I'm glad I found this book. While there are many wonderful recipes, I especially like the color photography of the dish and the listing of calories, protein, carbs, fat content (by type), cholesterol, sodium, etc for each and every dish. That fact alone is worth so much to me. It is an all around well done publication. I wish all my recipe books were this thorough.

Having recently been diagnosed with extremely high cholesterol, it was necessary to make some lifestyle changes. Diet was one of them. The mediterranean diet was reccommended. This book made the changes in cooking easy and fun. The recipes are easy to prepare and colorfully and attractively presented. Menus are also suggested. Several recipes have become my new favorites. This book is the cornerstone of my switch becasue it was necessary to also reduce fat in my diet and some of the recipes in the Mediterranean diet, while delicious, are also high in fat calories. Not in my book!

I was delighted to read about this cookbook in my local newspaper and ran out to buy a copy right away. My eleven year old daughter was recently diagnosed with diabetes, so this book about nutrition/healthy cooking is an answer to my prayers. In addition to the fun and great-tasting recipes with complete nutrition information, there are clear explanations about the type 1 and type 2 diabetes conditions and even some fun "non-food" projects. My daughter and I spent a weekend afternoon in the kitchen making Fruit Filled Quesadillas- messy, but fun!

This book gives you clear and concise instructions on what foods to buy, what combinations to buy, and what foods to avoid. While some of the foods may be a tad difficult to acquire, most stores have the majority of foods she recommends. This is not a diet book. This is a book that makes you look at food as fuel rather than comfort or rewards.

I am new to vegetarian eating. I have been looking for ways to make some of the foundation items in a veggie lifestyle. this book tells you how to make tofu, soymilk, seitan (or gluten), etc. I was grateful to read how to make them. I know many people would just prefer to buy the ingredients at the store, but there are some of us out there that want to learn how to make the items. It will involve more of my time to make the food, but it will cost much less than to buy it from the store.

I just wanted some good vegetarian dish ideas. This book impressed the heck out of me when it showed you how to make your own tofu, soy milk and other vegetarian stuff. Though I am not a vegetarian, I am amazed with the details on how to make some of the stuff. Oh yeah, and the recipes seem to be easy enough to follow! :)
