, Vegetables offers detailed information about the seasonal availability, proper look, flavor and preparation of each selection. Arranged alphabetically by vegetable, and filled with colorful linocut images, Chez Panisse Vegetables makes it easy for a cook to find a tempting recipe for whatever he or she has brought home from the market.
