This cookbook - like all of Marilyn Moore's cookbooks - provides clear, straightforward recipies that can be mastered by cooks of all levels. From fancy fowl recipies suitable for holidays (and presented as such) to daily recipies, such as roasted chicken and vegetables - it doesn't disappoint. A nice array of side dishes - plain to fancy - are also presented.

Not a big cookbook, but a quality book

Editorial Review:

First published in 1949, this remarkable book is the culmination of a life-long study of every aspect of the potato. Dr Salaman is concerned first with the history of the potato as a member of the botanical genus Solanum, its adaptation by man as a cultivated plant, and the record of its spread throughout the world; secondly he considers the influence the potato has exerted upon the social structure and economy of different peoples at different times. The archaeological and anthropological evidence for the early significance of the potato among the peoples of Latin America is discussed in detail with numerous illustrations, but the central portion of the book is concerned with the European, and particularly the Irish evidence. Naturally the Great Hunger is the most dramatic single episode in the entire work, and Dr Salaman does full justice to his tragic theme, concluding with the observation that in Ireland 'the potato ended in wrecking both exploited and exploiter'. Elegantly written, with numerous vivid anecdotes, Salaman's History has long enjoyed the status of a classic. This revised impression, with a new introduction and emendations by Professor J. G. Hawkes, enables another generation of readers to sample what Eric Hobsbawm has referred to as 'that magnificent monument of scholarship and humanity'.

Entertaining read 4 out of 5 stars.

Loosely based on the "true" story of the invention of the potato chip, THE GREATEST POTATOES is a fun and entertaining read. When a picky millionaire comes to a restaurant on a mission to find the world's greatest potato dish, all the chefs tremble...all but George Crum, an African-American fry cook. He's convinced that his French fries are the best, but time and time again the picky millionaire Commodore Cornelius Vanderbilt sends them back to the kitchen. Fed up with his customer's temperament, Crum determines to make him the WORST batch of fried potatoes ever. Since he complained that they were too thick-he slices them paper thin. Because he claimed they have no flavor...he salts them til they glisten. Etc. He serves a plate of fried, crispy, thin, salty potatoes-first called flaky fried potatoes-and history is made. Not only is Cornelius satisfied-soon Crum's potato chips are in high demand!

The author's note explains the legend of the invention of the potato chip. A brief selected bibliography follows. The book even includes the "Great Potato Chip Recipe" broken down into parts for children and adults!

Nice book.

Editorial Review:

Feast your eyes on the world's most delectable disaster! George Crum is the very best fry cook at Cary Moon's Lake Lodge Restaurant. When Cornelius Vanderbilt, the richest and most rancorous man in America, returns from France, everyone panics. Vanderbilt has been known to shut down restaurants that aren't up to his culinary standards. But George Crum isn't moved, until . . . Vanderbilt repeatedly sends his potatoes back to the kitchen. And George decides that if Vanderbilt wants a bad potato, well, that's exactly what he's going to get! The result is the tastiest, most scrumptious, potato haute cuisine ever invented and an especially riotous picture book for tout le monde.

For those who love a well-cooked potato 4 out of 5 stars.
5 of 5 people found this review helpful.

Over the years I've bought loads of cookbooks featuring cuisines from all over the world. I love using new ingredients, but at the end of the day the potato remains at the heart of many meals. I was delighted to be given this cookbook. I never knew there were so many ways to cook a potato, and so far all the recipes I've tried have turned out very well. I like the nuanced info on how to get the best out of your potato variety. It's not a big cookbook, but I like that too. It's a great gift for potato loving friends, and even hough some recipes include meat, in general it's an excellent choice for vegetarians.

This Just In: Beans No Longer the Magical Fruit 5 out of 5 stars.
2 of 3 people found this review helpful.

Finally, the book for my own unique fettish with the wonderful world of potatoes. This is a whole book, with pictures and everything, devoted to man's single greatest invention, the potato. Does life get any better than this? I guess potatoes aren't really inventions but I still loved this book. It taught me things to do with potatoes that I had thought were illegal in most states. We're talking everything from potato a la mode (that's right, potatoes and ice cream!)to potato popsicles (delicious with just a hint of paprika by the way). Put simply, this instructional book teaches not only the cook, but the lover, the intellect, and the soul all at the same time. The heavens were smiling upon us when they dropped "Cooking with Poatatoes" from above. Its emotions, its metaphors for the human condition, and its inate understanding of the human heart transcend our modern incredulities and cynicism to lead us by the hand into the garden of vegetable roots. Yes my friends, heaven is a place on Earth. I have seen it. Heaven, thy name is "Cooking with Potatoes."

P.S. I really liked this book.
