Beautiful pictures but beauty here doesn't run deep... 1 out of 5 stars.

I was excited to get this cookbook and it is indeed breathtaking (photograph-wise, that is...). Otherwise, it contains a lot of difficult to create vegan recipes that mostly seem like side dishes. These great chefs grapple with what vegans eat. There are no recipes that include tempeh at all (a staple for me), a couple that use tofu, and none that use seitan or mochi, but about five recipes for gazpacho..
Beans? These chefs have never heard of them (except for fava beans). Lentils are never mentioned or used.

Need a recipe for cauliflour? Well, you will find many creative recipes here, but any vegan cookbook that has more cauliflour recipes than tempeh recipes (which again are non-existant) has some problems. And the problem is this--these chefs are clueless. They really believe that a vegan eats just vegetable dishes. Going through this cookbook feels liek going to a gourmet restaurant that says it will accomodate vegans and then all you get is a plate of vegetables. Granted that if this cookbook were the menu of a gourmet restaurant that you would get some very creatively cooked vegetables, but that is all that you would get....

This cookbook (again, it is beautiful!) is a big disappointment and in many ways an insult to vegans. Yes, cauliflour is a great vegetable, but why so many recipes for it? Why have four (or was it five) recipes for gazpacho???

I really tried to find a recipe to make, but all seemed like vegetable side dishes....I am disappointed that these chefs couldn't create anything better or more hearty...and disappointed that the editor didn't give them more guidance.

I have given this book one star because despite the aesthetic quality of the book, the content is a real zero.

Ok first of all- I am a vegetarian/ aspiring vegan that doesn't have the time to write reviews.
But for anyone who is willing and open minded enough to go vegan- this book is one you will reference for years to come. I am the kind of cook who opens three cookbooks and pick what I like from the recipes and create my own concoctions- and this is the basis of all my thoughts.
I live in Germany- and don't speak german so it's difficult to find weird ingredients- well this cookbook is one you can find many recipes that don't call for nutritional yeast, miso- or seitan. Although I have now claimed seitan as my favorite gyro meat!!!!!
To those of you who are being compassionate mindful eaters- my children thank you :)

I have tried about 10 recipes so far and each one has been fantastic, esp. the black bean & sweet potato enchiladas and the black bean chili with cilantro pesto. Amazing!!! The recipes are a bit time-consuming but worth every minute!! Love it!

This is still a great cookbook with helpful ideas for creating delicious and nutritious meals. I love their blueberry cobbler recipe and still use it at least once a month.

I grew up on the recipes from this book, so I admit that my opinion may be biased by the fact that, to me, many of the recipes in here are comfort foods. Still, this book remains simply one of the best basic vegetarian cookbooks out there. I agree that the preaching at the front gets a little old, and I have honestly never gotten through all of it, but the intention of this book is to teach new and beginning vegetarians how to cook healthy, protein filled vegetarian meals. Yes, the front matter is outdated and yes, she does stand on her soapbox for a long time, but this is easily skipped and reading this part has little to nothing to do with cooking the recipes that come after. And, in that capacity it works well. It provides easy, fully developed recipes that are simple to follow even for the unexperienced cook and have complete protein included. Like any cookbook there are recipes in here that are horrible, and then there are some that are amazing. I have brought the book to the attention of many friends who were new vegetarians over the years, and they have all been increadibly thankful for some guidence on how to cook something other than plain tofu. If you are just starting out, this is a great book to start with.

I found the original version of this book in a used bookstore and bought it for the whimsical title and the illustrations on bread baking. I didn't try it out immediately because several recipes do have ingredients that I don't typically have on-hand (although I haven't had any trouble finding them when I've looked). My boyfriend and I have recently gone through several of the recipes, though, and they've all come out beautifully, with no tinkering necessary :) We're both scientists, so we tend to experiment when we cook, and conclude "this was a good recipe after we substituted this, and reduced that, and added this", but all of the recipes we've tried so far have been delicious as-is. The flavors have been subtle and well-balanced, so you can find something interesting to taste in every bite. That said, tastes vary, and we'd actually thought before that many people might think the flavors in the dishes aren't strong enough (hence "not tasty"). In addition, I agree that "vegetarian" does not necessarily mean "healthy" anymore than "fat-free" means "calorie-free"--there is a lot of cheese, cream, and butter in many of the dishes, so if you want something low-cholesterol, try out your favorite substitutions and see if they'll work. Many of the recipes also do involve a little advance planning and work--making sure you have all of the ingredients, peeling and cutting up vegetables, etc., but if you enjoy cooking, that should be part of the fun :) They also make for good team-cooking--there's usually enough for two people to do so that you can enjoy making something together.

Good old fashioned vegetarian cookbook 5 out of 5 stars.

I own dozens of vegetarian cookbooks, old and new, but I find myself returning to this one again and again. I consider it my "vegetarian comfort food cookbook". Published long before we all developed fat phobia, this book contains rich, flavorful foods. Lots of dairy, so not the best for vegans, but meat lovers won't miss the meat.

The New Laurel's Kitchen includes plenty of simple, beat-the-clock recipes - who doesn't need them? But it refuses to blur the distinction between natural foods and fast foods. If you need forty-five minutes to bake a potato or cook brown rice, fine. That's good, solid wind-down time, precious in today's hurried world: time to cut up green beans, or prepare a cauliflower curry; time for the children to dry the lettuce and help make an Appley Bread Pudding. Laurel's kitchen has its own pace - a human pace, that lets other things happen besides just dinner. Good health is the first concern here, and foods that support it are rendered irresistible: dishes like Mushrooms Petaluma, Poppyseed Noodles, Lazy Pirogi, and Sebastapol Pizza. These are well-tested and innately manageable recipes, homespun, but with a generous splash of the sophistication that has swept the food world in recent years.

I love this book. Not just for the recipes but for the clean design and beautiful photographs. Everything about this book makes you want to use it over and over.

I do have one word of caution. Her miso soup recipe calls for you to boil the miso. She makes an effort to explain how beneficial miso is for your health but unfortunately, boiling miso destroys all of the good enzymes.

Add it at the end by turning off the heat, mix in your miso, and wait a few minutes before serving. Heat activates the enzymes but, again, boiling will destroy them.

Aside from this small detail, it is one of my favorites amoung my vast collection of cookbooks.
