The recipes are good besides being healthy for a CKD patient. They are used by the whole famiy without complaint,eliminating preparing two separate meals. After being raised on meat and potatoes and having to change eating habits, this cookbook comes as close to "normal food" as I have found.

Special diets are often difficult to follow because they soon become boring and monotonous. This cookbook was written to add variety and imagination to readers' diets. Favorite everyday and special occasion recipes are given to make meals more pleasurable and the diets easier to follow. This cookbook has been compiled through the efforts of many individuals at the Cleveland Clinic Foundation. Renal patients submitted many recipes, and all recipes have been tested in the Cleveland Clinic Foundation Department of Nutrition Therapy test kitchen. Dialysis and pre-dialysis patients use this book. It contains 288 recipes for holidays and entertaining as well as for everyday use. Directions are easy to follow and printed in extra-large type. Recipes are modified for sodium, potassium, protein and fluid control. Most recipes use ingredients already at hand; only a few dietetic foods are required. Index and nutrient analyses are included for individual servings and total recipes.

This is my favorite new cookbook in 20 years. Now, to be totally fair, I'm not much of a cookbook kind of gal. I have a handful of family recipes I usually rotate through without having them written down, and I never cared much for cooking or eating in the first place. I have spent the last two months, though, trying out a large sampling of the recipes in this book, and the whole family loves them. I really like one-pot-meals because I get flustered trying to time too many different pots and pans at once, with a pesky toddler getting into the clean dishes, and older kids asking for help with homework. These recipes are clear and easy and extremely delicious. I can get them done in a very reasonable amount of time. The flavors, variety, and ease of preparation can't be beat. And I love the nutritional breakdown; easy to use, even for those of us new to the nutritional needs of a type I diabetic.

OK, I will be straight with you: it is hard to really give much credit to any of these books peddling a free, natural, and healthy cure since the cause of MS is not really known, no one is really sure how it works, and there are no rules about how exactly the effects will manifest in someone since it is unique to everyone depending on where in your brain the lesions show up.

Whew, now I have the hard rules out of the way. These ideas may be hard to hear, but that is the way it is, so take all these miracle cures with a grain of salt.

Now for the good news. I was diagnosed almost 6 years ago. I read this book shortly after. I decided to try it just to see. It does help with the symptoms, there is no doubt about it. I could feel it pretty quickly after starting the diet and I still stay with it years later because I can still tell the difference if I get off the diet.

Has it changed the course of the disease progression? Who knows...maybe it has. I can tell you that I read a couple of years ago that the amount of fat in your blood affects how quickly things (nutrients, oxygen, etc) are absorbed into your brain. So it turns out that there is probably a reasonable, scientific explanation why this diet works.

My advice: this diet DOES at least help the symptoms and therefore may be helping the diease progression. Just read as much as you can. No one can be as dedicated of an advocate for you as you can for yourself.

Do you overeat because you don't feel satisfied or full? Volumetrics is based on "the science of satiety"--what researchers have learned about the food choices that make people feel full. The authors teach you how to eat low-calorie-dense, high-volume foods so that you feel like you've eaten plenty, even though you've eaten fewer calories. You'll lose weight without feeling hungry or deprived.

Here's an example of how volume affects eating. Raisins are dried grapes. But 100 calories of raisins fill only one-quarter cup, while 100 calories of fresh, whole grapes fill one and two-thirds cups. You'll feel satisfied after one and two-thirds cups of grapes, but if you're eating raisins, you're likely to keep filling your mouth. The point is not to stop eating raisins (or chocolate, cheese, or other high-calorie, low-volume foods), but to realize that you're likely to take in many more calories before your body tells you you're full. If you're trying to manage your weight, eating more low-density foods (lower-calorie foods that have a lot of volume) will make you feel full while you drop pounds.

Hugh manages to capture the natural enthusiasm he exudes for the subjects of food and self sustained living in his television show, in this book.

Nice pictures, a must have in any cookery book these days, are in abundance.

The book gives a good introduction to the worlds of animal husbandry and horticulture, which is exactly what he sets out to do, he doesn't get bogged down with detail and yet doesn't skip over things either.

The writing style is easy and informal, much like the tv show itself.

A must have for anyone who liked the show.
